A Feast for the Seven Kingdoms

Friday, October 16, 2026 | 6:00PM - 8:30PM

$189.00Per Station (Suitable for Dynamic Duos, please see below for details)

Winter is coming... and so is dinner.

Step through the gates of King's Landing and into the bustling kitchens of the Red Keep for an unforgettable evening inspired by the legendary feasts of Game of Thrones. Whether your loyalty lies with the honorable Starks of Winterfell, the powerful Lannisters of Casterly Rock, or another of the great houses of Westeros, this immersive hands-on cooking class will transport you to a world of castles, banquets, and hearty medieval fare.

Working alongside fellow cooks, you'll prepare two iconic dishes inspired by the series, learning traditional techniques and creating a feast worthy of the Iron Throne.

Your journey begins in the winding streets of Flea Bottom, where you'll recreate the infamous "Bowl of Brown." While the original may have been a mystery, our version is anything but. You'll prepare a rich and satisfying bacon and lentil soup featuring thick-cut slab bacon, earthy lentils, sweet root vegetables, and a deeply flavorful bone broth slowly infused with fresh winter herbs. It's rustic comfort food elevated into a dish fit for the halls of Winterfell.

Next, you'll travel to the royal kitchens of the Red Keep to prepare The Royal "Pigeon Pie," inspired by the lavish wedding feast of King Joffrey—fortunately, without the live birds. You'll learn how to create a buttery, flaky puff pastry crust that bakes to a beautiful golden brown before filling your pie with tender roasted chicken, mushrooms, sweet peas, and a luxurious herb-infused cream gravy. To make your pie uniquely your own sigil of your favorite house into the pastry before it heads into the oven.

Throughout the evening, you'll discover techniques for making rich stocks, building layers of flavor, preparing hearty medieval-inspired dishes, and working with puff pastry to create an impressive showpiece worthy of any royal banquet.

Whether you're gathering with fellow fans, celebrating a special occasion, or simply looking for a unique culinary adventure, this class promises an evening filled with incredible food, laughter, and a little Westerosi magic.

The Iron Throne may be difficult to claim—but a seat at this feast is yours for the taking. Dress in your favorite house colors if you dare, and prepare for a night where the only battle is deciding who gets the last slice of pie.

BYOB is welcome – bring your favorite beverage to enjoy while you cook, eat, and have a great time!

Come and enjoy the fascinating process of using 100% freshly-milled grains in two separate recipes!

For this class, you’ll embark on a journey of learning about: different types of home-mills, how various grains react in recipes (flavor/texture), the difference between ancient grains versus modern grains, and the nutritional benefits of incorporating freshly-milled whole-grains into your regular diet. You’ll even get the chance to mill some of your own flour before using it for one of the classes’ bakes!

The grains for the Banana Bread will be pre-milled, but you’ll have the opportunity to learn about the combination of grains used in this recipe. Each table will be able to customize their personal loaf with nuts, chocolate chips, or a combination of both! Get ready to indulge yourself with the most savory banana bread you’ll have had to date!

For the second segment of the class, you’ll have the opportunity to select your own combination of Soft-White Wheat & Spelt to create a custom Blueberry Muffin batter. Upon weighing-out your grains, each table will have the chance to mill their own flour. You’ll be in awe while watching your wheat berries & spelt transform into a warm, fine, beautiful whole-grain flour. We’ll use our fresh flour to create the tastiest blueberry muffins - which we can guarantee will not last on your counter more than a day!

Caroline is excited to share her passion of fresh-milled grains. The information you’ll glean and the loaves/muffins you’ll make will not disappoint!

Dim Sum Sunday

Dim Sum Sunday

Sunday, November 1, 2026 | 10:00AM - 12:30PM

$189.00 Per Station (Suitable for Dynamic Duos- see below for more details)

In this hands-on dim sum class, you'll learn how to make two beloved Chinese classics from scratch: fluffy baked BBQ pork buns and fresh shrimp rice rolls, dishes that look like they came straight off a dim sum cart and taste even better than the restaurant version.

We'll start with the baked char siu bao. You'll make the yeasted dough from scratch, learning how to develop the right texture for that pillowy, slightly sweet bun that bakes up golden and glossy. While the dough proofs, we'll build the char siu filling together on the stove, combining pre-cooked BBQ pork with a rich, savory-sweet sauce of oyster sauce, hoisin, soy, and sesame that gets thick, sticky, and deeply fragrant. You'll learn how to portion and fill the buns, how to seal them cleanly, and how to get that signature shine on top before they go into the oven.

While the buns bake, we'll move on to shrimp rice rolls using Vietnamese rice paper, a technique-forward dish where the wrapper itself is the skill. You'll learn how to hydrate and handle rice paper without tearing, how to lay and roll the shrimp for that clean, professional look where every piece is visible through the wrapper, and how to build a dipping sauce from scratch that balances sweet, salty, sour, and just enough heat to keep you coming back for another bite.

You'll leave with a box of warm baked buns, a plate of fresh rice rolls, a complete dipping sauce recipe, and the confidence to make both at home any time the dim sum craving hits.

This a perfect Dynamic Duo class to take with your friends, family members or a sweet Date Night and you can BYOB! (Please drink responsibly.)

This class is suitable for the following Dynamic Duo* types:

Two Topping Mochi Waffles

Two Topping Mochi Waffles

Two Topping Mochi Waffles

Sunday, November 8, 2026 | 10:00AM - 12:30PM

$189.00 Per Station (Suitable for Dynamic Duos- see below for more details)

In this hands-on class, you'll learn how to make mochi waffles from scratch, and once you taste that signature crispy exterior and impossibly chewy interior, you'll never go back to regular waffles again.

We'll start with the mochi waffle batter, learning what makes it so different from a standard waffle batter and how to get that perfect texture every time: golden and crisp on the outside, stretchy and chewy on the inside, with those deep pockets just begging to be filled. You'll learn how to work with mochiko (sweet glutious rice flour), how hydration affects chew, and the small adjustments that make the difference between a good mochi waffle and a great one.

Then we'll make two completely different toppings that turn a simple waffle into something genuinely special.

First, brown butter miso sauce: butter cooked low and slow until it turns golden, nutty, and deeply fragrant, then combined with white miso, honey, and a touch of cream into a warm, pourable sauce that's savory, sweet, and caramel-like all at once. You'll learn the brown butter technique (including exactly when to pull it before it burns), and how miso transforms butter into something far more complex than the sum of its parts.

Second, black sesame compound butter: softened butter blended with black sesame paste, a pinch of sugar, and flaky salt, rolled into a log and sliced into dramatic dark coins that melt slowly over your hot waffle. You'll learn how to build and balance a compound butter, and why the melting-on-contact moment makes this one of the most satisfying things you'll ever put on a waffle.

Along the way we'll cover mochiko and how it behaves differently from all-purpose flour, fat as a flavor carrier, and how two butter-based toppings can taste completely different depending on technique. You'll leave with a full waffle spread, both topping recipes, and a new favorite weekend breakfast.

This a perfect Dynamic Duo class to take with your friends, family members or a sweet Date Night and you can BYOB! (Please drink responsibly.)

Gorgeous Fall Royal Icing Cookie

Saturday, November 14, 2026 | 10:00AM - 4:00PM (Includes Lunch)

$249.00 Per Station (Suitable for Dynamic Duos- see below for more details)

In this hands-on intermediate class, you'll make, bake, and decorate a gorgeous fall floral cookie set — pumpkins, acorns, autumn leaves, and statement floral cookies that together look like they came straight out of a professional bakery window.

We'll start by mixing and baking your cookie dough from scratch, then set up your royal icing station while the cookies cool. From there, the entire afternoon is dedicated to fall color palettes, florals, and the detail work that makes this set so stunning.

The star of this class is the royal icing floral technique. You'll learn how to use piping tips to build dimensional flowers directly on the cookie — ruffled petals, layered blooms, and the finishing details that give each flower its personality. We'll cover tip selection, how to hold and control your bag for petal work, how to layer wet icing for dimension, and how to use black sesame seeds and accent colors to add that final touch of realism.

Beyond the florals, you'll also learn the piping techniques behind the hand-drawn leaf veining, two-toned pumpkins, and the stunning white pumpkin with gold leaf detail work. We'll cover how to achieve clean sections with a wet flood, how to add texture without losing crispness, and how to finish cookies with edible gold for an elevated, editorial look.

By the end of class you'll have a full set of fall cookies and — more importantly — a floral piping skill set you can apply to any season, any design, all year long.

Harvest Apple and Caramel Layer Cake

Saturday, November 21, 2026 | 10:00AM - 4:00PM

$299.00Per Station (Suitable for Dynamic Duos- see below for more details)

Fall is officially here, and what better way to celebrate than with a showstopping Harvest Caramel Apple Crunch Layer Cake?

This spectacular cake features layers of super-moist, perfectly spiced apple cake made with freshly grated apples for natural sweetness and an irresistibly tender crumb. Warm cinnamon and allspice add just the right touch of autumn spice.

In this class, we’ll make an easy homemade salted caramel that does double duty—flavoring the vanilla buttercream filling and creating luscious caramel drizzles between the layers.

The vanilla buttercream will be divided into two delicious flavors: one blended with salted caramel for the filling, and another infused with cinnamon to frost the outside of the cake.

And then comes the crunch! Inspired by the irresistible topping on a Dutch apple pie, our buttery crumble combines flour, granulated and brown sugars, butter, and cinnamon. Scattered between the layers, it adds the perfect sweet, buttery crunch to every bite.

This beautiful autumn cake is as fun to assemble as it is impressive to serve. If you love the combination of apples, warm spices, buttery crumble, and the sweet-and-salty magic of caramel, this cake is definitely for you.

Pour yourself a glass of apple cider, embrace the flavors of fall, and let’s bake something delicious!

Flavors From Afar

Friday, September 11, 2026 | 6:00PM - 8:30PM

$189.00 (Suitable for Dynamic Duos- see below for more details)

Pack your appetite and get ready to cook your way around the world! In Flavors From Afar, we’ll travel from the bright, fresh flavors of Thailand to the sunny Mediterranean, on to the French countryside, and finish our journey in New Orleans with a classic dessert.

We’ll start in Thailand by preparing a vibrant Thai Mango Salad, where you’ll julienne crisp vegetables and ripe mango before tossing everything together with a savory, slightly spicy peanut-sesame dressing. You’ll build layers of texture and flavor while learning how sweet, salty, sour, and spicy elements come together to create a perfectly balanced dish.

Next, we’ll head to Greece for our main course: Greek Poached Chicken with Lemon and Orzo. You’ll begin by searing the chicken until beautifully golden, then build a flavorful base of leeks, carrots, and lemon. The chicken will gently poach in the oven while the orzo cooks alongside it, soaking up the fragrant broth and all those delicious Mediterranean flavors.

From Greece, we’ll make our way to France and put your knife skills to work with French Vichy Carrots. You’ll learn how to make the traditional oblique cut before cooking the carrots in a classic French-style glaze until they’re tender, glossy, and beautifully caramelized. It’s a great example of how a simple vegetable can become something truly special with the right technique.

Finally, we’ll head to New Orleans for dessert and make Bananas Foster. You’ll sauté bananas in a warm sauce of brown sugar, butter, cinnamon, and dark rum, then spoon them over cool vanilla ice cream for the perfect combination of warm, buttery richness and creamy sweetness.

Come hungry, have fun, and let’s take your kitchen on a journey Flavors From Afar!

First up: French macarons! You’ll learn how to whip, fold, pipe, and bake these colorful little beauties without losing your mind in the process. We’ll demystify the famous macaronage technique, talk about those elusive ruffled “feet,” and share plenty of tips for getting smooth, picture-perfect shells.

And yes, you’ll actually do the baking! This is a hands-on class, so expect to get involved from start to finish. We’ll mix, pipe, scoop, bake, and taste, together. Along the way, you’ll pick up  tricks for knowing when your batter is just right and how to avoid the most common macaron mishaps.

  • Master the art of macaron ageing and proper piping

  • Make perfectly chewy coconut macaroons

  • Get the right texture and golden finish every time

  • Troubleshoot the most common macaron mistakes

Whether you're a passionate home baker or a cottage food business owner looking to level up, this immersive three-day retreat with Lisa He of Borderlands Bakery is designed to take your decorated cookie game from scratch — literally — to a fully realized, professional-quality skill set you can build a business or a beautiful hobby around.

Over three intensive, hands-on days, you'll master four distinct cookie bases, learn to work with royal icing from flood to florals, explore rolled and piped buttercream techniques, and walk away with a toolkit of recipes, skills, and confidence that will transform the way you approach decorated cookies forever. Take advantage of Lisa's 15 years of cookie decorating experience and pick her brain on all things cookies and cookie business while in class!

This retreat is limited to 11 stations and is fully immersive — everything the instructor makes, you make. No watching from the sidelines here.

What You'll Learn

Day 1 — The Foundation: Doughs, Flavors & Prep

Morning through afternoon — all cookies baked and ready for Day 2

The best decorated cookie starts with the best base. On Day 1 we slow down and do it right — mixing, flavoring, chilling, rolling, cutting, and baking four distinct cookie doughs so every cookie is perfectly prepped and ready for decorating.

You'll cover:

  • Classic vanilla-almond cut-out sugar cookie: the workhorse base that I'll teach you to customize into 3 additional flavors of your choice

  • Flavor extracts, emulsions, and how to build your own flavor profiles

  • Mix-ins and inclusions: cocoa powder, citrus zest, espresso, spices, and more

  • Proper dough hydration, chill times, and how both affect your cut

  • Rolling for consistent thickness, cutter technique, and clean release

  • Baking for flat, even cookies — oven tips, pan rotation, and cooling

By end of Day 1, you'll have 4 full sets of baked, cooled cookies ready to decorate.

Day 2 — Royal Icing: From Flood to Fine Detail

Full day — all things royal icing

Royal icing day is where decorated cookies become art. We'll spend the full day working through every consistency, every technique, and every tool — from your first flood fill to hand-painted florals.

Morning: Foundations

  • Royal icing from scratch — meringue powder vs. egg white, ratios, and troubleshooting

  • Understanding consistency: flood, stiff, floral and when to use each

  • Color theory for cookie decorating: mixing, marbling, achieving true blacks and whites, a little discussion about non-artificial dyes & impacts

  • Flooding technique: how to outline, fill, and get a perfectly smooth surface every time

  • Wet-on-wet designs: simple patterns, color blocking, and blending

Afternoon: Advanced Techniques

  • Fine line piping and detail work

  • Brush embroidery and hand-painted details

  • Royal icing florals: roses, wildflowers, and leaves

  • Lettering: block, script, and bounce lettering on cookies

  • Stenciling with royal icing

  • Airbrushing: base colors, gradients, shading, and using stencils with an airbrush

You'll leave Day 2 with 2 dozen decorated royal icing cookies plus the confidence to do it again at home.

Day 3 — Buttercream: Rolled, Piped & Molded

Full day — buttercream techniques

Day 3 brings a completely different feel: softer, more tactile, and incredibly versatile. We'll work with both rolled buttercream (think fondant, but better) and classic piped buttercream to create a third and fourth set of decorated cookies with an entirely different aesthetic.

Morning: Rolled Buttercream

  • Rolled buttercream from scratch — recipe, ratios, and texture troubleshooting

  • Coloring and tinting for even, streak-free coverage

  • Rolling, cutting, and applying to cookies for a clean, smooth finish

  • Embossing, texturing, and using molds with rolled buttercream

  • Layering and dimension: combining rolled buttercream with other media

Afternoon: Piped Buttercream

  • Make American buttercream

  • Piping bag setup, tip selection, and pressure control

  • Rosettes, ruffles, shells, stars, and rope borders

  • Piped florals on cookies: peonies, daisies, and succulents

  • Color loading and multi-tone piping for dimension

  • Finishing touches: edible gold, luster dust, and sprinkle work

Day 3 wraps with 2 full sets of buttercream decorated cookies and a complete recipe portfolio to take home.

What You Take Home

  • 1 cookie base recipe — fully annotated with flavor variation ideas & direction

  • Complete royal icing recipe with consistency guide and color mixing reference

  • Rolled buttercream recipe with troubleshooting notes

  • American buttercream recipe

  • 4 full sets of decorated cookies from all three days — beautifully packaged to travel

  • A curated Swag Bag stocked with tools, ingredients, and treats selected for this retreat

  • All class notes, technique guides, and reference sheets

  • The skills, confidence, and inspiration to keep going at home

Sea, Salt & Sourdough Baking Retreat

Sea, Salt & Sourdough Baking Retreat

Class Dates/Times: Tuesday, January 26 to Thursday, January 28, 2026 | 9:00AM - 4:00PM (Lunch included each day)

$1200.00 (includes all classes/lunches/swag bag) Single Baker**

**Bring a friend to share your station for $200.00 extra (they’ll get a swag bag too!)

Escape the cold and spend three delicious days immersed in the world of sourdough at the Florida Academy of Baking’s state-of-the-art kitchen in sunny Satellite Beach, Florida. Planned for early 2027, this hands-on retreat is the perfect opportunity to trade winter weather for sunshine while learning the skills and science behind great sourdough baking.

This retreat is designed for bakers who want to go beyond simply following a sourdough recipe. Over three days, you’ll learn how sourdough works, how to care for and maintain your starter, how to read your dough, and how to turn one starter into a wide variety of delicious baked goods.

We’ll combine hands-on baking, demonstrations, baking science, and plenty of time in the kitchen. You’ll bake throughout the retreat and learn techniques you can continue using at home long after you leave Florida.

Day 1 – Understanding Your Sourdough

We’ll begin by taking the mystery out of sourdough and exploring the science behind fermentation. You’ll learn how to feed and maintain your starter and understand the difference between an active starter, fed starter, and discard.

You’ll make your first Everyday Sourdough Loaf, learning about dough development, fermentation, shaping, and baking. We’ll explore open baking, Dutch ovens, and steam, as well as the art of scoring—from simple expansion cuts to decorative designs.

You’ll also bake a pre-made loaf, prepare sourdough waffle batter for the following day, and create a levaing that will be ready for Day 2.

Day 2 – Building Skills & Adding Flavor

Day two takes your sourdough skills further as you bake your Everyday Loaf and begin working with inclusion breads. You’ll learn how to incorporate additional ingredients into dough while maintaining its structure and fermentation.

We’ll prepare a Sourdough Inclusion Loaf, make dough for focaccia pizza, and prepare sourdough pretzel dough. You’ll also bake a pre-made fougasse, create delicious sourdough cookies, and learn how baker’s percentages and ratios give you the freedom to scale and adapt recipes rather than simply following them.

We’ll finish the day by preparing another levain for Day 3.

Day 3 – Bake, Create & Take Sourdough Home

On the final day, you'll put your new skills to work as we bake the Sourdough Inclusion Loaf, pretzels, and focaccia pizza.

You’ll learn how to dehydrate your starter so you can preserve it for future use and explore how to revive it when needed. We’ll also make Sourdough Discard Cheese-Its, proving that your discard can be transformed into something delicious rather than going to waste.

Finally, we’ll explore one of the most useful skills for a sourdough baker: understanding sourdough starter versus commercial yeast and how to substitute starter or discard into recipes.

By the End of the Retreat

You’ll leave with a deeper understanding of sourdough, practical skills you can use at home, and the confidence to experiment rather than simply follow a recipe. You’ll understand how to maintain your starter, develop and shape dough, control fermentation, calculate baker’s percentages, adapt recipes, use discard, and bake using different methods.

Most importantly, you'll have spent three days baking, learning, sharing great food, and enjoying the sunshine of Florida's Space Coast.

Come for the sourdough. Stay for the sunshine. Leave with the skills to bake better bread at home.

Fall Flavor Scones: Sweet & Savory Baking with Rory

Cozy up this season with one of Rory’s all-time favorite treats — his beloved grandmother’s scones — in a hands-on baking class that’s as heartwarming as it is delicious.

In this intimate, seasonal workshop, you’ll bake two full batches of feather-light scones: one sweet, one savory. Rory will guide you through his tried-and-true base recipe, passed down from his Irish granny, and share dozens of tested variations to suit every craving and occasion.

For your sweet batch, think mix-ins like fresh or dried fruit, crunchy nuts, rich chocolate chips, or indulgent twists like Strawberry Baileys & White Chocolate. Prefer something classic? Go traditional with Raisin or Sultana scones — just like Rory grew up with.

Then, get savory. Rory’s go-to combo? Sharp cheddar, fresh chives, and sun-dried tomatoes. But you’ll have the freedom to mix, match, and create your own flavor adventure.

At the end of class, we’ll gather to enjoy your freshly baked scones alongside a hot cup of traditional Irish tea — the perfect finishing touch. And the best part? You’ll take home everything you bake to share (or not — we won’t tell).

This class is perfect for:

  • Home bakers of all skill levels

  • Fans of fall flavors and cozy traditions

Handmade Chinese Noodles with Two Sauces

Handmade Chinese Noodles with Two Sauces

Handmade Chinese Noodles

Friday, September 25, 2026 | 6:00PM - 8:30PM

$189.00 Per Station (Suitable for Dynamic Duos- see below for more details)

In this hands-on class, you'll learn how to make Chinese hand-ripped noodles (biang biang style) completely from scratch — wide, chewy, satisfyingly irregular noodles that you tear and stretch by hand straight into boiling water. No pasta machine, no fancy equipment. Just flour, water, and technique.

We'll start by making the dough, learning how to hydrate and knead it to the perfect elasticity, and then letting it rest so it becomes pliable enough to pull into those signature thick, ribbon-like noodles. The ripping process is hands-on and genuinely fun — and once you get the hang of it, you'll wonder why you ever bought noodles from a box.

While the noodles cook, we'll build two completely different sauces so you can experience how the same bowl transforms with a different flavor base. The first is a rich, nutty peanut sauce — savory, slightly sweet, and deeply satisfying. The second is a punchy spicy chili crisp sauce — bold, aromatic, and just the right amount of heat. We'll also prepare a simple seasoned ground beef topping and blanched bok choy to round out the bowl.

You'll leave knowing how to make noodles from scratch, build a sauce from pantry staples, and put together a complete, restaurant-quality noodle bowl at home — any night of the week.

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

Give your teenager a skill they'll use for the rest of their life. Teen Kitchen Confidence is a six-week, hands-on cooking program designed to teach young cooks how to become confident, capable, and independent in the kitchen. Instead of simply following recipes, students will learn how to think like a cook—opening the refrigerator or pantry, recognizing the ingredients they have on hand, and creating delicious, nutritious meals for themselves and their families.

Each week builds on the skills learned in the previous class, beginning with the fundamentals and progressing to planning, preparing, and cooking complete meals. Along the way, students will gain confidence with knife skills, kitchen safety, organization, seasoning, meal planning, budgeting, and cooking techniques that can be applied to hundreds of different recipes.

Week 1 - Monday, September 14 – Breakfast Basics

Every great cook starts with the basics. Students will master one of the most versatile ingredients in the kitchen—the egg. They'll learn how to fry, scramble, poach, and prepare a fluffy omelet, while discovering how a few pantry staples like eggs, milk, and flour can become a variety of delicious breakfasts and brunches. By the end of class, they'll understand that a well-stocked pantry can provide countless meal possibilities.

Week 2 - Monday, September 21 – Building the Perfect Lunch

Students will learn how to prepare satisfying lunches from scratch by making hearty soups, signature sandwiches, and fresh salads. They'll discover how to select ingredients for homemade soups, build flavorful sandwiches, and prepare salads that can be stored and enjoyed throughout the week. This class also introduces meal prep and proper food storage to reduce waste and save time.

Week 3 - Monday, September 28 – Cooking for One

Whether they're home alone after school or looking for a late-night snack, students will learn how to prepare quick, satisfying meals without relying on processed foods. They'll make dishes such as stovetop macaroni and cheese, upgraded ramen noodles, fried rice, and creative meals using leftovers. This class teaches resourcefulness, showing students how to transform simple ingredients into comforting meals.

Week 4 - Monday, October 5 – 20-Minute Family Meals

Busy schedules don't have to mean takeout. Students will learn how to prepare quick, healthy dinners using ingredients commonly found in the pantry and refrigerator. Recipes may include Spaghetti Bolognese, Chicken and Dumplings, Carbonara, Tacos, and easy air fryer meals. The focus is on organization, timing, and getting a delicious meal on the table with confidence.

Week 5 - Monday, October 12 – Planning a Family Meal

Cooking for a family requires planning as much as cooking. Students will learn how to organize and prepare complete meals while managing their time efficiently. They'll explore one-pot meals like chili, slow cooker favorites, oven-baked casseroles, and traditional roast dinners, gaining an understanding of how different cooking methods work together to create a successful family meal.

Week 6 - Monday, October 19 – My Signature Family Dinner

For the final class, students become the chef. Using everything they've learned over the previous five weeks, they'll plan, budget, and prepare a complete family meal to take home and share. They'll research recipes, choose ingredients, make substitutions when needed, and manage their grocery budget. This capstone class celebrates their new independence and demonstrates that they can confidently cook for themselves and the people they love.

Throughout the series, students will be encouraged to use their smartphones as a tool to research recipes, compare techniques, and make informed decisions about ingredients and substitutions. Some recipes will be partially prepared during class so students can finish cooking them at home, reinforcing the skills they've learned while involving the whole family.

By the end of the six weeks, students won't just know how to follow a recipe—they'll understand how to plan meals, stock a pantry, shop wisely, use leftovers creatively, and prepare nutritious breakfasts, lunches, and dinners with confidence. They'll leave with practical life skills that will serve them for years to come, along with the independence to step into any kitchen and know exactly where to begin.

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.

Sunday, September 6, 2026 | 3:00PM - 6:00PM

$189.00 per station - Suitable for Dynamic Duos (Please see below for more details.)

Step into September baking with a table full of flaky crusts, bubbling fillings, and the kind of pies that feel right at home beside a simmering pot of soup or a warm mug of cider, even if Florida is still serving us ninety degrees and humidity thick enough to butter toast.

In this hands-on class, students will make one rich all-butter pie dough from scratch and learn how that same dough can be shaped and transformed into three unique pie styles: rustic blackberry basil galettes, sealed apple cheddar hand pies, and savory chicken and leek mini pies with beautifully structured crusts. Along the way we’ll cover dough handling, crimping styles, filling consistency, and how to build pies that bake up deeply golden, crisp, and balanced.

Designed as a true “pie flight,” this class gives students the chance to experience sweet, savory, rustic, and structured pie making all in one evening while building confidence with foundational pastry techniques. Students leave with three seasonal pie recipes, a better understanding of scratch-made dough, and a collection of cozy autumn baking skills ready for gatherings, holiday tables, and those first few Florida evenings that finally dip below “surface of the sun.”

This class is suitable for the following Dynamic Duo types:

YES: Parent/Grandparent & Child - this is perfect if you have been looking for a class to do with smaller children!

YES: Couples

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.

Japanese Soufflé Pancakes

Sunday, September 6, 2026 | 10:00AM - 12:30PM

$189.00 Per Station (Suitable for Dynamic Duos- see below for more details)

In this hands-on class, you’ll learn how to make Japanese soufflé pancakes two ways — the classic vanilla version and a stunning ube variation topped with coconut whipped cream. These jiggly, cloud-like pancakes are all about technique, and we’ll walk you through every step so you can nail them at home.

We’ll start with the science behind what makes Japanese pancakes so different from a traditional stack — the meringue, the fold, the steam. You’ll learn how to whip egg whites to the perfect stiff peak, how to fold the batter without deflating it, and how to cook low and slow with steam to get that signature height and wobble. We’ll also cover how to flavor and color your batter for the ube variation, and how to make a light, tropical coconut whipped cream that pairs perfectly with the earthy sweetness of ube.

You’ll leave with two gorgeous stacks, a solid technique you can replicate at home, and a serious upgrade to your weekend brunch game.
