A Traditional Taste of Italy: Panettone with Mary Storey
Join Mary Storey for a cozy and festive evening as you learn the art of making Traditional Panettone — the iconic Italian Christmas bread. In this hands-on class, you’ll shape, fill, and bake your own panettone using a pre-risen dough (no waiting around!). While your loaf bakes, you’ll mix up a fresh batch of dough to take home and bake later — perfect for sharing with friends and family.
Panettone is a soft, buttery, brioche-like bread traditionally enriched with citrus zest and a mix of dried and candied fruits, then baked into its signature tall dome in a paper mold. But if dried fruit isn’t your thing, don’t worry — we’ll also have chocolate chips and a variety of nuts like pistachios and hazelnuts available for your custom creation.
To top off the experience, Mary will treat you to a slice of her freshly baked panettone and a surprise panettone-based dessert — with the recipe included, of course!
You’ll leave with a freshly baked panettone, dough to bake at home, and all the inspiration you need to keep this delicious tradition alive in your own kitchen.
Legend has it... Panettone’s roots trace back to 15th-century Milan, when a young apprentice named Toni saved a royal banquet with his improvised sweet bread. The delighted Duke named it Pane di Toni, and the rest is history.

Fall Flavor Scones: Sweet & Savory Baking with Rory
Cozy up this season with one of Rory’s all-time favorite treats — his beloved grandmother’s scones — in a hands-on baking class that’s as heartwarming as it is delicious.
In this intimate, seasonal workshop, you’ll bake two full batches of feather-light scones: one sweet, one savory. Rory will guide you through his tried-and-true base recipe, passed down from his Irish granny, and share dozens of tested variations to suit every craving and occasion.
For your sweet batch, think mix-ins like fresh or dried fruit, crunchy nuts, rich chocolate chips, or indulgent twists like Strawberry Baileys & White Chocolate. Prefer something classic? Go traditional with Raisin or Sultana scones — just like Rory grew up with.
Then, get savory. Rory’s go-to combo? Sharp cheddar, fresh chives, and sun-dried tomatoes. But you’ll have the freedom to mix, match, and create your own flavor adventure.
At the end of class, we’ll gather to enjoy your freshly baked scones alongside a hot cup of traditional Irish tea — the perfect finishing touch. And the best part? You’ll take home everything you bake to share (or not — we won’t tell).
This class is perfect for:
Home bakers of all skill levels

Anyone looking for a fun, delicious hands-on experience
Whether you’re new to baking or a seasoned scone lover, you’ll leave with a full belly, a full heart, and a new go-to recipe for any season.

Brian’s Stinging Bee Cake
Sunday, September 7, 2025 | 3:00PM - 6:00PM
$179.00 per station (Suitable for Dynamic Duos- please see below for more details)
Join Brian Knowles as he teaches you his updated version of the classic German Bienenstich (Bee Sting) Cake. Brian’s Stinging Bee Cake is a great addition to your Oktoberfest celebration.
Moist Honey Cake
Stabilized Diplomat Cream
Raspberry Jam
Soft Caramel
Although the traditional bee sting cake is made with a sweet yeast dough, Brian has chosen to make his with a moist honey cake. The cake is sliced in half and filled with a stabilized diplomat cream. Diplomat cream is a vanilla pastry cream that is then lightened up with some sweetened whipped cream. Gelatin is added to the whipped cream to help stabilize the filling. Raspberry jam, not found in the traditional bee sting cake, is spread between the layers. The jam helps cut through the richness of the diplomat cream and the honey cake. Brian will teach you how to make a soft caramel to spread on top of your cake which then has toasted almond slivers sprinkled on top.
Brian’s Stinging Bee Cake is sure to be the star of any celebration or meal, not just Oktoberfest. This cake holds up well for three or four days (if it lasts that long) and gets better with age. Leftovers (if there are any) go well with a cup of tea for an afternoon pick me up.

This immersive, hands-on class will guide you through the beautiful, patient process of sourdough baking using traditional Italian methods, with a special focus on pane made from Lievito Madre—a natural sourdough starter that’s been lovingly nurtured for years.
We’ll begin by baking a fully fermented loaf, already prepared the night before, so you can get the full sensory experience of scoring, baking, and tasting fresh sourdough right away.
Then, together, we’ll create a new dough from scratch using Lievito Madre. You’ll learn how to:
Mix and develop your dough
Practice proper folding techniques
Shape the dough for an even rise
Understand the fermentation process step by step
While our dough rests, we’ll use the sourdough discard to make crispy, flavorful grissini (Italian breadsticks)—a simple and satisfying way to use every part of the dough.
We'll also cover:
How to build your own Lievito Madre from just flour and water
How to maintain it for long-term baking success
Tips for incorporating it into your weekly baking routine
You’ll Go Home With:
A fresh-baked sourdough loaf you helped finish
A shaped dough to bake at home
Fresh grissini made in class
A printed step-by-step guide to Italian sourdough and starting your own Madre
