Main Course

Steak Diane - Master this timeless steakhouse favorite featuring tender steak finished in a rich cognac and mushroom pan sauce. You’ll explore classic sauté and pan-sauce techniques while learning how to build deep flavor with fresh herbs, mushrooms, and a dramatic flambé finish.

In this hands-on class, we’ll begin by mastering the technique behind a classic Italian risotto. You’ll prepare a creamy fennel and cracked black pepper risotto, learning how to properly toast the rice, gradually incorporate warm stock, and build flavor. The dish is finished with freshly grated Parmesan, creating a rich, silky risotto with subtle sweetness from the fennel and a warm bite of black pepper.

Next, we’ll prepare thick pork chops stuffed with creamy provolone and savory sun-dried tomatoes. You’ll learn how to make a pocket for stuffing, then sear them to develop a golden crust before finishing them in the oven. We will finish the dish with a quick pan sauce built from the flavorful fond in the skillet and a splash of rich cognac

By the end of class, you’ll have the skills to create a complete delicious meal. You’ll leave with confidence in techniques of traditional risotto preparation, stuffing and searing pork chops, and building a flavorful pan sauce.

Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce.  To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) We'll end the class by enjoying our handmade pasta with butter tomato sauce and fresh baked focaccia and you will have lots to bring home and share.

In this hands-on dim sum class, you'll learn how to make three beloved dishes commonly found on dim sum carts and restaurant tables — all designed to be approachable and achievable at home.

We'll start with Shanghai Soup Dumplings (Xiao Long Bao) — the star of the class. You'll make the dough from scratch, roll your own wrappers, fold the classic pleated seal, and steam them to order. We'll cover filling technique, wrapper thickness, and the pleating method that keeps all that beautiful soup locked inside.

Next we'll make Scallion Pancakes, where you'll learn the roll-and-coil lamination technique that creates those irresistible flaky layers — finished in a hot pan until golden and crispy. To balance the richness, we'll finish with a Smashed Cucumber Salad dressed in sesame, chili, garlic, and rice vinegar — quick, bright, and the perfect palate cleanser alongside the dumplings.

Sourdough Baguettes & Pasta Class

Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.

Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. They will then be baked off on a baking stone for a crisp golden crust and an airy creamy interior. You’ll also be making your own batch of baguette dough to take home and bake off in the next couple of days. Don’t worry these baguettes freeze well.

In between tending to our baguettes you’ll be learning how easy it is to make Sourdough Pasta at home. You’ll learn how to make and roll out pasta dough and how to cut it into linguine for your lunch.Yes, you’ll be making your own lunch! Brian will teach you Angelas delicious Balsamic Tomato Bruschetta recipe. This is not only great served on slices of your freshly baked sourdough baguette but also as a sauce for your sourdough linguine.

Join us for an evening celebrating the harmony and vibrancy of Vietnamese cuisine. Together, we’ll explore the balance of sweet, savory, and herbal flavors textures and colors  that define some of Vietnam’s most beloved dishes.

Shrimp spring rolls are fresh, satisfying and healthy, and they come together quickly once you know the techniques. You’ll learn how to prepare delicate, translucent spring rolls filled with tender shrimp, crisp vegetables, fresh herbs, and rice noodles. You’ll be able to customize your rolls exactly how you want them.  To accompany your rolls, you’ll make a bright Vietnamese dipping sauce that perfectly balances sweet, tangy, salty, and spicy flavors.

Next we’ll move to an aromatic favorite: Vietnamese grilled lemongrass pork. You’ll learn how to marinate pork with fragrant lemongrass, garlic, fish sauce, and a touch of sweetness, then cook it to achieve a caramelized, smoky finish. We’ll also cover tips for grilling or pan-searing so you can recreate the dish at home.

Finally we will finish our meal with a sweet creamy coconut and pandan sticky rice. Made with steamed glutinous rice and the verdant green almost vanilla like leaf pandan, it’s a flavor that might be new but will feel familiar and comforting.

Throughout the class, you’ll gain insight into essential Vietnamese ingredients, flavor profiles, and preparation techniques. By the end, you’ll enjoy a delicious homemade meal and leave with the confidence to bring these fresh, flavorful dishes to your own kitchen.

In this hands-on sushi class, you'll learn how to make three show-stopping rolls that go beyond the basics — each one teaching a different advanced technique that will seriously level up your sushi game at home. We'll start with the Spicy Caterpillar Roll: spicy tuna, krab, and cucumber inside, topped with fanned avocado and a drizzle of eel sauce. You'll learn how to slice and layer avocado for that signature caterpillar look that makes this roll as beautiful as it is delicious.


Next up is the Seared Tuna Roll: a California roll base with tempura shrimp inside, topped with thinly sliced tuna that you'll top with spicy mayo, eel sauce, masago, and finished with a blow torch


We'll close with the Lemon Drop Salmon Roll: our most elegant roll of the night. Sourdough Naan are a version of the traditional Indian flatbread that are made with active sourdough starter instead of yeast. Join us for an evening of pasta, bread, and sauce in this hands-on pasta-making class at the Florida Academy of Baking. This class is all about getting back to the basics and creating delicious, simple food from scratch.

You’ll learn how to make tender, fresh egg pasta dough by hand. While your dough rests, you’ll prepare a fresh and flavorful butter tomato sauce made with sweet cherry tomatoes, fresh garlic, and dried herbs, finished with fragrant fresh basil.

As an added bonus, we will have focaccia dough prepared for you to season however you like, creating the perfect accompaniment to your homemade meal.

In this hands-on class, we’ll make a comforting bowl of Vietnamese chicken pho using a few smart shortcuts — including rotisserie chicken — so you can enjoy all the flavor of this beloved noodle soup without an all-day commitment.

Old World Italian Handmade Pasta - Flour, Water, Love: Hand-Rolled Noodles

In this hands-on pasta class, students slow everything down and return to the most traditional way of making pasta. Just flour, water, time, and care. No machines. No shortcuts. Just hands, feel, and connection. Chef Keri will guide students through mixing and kneading a simple pasta dough from scratch, showing how intuition and touch are just as important as technique. From there, students learn to hand-form three classic long pasta shapes, each tied to a specific Italian region and story:
Pici – thick, rustic Tuscan noodles with a comforting, chewy bite
Strozzapreti – twisted strands woven with folklore and history
Sagne ’Ncannulate – beautifully spiraled pasta from southern Italy, made to lovingly hold sauce

While students are shaping their pasta, Chef Keri offers stories and context for each shape, connecting the pasta in your hands to the regions, people, and kitchens it came from. Chef Keri demonstrates a simple, soulful tomato butter sauce, emphasizing how uncomplicated ingredients can create rich, comforting flavor. Towards the end of the class, students will cook and enjoy some of the pasta they’ve made, gathering around the table to taste the difference that fresh, handmade noodles make.

We'll end the session by enjoying the pasta you’ve created together—and feel free to BYOB to pair your wine or beverage of choice with the meal. These simple, flavorful recipes are sure to become a staple in your kitchen for years to come.

You’ve asked for it and now its here! Spend your day with Brian Knowles as he teaches you how to make four breakfast favorites using your sourdough discard.

Sourdough Discard Buttermilk Biscuits have more tang and complex flavors than a traditional flaky biscuit. These biscuits are great for breakfast or even dessert just by adding bit of sugar. Brian will share how to add discard to many recipes as this is his own buttermilk biscuit recipe he adapted to use discard.

These Sourdough Discard Bagels are chewy, golden brown and easy to make. The sky is the limit for toppings. Everything bagel seasoning, poppy or sesame seeds, salt, asiago cheese, maybe even cinnamon crunch. Your friends and family will be amazed that you made these bagels from scratch. Slice these bagels before freezing and you have a quick breakfast, just pop in the toaster and you are out the door.

Sourdough Discard English Muffins are so easy they don’t even require a stand mixer-just one bowl! These no knead English muffins are tender and soft with a golden brown exterior. Make a batch and enjoy them with butter and homemade jam, or make your own breakfast sandwiches – bacon, egg and cheese anyone?! You can make these the same day or for even more flavor let the dough cold ferment overnight. 

Sourdough Discard Cinnamon Crunch Toasty Crackers are a cracker version of the popular breakfast cereal. Lots of cinnamon and sugar coat these discard crackers. These are a favorite in the FAB kitchen and never last long after they come out of the oven.

In this immersive, hands-on knife skills workshop, you’ll learn how precise cuts affect cooking time, texture, and flavor, then put those skills to work in a fast, flavorful stir fry.

We’ll start with knife safety, grip, and technique before moving through real-world prep: breaking down a bone-in chicken with a boning knife, mastering classic vegetable cuts, and tackling pineapple with three different knives. Along the way, you’ll practice push cuts, rock chops, bias slicing, julienne, bâtonnet, dice, and mince—learning not just how to cut, but why each cut matters.

The class culminates in a wok-fired pineapple–chicken stir fry, where you’ll organize your mise en place by cooking time, control heat to avoid steaming, and layer textures for a balanced, restaurant-style dish.
