Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce.  To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) Come along and learn how to make traditional Jaffa cakes. Known as ‘biscuits’ in the UK and Ireland and called ‘cookies’ in the United States, these treats are a bit of a conundrum as they are neither. They do, however, have a layer of sponge cake topped with sweet orange jelly and finished off with sumptuous chocolate. These little disks of sunshine are hard to resist so we recommend installing a safe in your pantry before attending this class. As you’re making all the components from scratch, you can customize your cake by adding in some orange zest and jazz up your jelly with a bit of Cointreau for a boozy kick too!

Come join local Grecophile Marianna Faure as she shares her family’s Traditional Walnut Baklava with Honey Syrup recipe. You’ll have a diaskédasi (fun) time making your own pan* to take home and share with your loved ones - or not - we won’t judge!

Baklava is a much loved treat made of flaky, thin phyllo pastry dough and a delicious crushed nut filling and sweetened with a simple honey syrup. If you want that fresh out of the oven, homemade taste, then look no further. We have you covered! Although Marianna’s lightly spiced version uses walnuts, you can always vary the nut mixture with other favorites like pecans or pistachios or go a little rouge and do hazelnuts and chocolate as well.

Ever had a Mexican Mudslide Cocktail? If not, think boozy Mexican Hot Chocolate meets a creamy milkshake- Chocolate, Kahlua, Amaretto, Cinnamon, and a few other spices to bring the heat all blended together with creamy vanilla ice cream.  Well, Angela was left unattended the other day and decided to turn the cocktail into a cake...and then decided to have a bit of fun with the decorations. You'll make a delectable, Mexican Hot Chocolate Spiced* Cake, a Kahlua and Amaretto infused Chocolate Pudding Filling and a Spiced* Chocolate Buttercream (you can even add some more booze here if you like.)

*Spices can be adjusted to suit your tastes. Non-alchocolic options also available in place of the Kahlua and

Once your cake is cooled, filled and crumb coated, you’ll create and paint your sugar skulls and learn to create a striped pattern and some festive piping around the side of your cake.

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.

Sejal will walk you through step by step which spices to add and when to develop the perfect flavor balance for your foray into Indian cooking. You’ll make Chicken Karahi - using a blend of spices (you can adjust the heat to your liking) and fresh herbs in a tomato based sauce served with Jasmine Rice and delicious Peshwari Naan*.

Just in time for St. Patrick’s Day, come along as Rory McEllin teaches you to recreate one of Ireland’s Tea Time Favourites! In this hands-on class, you'll learn to make TWO BATCHES of light-as-a-feather Sweet and Savory Traditional Irish Scones!

There will be a huge selection of flavor options available from fruit, nuts and chocolate (Strawberry Baileys & White Chocolate Chip is wonderful!) or you can go old school for your sweet batch- Raisin/Sultanas and for your Savory option, it’s hard to beat Cheese Scones (Cheddar, Chive and Sun Dried Tomato are my favorite) plus, you’ll create a Berry Quick Jam and Chantilly Cream! Chef Alex is our FABulous Guest Chef all the way from California for 4 full days teaching a different masterclass each day, so don’t delay…these classes will sell out quickly!

Pan de Muerto, is a fragrant sweet bread that has deep roots to ancient Aztec rituals and Spanish symbolism. Because of its fragrant qualities, the bread is said to serve as one of many ways to call on passed friends and loved ones; it is the centerpiece on many altars during the Day of the Dead. The multi-day holiday, known in Latin America as El Di´a de los Muertos is celebrated on November 1st and 2nd.

Pan de Muerto, meaning bread of the dead in Spanish, is made up using a sweet dough. The buttery dough contains orange peel and additional Agua de Azahar (orange blossom water). The breads are typically made up to represent a tomb or in some cases a corpse; our focus will be the tombs. Tumbas represent the bones and skull of the deceased loved one.
Students will learn about the process and techniques behind Tumbas (tombs), made in different sizes and using different decorating techniques. During the fermentation stage of the yeast-raised dough, students will learn how to make Polvorones de Naranja (orange flavored butter cookies). An easy cookie recipe with deep Moorish roots and flavored with orange peel.

The students will take home two iconic recipes, and a few boxes of sweet breads and pastries that can be enjoyed with loved ones. A great way to celebrate life all year long.

Join Chef Alex Peña, a California native, a former Marine, a passionate Master Baker, trained culinary chef, and a professional bread scientist for his second day of masterclasses- Pan Fino!

Pan Fino, a specialty sweet bread that to me, represents an exclusive category of the pan dulce variety. The Pan Fino sweet dough is taken a step further by adding the combination of different leavening systems and a higher level of shortening to the recipe.

The yeast-raised dough contains additional chemical leavening to provide not only a unique texture, but also a darker color and flavor. The alkaline notes from the chemical leavening systems provide a subtle balance to the high level of cinnamon. In addition, the shortening in the sweet dough lends itself to creating a variety of figures that require optimum pliability when rolled out using a wooden dowel. The dough does not require a floured bench and is best handled cold or well fermented under refrigeration. Ultimately, the rich ingredients create a cinnamon cookie-like bread like no other.

The students will learn about the process and technique behind the iconic Elotes (corn on the cob), Chamucos (Demons (chamuscar – seared or branded)), Cuernitos (bull horns), Troncos (tree trunks), Alamares (knots), Empanadas de Calabaza (pumpkin filled turnovers). Every sweet bread will include a different sugar topping that will be produced during the class. Some of the old-world breads will also require rock sugar, a simple decoration that can be applied to many applications in the pan dulce category. During this class students will learn about the Calabaza filling used in the empanadas and how the sweet dough can be used as a universal platform for many other custard and fruit fillings.
The students will take home a total of seven recipes, and a few boxes topped with these amazing sweet breads and pastries.

The buttery Bizcocho dough is a direct descendent to the French Brioche; however, the recipes for this yeast-raised dough have been enhanced with coarse ground cinnamon and vanilla extract. A recipe that Chef Alex has perfected and can be used as a base for an entire showcase of pan dulce.

During this class, the students will learn about the technique and baking process on how to make five different sweet breads. Beginning with the iconic Conchas (seashells), before making Chilindrinas (crying child, or having no significance whatsoever), Nubes (clouds), Volcanes (volcanoes), and the Cuerno Bizcocho (bull horn). Every sweet bread contains a unique sugar topping and in the case of the Chilindrina, additional rock sugar. The students will take home a total of seven recipes, and a plethora of baking knowledge.

Join Mary Storey for a delightful evening recreating a batch of individual size versions of the classic French pastry Paris–Brest. This delightful pastry was created in 1910 by pastry chef Louis Durand, as an homage to the long-distance Paris-Brest-Paris bicycle race (the pastry’s circular shape is meant to evoke that of a bicycle wheel.) You’ll start by making Crisp, Almond-studded baked rings of Pâte à Choux, followed by Praline Crème Mousseline—an amazing mixture of Vanilla Crème Patisserie, Almond and Hazelnut Praline Paste, and Whipped Butter. Finally, you’ll split your Pâte à Choux and fill it with your light, fluffy Praline Crème Mousseline before topping with a dusting of powdered sugar.

This a perfect Dynamic Duo class to take with your friends, family members or a sweet Date Night and you can BYOB!
