During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

Join Brian Knowles as he teaches you how to make two of his favorite (and easiest) breakfast items using sourdough discard. 

First he will teach you how to make what may be the easiest bread ever-English Muffin Bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the cornmeal bottom giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.

Just add all the ingredients to a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!

While the bread dough is proofing we’ll make a FAB favorite Croque Monsieur! Layers of English Muffin Bread, Bechamel Sauce, Cheese, Deli Ham (or not-the choice is yours) and topped with even more Bechamel Sauce…You’ll even get to play with the Chef’s torch!

While your breads are baking Angela will teach you to make a compound herb butter too!

What you’ll make:

Teleras: These are soft, slightly sweet Mexican sandwich rolls with a distinctive shape. Perfect for making sandwiches, teleras are an everyday favorite in Mexico and are a great way to enjoy whole grain baking in a classic form.

Cream Cheese & Jalapeño Bolillos: These whole wheat bolillos are stuffed with a creamy and spicy filling of cream cheese and jalapeños, offering a delicious twist on a traditional roll.

Join us for a fun and delicious breakfast pastries class where we’ll make a variety of sweet treats that are perfect for starting your day! In this hands-on class, we’ll guide you through the steps of making a cinnamon-encrusted coffee cake, Magdalenas, and a fun twist on a classic Mexican pastry—besos!

What you’ll make:

  • Cinnamon Coffee Cake: Learn to make a rich, cinnamon swirl coffee cake, with the option to add walnuts or pecans. Each student will create their own ¼ sheet (9.5" x 15") cake, perfect for sharing or enjoying on your own.

  • Magdalenas: These are scone-like, raisin-infused pastries that are the Mexican version of the French Madeleine. We’ll teach you how to shape and bake them, and you can add your choice of sprinkles or nuts on top for extra flavor and texture.

  • Besos: We’ll also show you how to create besos—a sweet pastry filled with raspberry filling and coated in coconut. These little "kisses" are fun to make and even more fun to eat!

By the end of the class, you’ll have a collection of delicious, homemade breakfast pastries to enjoy at home. Whether you’re new to baking or looking to expand your skills, this class is perfect for anyone who loves sweet, comforting treats.

Who doesn’t love a warm buttermilk biscuit topped with eggs, meat and cheese in the middle? Are mornings crazy in your house trying to get everyone out the door? Have no fear, Brian Knowles will teach you how to make mornings easier and tastier with his Buttermilk Biscuit Breakfast Sandwiches that can go from freezer to the table in two minutes. 

Brian will teach you how to make light and flaky buttermilk biscuits two ways. You’ll start your biscuit journey by making a savory biscuit for your breakfast sandwiches. Once they are cool you’ll build your biscuit sandwiches with your choice of breakfast meats and cheeses. You’ll have the opportunity to enjoy one of your buttermilk biscuits before he shows you how to wrap them up for storing in the freezer and he’ll even share his tips on heating them up in the microwave.

Don’t worry about having to fry up a bunch of eggs individually because Brian will show his time saving secret of baking scrambled eggs in a sheet pan. You’ll cut your eggs using the same cutter as your biscuits, so you’ll get egg and biscuit in every bite!

While your savory biscuits are in the oven, Brian will teach you how to turn the same buttermilk biscuit recipe into a sweet one with a few tweaks to the recipe. There is no better way to end the class than by enjoying  the fruits of your labor by taking one of your sweet biscuits and topping it with macerated strawberries and a rich Chantilly cream. 

You’ll be the hero when you arrive home with buttermilk biscuit breakfast sandwiches AND be able to quickly pull together fresh Strawberry Shortcake for dessert that evening.

Spend the day with Brian Knowles as he takes you on a journey discovering sweeet and savory adventures for you sourdough discard.

We’ll start the day by making a discard version of that ever so popular Lemon Blueberry Loaf Cake found at a popular membership warehouse store. This loaf cake is so moist and tender that very bite just melts in your mouth. Each slice is loaded with fresh blueberries and the batter is made with the zest and juice of fresh lemons (no artificial flavors here)! Topped with a sweet layer of crumble and a drizzle of lemon icing, this blueberry loaf is just as tasty (if not more) as it looks.

Next up Brian will teach how to make the Quick Sourdough Discard Rolls so many of you have enjoyed with soup at some recent all day classes. These quick easy and tasty rolls are perfect for holidays and can be switched up by topping with flaky salt, sesame or poppy seeds. These rolls only need to rise once so are great for a last minute roll for dinner. 

While our rolls are rising we will then make our Sourdough Discard Goldfish Cracker dough. These crackers come together quickly in a food processor and then chilled for a bit. They are so good that even Brians dogs gobble them up. These crackers never last long, so you’ll be making these quite often. Once the dough is made you can store it in your fridge for up to a week and easily bake off a batch when the craving strikes. We’ll bake these off when we have time and hopefully there will be some leftover for you to take home. 

We’ll end the day making Sourdough Discard Cosmic Brownies. These rich and fudgy brownies topped with a chocolate icing and sprinkles of your choice will bring you right back to your childhood.  What makes these brownies unique is that the icing is made with hot water and spread on the just out of the oven brownies and topped with your choice of sprinkles. We like them best chilled but wouldn’t turn down one down if it wasn’t.

London Fog Cake takes the flavors of a London Fog latte and puts them in to a cake. You have layers of deliciously moist Earl Grey tea infused cake, silky smooth Earl Grey buttercream, and salted caramel drips for a cake sure to impress everyone.

Earl Grey tea is a black tea blend flavored with the oil found in the rind of the bergamot orange, which give it its unique aroma and flavor. The name ‘London Fog’ comes from the effect of foamy milk hitting the black tea and creating a cloud-like plume, resembling a foggy London afternoon, even though the drink was created in Canada.

To achieve the London Fog flavor in cake form you start off steeping Earl Grey tea in milk that will be used in both the cake and the buttercream. The cake layers also have loose leaf Earl Grey tea added to the batter to create a lovely flecked appearance, along with sour cream and cake flour keep the layers moist and tender. For more London Fog flavor, you can add a few drops of either bergamot or lavender oil to both the cake batter and buttercream.

The finished cake is beautifully decorated with a salted caramel drip, buttercream rosettes and loose leaf tea sprinkled on top. Although salted caramel is not traditionally part of a London Fog, it adds some sweet complexity to the whole cake and grabs your attention. Earl Grey tea lovers will be in heaven with this cake!

Open Bakes/Uninstructables (OBU's) offer an opportunity for members to use the FAB facility to create a FAB recipe for personal (non-commercial) use.

Perfect for trying out one of our FAB Recipes- you select the recipe and we’ll have all the equipment set up and the mise en place done for you. OBU’s are self guided (no instructor telling you what to do) but there will always be a member of staff at hand if you have a question.

Want to practice your baking/decorating skills but don’t have all the equipment? We’ve got you covered! Book an OBU and make it at FAB!*

You may come as a Duo ensuring both partners have signed a waiver. Age restrictions do apply for some OBU selections. If your partner is not a FAB member, you are responsible for their behaviour whilst on the FAB premises.

Okay, so there is some debate at FAB about what to call these- Similar to Travel Cakes, but baked in pie tins for easy transport (and storage as they last a good while) but where Travel Cakes or Gateaux de Voyage generally only have a dusting of confectioner’s sugar or a light glaze, these beauties are covered with an Italian Meringue Buttercream Hybrid frosting and then covered with delicious coconut.

They are cake, but baked in Pie Tins, so how about Pakes? (Cake + Pie Tin = Pake?) Feel free to weigh in with your suggestions.

During this FULL DAY European Breads Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including:

  • Pan co' Santi - (Tuscan Walnut and Raisin Bread)

  • Pane Siciliano (Sicilian Sesame Seed/Italian ‘Supermarket’ Bread)

  • Pane Toscano (Tuscan Bread)

We’ll start the morning making our Pan co’ Santi bread dough (traditionally made for All Saint’s Day, this delicious, slightly sweet bread contains some unusual ingredients, making it as memorable as it is delicious!) Then we’ll move on to our Pane Toscano which should be out of the oven just in time for a tasty lunch. Finally, we’ll make our Pane Siciliano (Italian ‘Supermarket’ bread- you know the fat, sesame seed studded loaves that no self-respecting supermarket should be without- this is even better, and without any preservatives! This bread also has some unusual ingredients that lend it the distinctive taste and texture we all know and love!

Open Bakes/Uninstructables (OBU's) offer an opportunity for members to use the FAB facility to create a FAB recipe for personal (non-commercial) use.

Perfect for trying out one of our FAB Recipes- you select the recipe and we’ll have all the equipment set up and the mise en place done for you. OBU’s are self guided (no instructor telling you what to do) but there will always be a member of staff at hand if you have a question.

Want to practice your baking/decorating skills but don’t have all the equipment? We’ve got you covered! Book an OBU and make it at FAB!*

You may come as a Duo ensuring both partners have signed a waiver. Age restrictions do apply for some OBU selections. If your partner is not a FAB member, you are responsible for their behaviour whilst on the FAB premises.

OBU's start at $100.00 for a 2 hour session, $200.00 for a 4 hour session and include the recipe(s), pre-measured ingredients, packaging and use of the FAB Facility equipment.

During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.

We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.

While that loaf does its second rise, you’ll learn how to add inclusions and create beautiful decorative shaping and scoring stunning designs.

Finally, we’ll create the striking Garlic & Fresh Herb Sourdough Twist Bread (oh my- it is delicious!)

Pane di Pasqua is a traditional Italian Easter bread. This slightly sweet  and puffy bread is braided into a simple ring decorated with dyed eggs. This bread will be a beautiful showstopper on your Easter table.

You can make this recipe into six smaller bread loaves, or divide the loaf in half and make two larger loaves. Twisting the dough into a ring-shape allows it to nestle six colorful eggs that you dye yourself in your colors of choice, making you feel like a kid again. 

Multicolored sprinkles are optional but they add a fun and colorful twist to this traditional bread.

Join Mary Storey for a fun evening making THREE varieties of delicious Rugelach. Is it a pastry or a cookie? Well, technically it’s a pastry disguised as a cookie so you can call it a pookie or a castry if you like, but really who can talk with a mouth full of Rugelach?

You’ll start by selecting your THREE Fillings: A Fruit Filling, Cinnamon Sugar (with or without nuts) and a Chocolate version.

Using dough that has already been prepared (as it has to be refrigerated overnight) you’ll learn the different rolling techniques for both the Crescent and Pinwheel versions. While your cookies are baking, you’ll make a batch of dough to bring home so you can recreate these festive treats whenever you like! During this hands-on class, you'll prepare 8 mini Lava Cakes to take home ready to be popped in the oven to reheat at a moment's notice. While your cakes bake, you’ll also create a batch of Vanilla Bean Semifreddo to take home and enjoy with your little beauties. Plus, Mary will demonstrate how to make a batch of the perfect tart accompaniment Raspberry Coulis!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.

There’s no need to be intimidated by bread! In this hands-on 101 class, Angela McEllin will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Angela will teach you to make a compound herb butter too!

You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Best of all, you’ll get to sample your teacher’s bread and take home your still warm loaves to share with family and friends.

Kick off St Patrick’s Day with a hardy Irish Brunch. Join Rory McEllin as he guides you through everything you need to know about the perfect Irish Brunch. You will start by making TWO Soda Breads to have with your brunch.

Learn Rory’s secret behind making his amazing Potato Cakes and how to cook them to perfection. You will cook some Traditional Irish Bangers (giant sausages), Rashers (Irish Bacon), Black and White Pudding* and Grilled Tomatoes. We will have some other Irish favorites prepared to accompany your brunch including Baked Beans (yes, that’s a real thing in Ireland) and Mushrooms. You will finish the dish off with Eggs cooked to your liking. We’ll have Irish Tea to accompany your brunch too!

*Black and White Pudding are types of Irish Sausage made with pork and barley or oats. There really isn’t an equivalent food here in the US, you’ll just have to trust us that they are seriously tasty!
