Come along and learn how to make traditional Jaffa cakes. Known as ‘biscuits’ in the UK and Ireland and called ‘cookies’ in the United States, these treats are a bit of a conundrum as they are neither. They do, however, have a layer of sponge cake topped with sweet orange jelly and finished off with sumptuous chocolate. These little disks of sunshine are hard to resist so we recommend installing a safe in your pantry before attending this class. As you’re making all the components from scratch, you can customize your cake by adding in some orange zest and jazz up your jelly with a bit of Cointreau for a boozy kick too!

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course.   • Pâte à Choux Pastry: Eclairs, Cream Puffs and Profiteroles- Fill your sweet eclairs and profiteroles with your choice of cream patisserie flavors and your savory puffs with either Chicken alla King, Creamy Wild Mushroom, Smoked Salmon and Cream Cheese and chives or choose from dozens of other savory options…best of all, you’ll go home with all the recipes so you can show off your cooking and baking prowess.

  • Cream Tarts- These delicious tarts are a cross between cake, a cookie and a (fruit, caramel or chocolate) cream filled pastry. Tarts can be topped with a selection of handmade chocolates, French Macarons, mini Profiteroles, fresh fruit and beautiful buttercream or ganache flowers. You can choose from dozens of flavors for your tart layers and hundreds of flavors for your fillings.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

A California native, a former Marine, a passionate Master Baker, trained culinary chef, and a professional bread scientist, Alex has a passion for traditional Mexican baking and is going to share favorite cookie recipes in his Polvorones & Galletas Class.

Polvoron de Canela, a cinnamon powdered cookie that holds a special place in history as one of the earliest recipes introduced during the Spanish conquest. Its delicate texture and warm, spicy flavor evoke memories of Moorish and Basque bakers who brought their expertise to Mexico, where it was further refined with French influence.

Polvorón de Chocolate, a decadent variation infused with the rich flavors of cocoa powder. Polvorón de Boda, also known as the Mexican wedding cookie. With its roots tracing back to the Russian tea cookie, this delicate butter cookie infused with toasted walnuts and lemon zest symbolizes purity and celebration. The Polvorón de Almendra, substituting walnuts with toasted almond pieces and infusing it with almond emulsion for a modern twist.

Payasos or clown cookies in Spanish, featuring layers of pink, chocolate, and plain dough, pay homage to the vibrant colors and festive spirit of Mexican culture.

The Galleta de Molde, an open-face cookie that invites endless possibilities for customization. Topped with chocolate chips, sprinkles, or flake coconut, these delightful cookies showcase the versatility of traditional recipes, allowing bakers to experiment and express their creativity.

If you’ve ever visited Rome, you will hopefully have experienced the exquisite cream filled breakfast pastry that is the Maritozzo con la Panna (Maritozzi Buns.)

Maritozzi are fragrant, sweet dough buns flavored with orange zest and cardamon, sliced in half and filled with smooth, fresh whipped cream.  They are a staple in Rome’s pasticcerie, and commonly found during the breakfast hours in coffee bars around the Eternal City.

Join Mary Storey for a wonderful evening recreating these amazing buns. You’ll start by dividing and learning to shape a batch of dough that we’ve prepared for you. While your buns are rising, you’ll make a batch of dough to bring home so you can enjoy even more Marizozzi whenever you like. Next, we’ll bake the buns, and while they are in the oven you’ll make the delicious syrup that the buns are soaked in immediately out of the oven. Join local pastry chef Keri Cossette to celebrate Pi Day! In this all day class you will learn three different types of pies crusts AND three different types of pie fillings: Traditional Apple Pie, Tropical Fruit Cream Pie and Caribbean Spiced Beef Hand Pies.

Keri will teach you how to make her easy all purpose flaky pie dough, coconut shortbread cookie dough, & a curry/tumeric infused pie dough for the hand pies. While the doughs are chilling, Keri will teach you how to make all your fillings for your 3 pies. You'll start by making your apple pie filling so it has time to macerate and become delicious. Then Keri will show you how to make Pabana puree (a tasty blend of passion fruit, mango & banana) to then be used two ways in your tropical fruit cream pie as a custard & sauce! After your custard is made and cooled in the fridge you'll make the last filling a delicious savory spiced beef filling. You will have the opportunity to make it as spicy as you would like using scotch bonnet peppers. Keri will then teach you all her tricks and tips for rolling out the perfect pie crust while you assemble your apple pie to be baked. While the apple pie is baking in the oven you'll start working on finishing up the cream pie by learning how to make the perfect cookie crust (using the yummy coconut shortbread cookie dough you made earlier) Keri will show you how to fill and finish this tropical getaway in pie form. Last but not least, on our Epic Pi Day celebration Keri will show you how to roll/cut and fill the Caribbean Spiced Beef Hand Pies, You'll have the option to bake off some in class and freeze some to take home as they make a great easy meal during the week.

While your chicken is cooking you’ll make some delicious, Fluffy Buttermilk Waffles and a Spicy* Maple Syrup to tie this dish all together. Perfect for those who want to put a little pep in your weekend breakfast routine! You’ll finish the class by enjoying a cooling glass of the spirited Tennessee Tea or Passion-fruit Lemonade (non-alcoholic.)

*Keri will offer a milder version of the spice blend for the capsicum averse.

We make the gelato (Italian Ice Cream) the old-fashioned way- by hand so you can recreate the recipes at home without buying any special equipment. With hundreds of pure, natural extracts, spices, purees, and liquors and dozens of add-ins to choose from, your flavor combination options are limitless. During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.

Join Mary Storey for an immersive morning recreating one of the iconic entremets found along the Parisian 7th Arrondissement Rue de Bac- Entremets au Café Amandes Caramélisées - Tartlets Arabica. Comprised of a number of delicious individual elements, the combination of which elevates this pastry to the sublime!  Each tartlet will contain:

  • Pâte sablée aux amandes (Almond sablée dough)

  • Biscuit Jaconde café (Coffee Jaconde sponge cake)

  • Crème mousseline au café (Coffee mousseline cream)

  • Amandes bâtonnet caramélisées (Caramelized almond sticks)

  • Crémeux au café (Coffee Cream)
