Step into September baking with a table full of flaky crusts, bubbling fillings, and the kind of pies that feel right at home beside a simmering pot of soup or a warm mug of cider, even if Florida is still serving us ninety degrees and humidity thick enough to butter toast.

In this hands-on class, students will make one rich all-butter pie dough from scratch and learn how that same dough can be shaped and transformed into three unique pie styles: rustic blackberry basil galettes, sealed apple cheddar hand pies, and savory chicken and leek mini pies with beautifully structured crusts. Along the way we’ll cover dough handling, crimping styles, filling consistency, and how to build pies that bake up deeply golden, crisp, and balanced.

Designed as a true “pie flight,” this class gives students the chance to experience sweet, savory, rustic, and structured pie making all in one evening while building confidence with foundational pastry techniques. Students leave with three seasonal pie recipes, a better understanding of scratch-made dough, and a collection of cozy autumn baking skills ready for gatherings, holiday tables, and those first few Florida evenings that finally dip below “surface of the sun.”

In this hands-on baking class, you'll create the legendary Schwarzwälder Kirschtorte, better known as Black Forest Gateaux—a timeless dessert that combines rich chocolate, luscious cherries, light whipped cream, and elegant chocolate decorations into one unforgettable cake.

You'll bake a decadent Black Magic chocolate sponge, brush each layer with traditional Kirschwasser (Cherry Schnapps) or a flavorful cherry juice reduction for a non-alcoholic version, then fill your cake with a rich dark Morello cherry compote and delicate Kirsch-infused Chantilly cream. As you assemble your masterpiece, you'll learn the professional techniques for leveling and torting a cake, creating perfectly balanced layers, and achieving a beautiful finish.

To complete your gateau, you'll craft dramatic Callebaut dark chocolate bark that wraps around the sides of the cake, capturing the look of the towering trees of Germany's famous Black Forest. A Six-Week Parent & Child Cooking Adventure (Ages 5–10)

There's no better way to spend quality time together than cooking side by side! Little Chefs & Grown-Ups is a fun, hands-on six-week cooking series designed for children ages 5–10 and their favorite grown-up—whether that's a parent, grandparent, or guardian. Together, you'll laugh, learn, and create delicious meals while building skills and memories that will last a lifetime.

Each weekly class introduces young chefs to a new set of cooking or baking skills through recipes that are simple, fun, and easy to recreate at home. Children will gain confidence in the kitchen as they learn how to measure and weigh ingredients, practice good kitchen hygiene, use age-appropriate kitchen tools safely, follow recipes, and understand the importance of cleaning up as they cook.

The journey begins with breakfast favorites, where little chefs will learn to crack eggs, mix pancake batter, and make delicious morning treats. As the weeks progress, they'll discover the joy of baking by creating homemade banana bread and scones, prepare healthy lunches and snacks, help cook family dinners, and learn how to make quick homemade snacks whenever hunger strikes.

Throughout the course, children will develop practical life skills while exploring new foods and flavors in a supportive and encouraging environment. Every class is designed so children actively participate in preparing the recipes, while their grown-up provides guidance and enjoys the experience alongside them.

The series concludes with a special "Little Chef Celebration," where each child puts their new skills into practice by helping prepare a complete family meal to take home and share. From reading recipes and measuring ingredients to rolling meatballs, mixing sauces, and baking brownies, they'll proudly demonstrate everything they've learned over the previous six weeks.

More than just a cooking class, Little Chefs & Grown-Ups is about building confidence, encouraging independence, and creating meaningful family traditions. Curious about sourdough? New to sourdough? Struggling with sourdough?

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!  

You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day! 

Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around. 

While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

As the weather starts to shift and baking season settles back in, this class dives straight into rich bakery comfort with a decadent turtle-inspired twist. Students will learn how to make an ultra-soft double chocolate brioche dough studded with mini chocolate chips before transforming it into bakery-style swirl buns layered with homemade salted caramel filling and toasted salted pecans.

Throughout class, we’ll cover the techniques behind enriched doughs, gluten development, rolling and shaping clean spirals, working with rich fillings, and baking soft, fluffy buns with gooey centers and beautiful structure. Students will also make a silky caramel cream cheese icing and a smooth chocolate ganache drizzle to finish each bun, learning how to properly balance textures and sweetness for that true bakery-style finish.

Fresh from the oven, each swirl bun will be topped with warm icing, ribbons of ganache, and crunchy toasted pecans for a final result inspired by classic turtle candies and pastry shop treats alike. Join Brian Knowles for a fun filled week of all things Sourdough! During this week long immersive baking retreat you’ll learn/make:

Learn to make bakery-style milk buns that are as beautiful as they are delicious. In this hands-on class, you'll create incredibly soft, fluffy buns filled with sharp cheddar, smoky bacon, and sweet caramelized onions, then finish them with a buttery maple-thyme glaze, crispy bacon, and a sprinkle of Parmesan. These savory buns are perfect alongside a bowl of soup, for weekend brunch, holiday entertaining, or anytime you're craving fresh homemade bread.

Chef Keri will guide you through the tangzhong method, a simple Japanese bread-making technique that creates an exceptionally soft, tender dough with a light, airy crumb. In this hands-on intermediate cookie decorating class, you'll make everything from scratch — mixing and baking your own sugar cookie dough before decorating a set of six show-stopping Halloween designs that are spooky, sweet, and seriously impressive.

We'll start by making the dough, rolling, cutting, and baking your cookies so they're perfectly flat and ready for decorating. While they cool, we'll mix royal icing, build your color palette, and get your stations set up before the real fun begins.

Then we'll work through all six designs: a bat snow globe, a pumpkin with leaf and stem work, an adorable trick-or-treating ghost, a candy-bow skull set, a swirled Halloween candy, and a whimsical witch hat — each one teaching a different skill. Celebrate the flavors of the season with a full day of baking, filling, frosting, and decorating! Join Shayla for this hands-on cake class where you’ll create an indulgent Pumpkin Cake layered with Caramel Buttercream, Toasted Pecans, and Brown Butter Cream Cheese Icing—all from scratch.

You’ll begin the day by making tender, super-moist pumpkin cake layers, learning how to create a cake that is rich in fall flavor while remaining beautifully soft and moist. Shayla will guide you through preparing the batter, properly filling your pans, baking your layers evenly, and knowing exactly when your cakes are perfectly baked.

While the cakes cool, you’ll move on to the fillings and frostings. You’ll make a fluffy Caramel American Buttercream for the filling and learn how to achieve a smooth, creamy consistency that's perfect for layering. You’ll also toast pecans to bring out their wonderful nutty flavor and add a delicious crunch between the layers.

Then comes one of the stars of the cake—Brown Butter Cream Cheese Icing. You’ll learn how browning butter transforms its flavor, adding a rich, toasted, almost caramel-like depth that pairs beautifully with pumpkin and warm fall spices.

In this hands-on baking class, we’re tackling two delicious cookies that may sound like cousins but couldn’t be more different: the elegant French macaron and the wonderfully chewy coconut macaroon.

First up: French macarons! You’ll learn how to whip, fold, pipe, and bake these colorful little beauties without losing your mind in the process. We’ll demystify the famous macaronage technique, talk about those elusive ruffled “feet,” and share plenty of tips for getting smooth, picture-perfect shells.

Then it’s time for the coconut macaroon—a much more relaxed cookie with big coconut flavor, crisp golden edges, and a soft, chewy center. You’ll mix, scoop, shape, and bake your way to a batch that’s seriously hard to resist.

And yes, you’ll actually do the baking! This is a hands-on class, so expect to get involved from start to finish. We’ll mix, pipe, scoop, bake, and taste, together. Along the way, you’ll pick up  tricks for knowing when your batter is just right and how to avoid the most common macaron mishaps.

Whether you're a passionate home baker or a cottage food business owner looking to level up, this immersive three-day retreat with Lisa He of Borderlands Bakery is designed to take your decorated cookie game from scratch — literally — to a fully realized, professional-quality skill set you can build a business or a beautiful hobby around.

Over three intensive, hands-on days, you'll master four distinct cookie bases, learn to work with royal icing from flood to florals, explore rolled and piped buttercream techniques, and walk away with a toolkit of recipes, skills, and confidence that will transform the way you approach decorated cookies forever. What You'll Learn

Day 1 — The Foundation: Doughs, Flavors & Prep

Morning through afternoon — all cookies baked and ready for Day 2

The best decorated cookie starts with the best base. On Day 1 we slow down and do it right — mixing, flavoring, chilling, rolling, cutting, and baking four distinct cookie doughs so every cookie is perfectly prepped and ready for decorating.

You'll cover:

  • Classic vanilla-almond cut-out sugar cookie: the workhorse base that I'll teach you to customize into 3 additional flavors of your choice

  • Flavor extracts, emulsions, and how to build your own flavor profiles

  • Mix-ins and inclusions: cocoa powder, citrus zest, espresso, spices, and more

  • Proper dough hydration, chill times, and how both affect your cut

  • Rolling for consistent thickness, cutter technique, and clean release

  • Baking for flat, even cookies — oven tips, pan rotation, and cooling

By end of Day 1, you'll have 4 full sets of baked, cooled cookies ready to decorate. 

Day 2 — Royal Icing: From Flood to Fine Detail

Full day — all things royal icing

Royal icing day is where decorated cookies become art. We'll spend the full day working through every consistency, every technique, and every tool — from your first flood fill to hand-painted florals.

Morning: Foundations

  • Royal icing from scratch — meringue powder vs. egg white, ratios, and troubleshooting

  • Understanding consistency: flood, stiff, floral and when to use each

  • Color theory for cookie decorating: mixing, marbling, achieving true blacks and whites, a little discussion about non-artificial dyes & impacts

  • Flooding technique: how to outline, fill, and get a perfectly smooth surface every time

  • Wet-on-wet designs: simple patterns, color blocking, and blending

Afternoon: Advanced Techniques

  • Fine line piping and detail work

  • Brush embroidery and hand-painted details

  • Royal icing florals: roses, wildflowers, and leaves

  • Lettering: block, script, and bounce lettering on cookies

  • Stenciling with royal icing

  • Airbrushing: base colors, gradients, shading, and using stencils with an airbrush

You'll leave Day 2 with 2 dozen decorated royal icing cookies plus the confidence to do it again at home.

Day 3 — Buttercream: Rolled, Piped & Molded

Full day — buttercream techniques

Day 3 brings a completely different feel: softer, more tactile, and incredibly versatile. We'll work with both rolled buttercream (think fondant, but better) and classic piped buttercream to create a third and fourth set of decorated cookies with an entirely different aesthetic.

Morning: Rolled Buttercream

  • Rolled buttercream from scratch — recipe, ratios, and texture troubleshooting

  • Coloring and tinting for even, streak-free coverage

  • Rolling, cutting, and applying to cookies for a clean, smooth finish

  • Embossing, texturing, and using molds with rolled buttercream

  • Layering and dimension: combining rolled buttercream with other media

Afternoon: Piped Buttercream

  • Make American buttercream 

  • Piping bag setup, tip selection, and pressure control

  • Rosettes, ruffles, shells, stars, and rope borders

  • Piped florals on cookies: peonies, daisies, and succulents

  • Color loading and multi-tone piping for dimension

  • Finishing touches: edible gold, luster dust, and sprinkle work

Day 3 wraps with 2 full sets of buttercream decorated cookies and a complete recipe portfolio to take home.

Over five immersive days, Pastry Chef and Chocolatier Mary Storey will guide you through the artistry and precision of classic French pastry in a relaxed, inspiring environment.

You’ll develop a strong foundation in laminated doughs, mastering both croissant and puff pastry while exploring their distinct characteristics, similarities, and best applications. Through guided, hands-on practice, you’ll refine essential lamination techniques—from proper butter lock-in to a range of folds—along with shaping methods that define the structure, texture, and finish of each pastry.

Building on these skills, you’ll create a repertoire of classic French fillings entirely from scratch. Learn to craft silkycrème pâtissière, rich frangipane, airy mousseline, glossy ganache, and deeply flavored caramel—each designed to elevate your pastries to a professional standard.

Throughout the retreat, you’ll produce an elegant collection of both traditional and modern viennoiserie, with a focus on flavor, technique, and presentation. Escape the cold and spend three delicious days immersed in the world of sourdough at the Florida Academy of Baking’s state-of-the-art kitchen in sunny Satellite Beach, Florida. Planned for early 2027, this hands-on retreat is the perfect opportunity to trade winter weather for sunshine while learning the skills and science behind great sourdough baking.

This retreat is designed for bakers who want to go beyond simply following a sourdough recipe. Over three days, you’ll learn how sourdough works, how to care for and maintain your starter, how to read your dough, and how to turn one starter into a wide variety of delicious baked goods.

We’ll combine hands-on baking, demonstrations, baking science, and plenty of time in the kitchen. You’ll bake throughout the retreat and learn techniques you can continue using at home long after you leave Florida.

Day 1 – Understanding Your Sourdough

We’ll begin by taking the mystery out of sourdough and exploring the science behind fermentation. You’ll learn how to feed and maintain your starter and understand the difference between an active starter, fed starter, and discard.

You’ll make your first Everyday Sourdough Loaf, learning about dough development, fermentation, shaping, and baking. We’ll explore open baking, Dutch ovens, and steam, as well as the art of scoring—from simple expansion cuts to decorative designs.

You’ll also bake a pre-made loaf, prepare sourdough waffle batter for the following day, and create a levaing that will be ready for Day 2.

Day 2 – Building Skills & Adding Flavor

Day two takes your sourdough skills further as you bake your Everyday Loaf and begin working with inclusion breads. You’ll learn how to incorporate additional ingredients into dough while maintaining its structure and fermentation.

We’ll prepare a Sourdough Inclusion Loaf, make dough for focaccia pizza, and prepare sourdough pretzel dough. You’ll also bake a pre-made fougasse, create delicious sourdough cookies, and learn how baker’s percentages and ratios give you the freedom to scale and adapt recipes rather than simply following them.

We’ll finish the day by preparing another levain for Day 3.

Day 3 – Bake, Create & Take Sourdough Home

On the final day, you'll put your new skills to work as we bake the Sourdough Inclusion Loaf, pretzels, and focaccia pizza.

You’ll learn how to dehydrate your starter so you can preserve it for future use and explore how to revive it when needed. We’ll also make Sourdough Discard Cheese-Its, proving that your discard can be transformed into something delicious rather than going to waste.

Finally, we’ll explore one of the most useful skills for a sourdough baker: understanding sourdough starter versus commercial yeast and how to substitute starter or discard into recipes.

By the End of the Retreat

You’ll leave with a deeper understanding of sourdough, practical skills you can use at home, and the confidence to experiment rather than simply follow a recipe. You’ll understand how to maintain your starter, develop and shape dough, control fermentation, calculate baker’s percentages, adapt recipes, use discard, and bake using different methods.

Most importantly, you'll have spent three days baking, learning, sharing great food, and enjoying the sunshine of Florida's Space Coast.

In this immersive summer baking class, students will learn how to create peach fritters completely from scratch, beginning with a tender, yeasted fritter dough and building confidence in proper mixing, kneading, and proofing techniques. You will also learn how to incorporate fresh peaches into the dough without breaking structure or creating sogginess, along with folding and cutting methods that help shape fritters for even frying and beautiful texture.

Each student will fry 2–3 fritters in class, gaining hands-on experience with temperature control, timing, and achieving that perfect golden exterior while keeping the interior light and pillowy. Additional pre-fried fritters will be provided so students can focus on finishing techniques, shaping, and consistency.

To complete the experience, keri will teach you how to master the art of browning butter to its nutty, aromatic peak and transform it into a silky vanilla bean glaze that sets delicately over warm fritters. The result is a seasonal treat that balances crisp edges, juicy fruit, and a glossy finish that tastes like pure summer warmth.

Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.

Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. They will then be baked off on a baking stone for a crisp golden crust and an airy creamy interior. You’ll also be making your own batch of baguette dough to take home and bake off in the next couple of days. Don’t worry these baguettes freeze well.

In between tending to our baguettes you’ll be learning how easy it is to make Sourdough Pasta at home. You’ll learn how to make and roll out pasta dough and how to cut it into linguine for your lunch.Yes, you’ll be making your own lunch! Brian will teach you Angelas delicious Balsamic Tomato Bruschetta recipe. This is not only great served on slices of your freshly baked sourdough baguette but also as a sauce for your sourdough linguine.

Demystify yeast, flours, flavors and learn simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking you will learn to you to make a compound herb butter too!

In this hands-on decorating class, you’ll learn everything from scratch — literally. We’ll start by making our sugar cookie dough from the ground up, mixing, rolling, and cutting our mini summer shapes before popping them in the oven. While they bake and cool, you’ll learn how to make royal icing, understand how consistency affects your results, and mix a vibrant summer color palette to bring your cookies to life.


Then comes the fun part. You’ll decorate a full set of mini summer cookies — watermelon slices, ice cream cones, popsicles, pineapples, cacti, and tropical leaves — using flooding, piping, and detail work techniques that give each design its own personality. Mini Pies: Sweet & Savory with Rory

Join Rory for a fun, flavor-packed evening of making (and eating!) irresistible sweet and savory mini pies. You’ll kick things off by creating your sweet filling—choose apple or cherry and customize it with a variety of delicious add-ins like nuts, marzipan, or even booze-soaked dried fruit for an extra punch of flavor.

While your filling cools, you’ll learn how to make Rory’s wonderfully versatile pie dough. As the dough rests, it’s time to move on to your savory filling—your choice of classic Chicken Pot Pie or hearty Vegetable Pot Pie.

Then comes the magic: Rory will teach you the secrets to crafting perfectly formed double-crust mini pies with lids that don’t shrink. Curious about sourdough? New to sourdough? Struggling with sourdough?

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!  

You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day! 

Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around. 

While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

Finally, bring your tart to life with a vibrant assortment of fresh seasonal fruits. We’ll cover tips for arranging fruit beautifully, balancing colors and textures, and finishing with a light glaze for that professional shine.

In this class, you’ll learn:

  • How to make (with demo) and handle pâte sucrée dough (you will roll out and shape)

  • Techniques for blind baking a crisp tart shell

  • How to prepare smooth, stable crème pâtissière

  • Creative fruit arrangement and finishing techniques

By the end of class, you’ll have a gorgeous spring fruit tart to take home—and the skills to recreate it anytime for brunches, celebrations, or elegant desserts.

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!) For Chef Nights you will always have enough for two and generally some leftovers to bring home.

We provide aprons, recipes, all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.

Join Brian Knowles as he shares tips and tricks with sourdough inclusions and sourdough pizza in this two day class.

This is an intermediate sourdough class and students will find it helpful if they have attended Sourdough 101 with Angela McEllin or Sourdough Basics with Brian Knowles. 

In order to get your best inclusion loaves and experience baking them in a dutch oven (the most popular way to bake sourdough at home) we are asking you to Bring Your Own 5.5-6 quart Dutch Oven (BYODO). 

On Saturday, you will learn to add inclusions two ways-through stretch and folds and through lamination. For your first loaf you will have your choice of cranberry nut, cheddar jalapeño, rosemary asiago, or blueberry lemon, which will be added during stretch and folds. The second loaf will be a cinnamon swirl where we will add our inclusions through lamination. In between taking care of your loaves you make sourdough pizza dough to be used for our lunch on Sunday. This dough is easy to make and great to have pre-portioned in the refrigerator or freezer. This dough can be used the same day, but the best flavor will come from cold proofing the dough overnight.  

On Sunday, while our inclusion loaves bake, we will prepare Rorys famous pizza sauce. His sauce is so easy and so delicious that you will never buy store bought again. Brian will then teach you how to properly shape and top your pizza before sliding it on to a hot stone with a peel.
