Want to take your sourdough baking to a new level? Join Brian Knowles as he teaches you how to successfully use whole wheat flour in your sourdough baking.
You’ll begin the day by making the dough for a Whole Wheat Sourdough Boule. This loaf is 90% (ish) whole wheat, it could be 100% if you make it with a whole wheat sourdough starter. This is not the same as your regular white sourdough loaf, this loaf has a tight crumb and a rich nutty flavor.
Sourdough Discard Thin Wheat Crackers are similar to the ones you buy in the yellow box at the store. The dough for these crackers is easy to work with, no mixer needed. These are great to keep around for satisfying those salty cravings and they look impressive on a cheeseboard for when company stops by unexpectedly. The dough for these crackers can be made a few days ahead, so that you can always have fresh crackers at a moments notice.
Sourdough Discard Whole Wheat Dinner Rolls are irresistibly soft, tender, and can be made entirely from 100 percent whole wheat flour (if whole wheat sourdough starter discard is used). Adding yeast speeds up the baking process and are so quick and delicious you will forget other rolls exist.
Sourdough Whole Wheat Breakfast Cookies are a great way to start your day with a cup of coffee or tea. They are full of good for you ingredients! Olive oil, bananas, walnuts and sourdough starter (or discard).These cookies are very flexible. They can be made with discard or for a fluffier cookie, use active sourdough starter. The cookie dough can be made the day before and fermented overnight in the fridge.

Sourdough Discard Buttermilk Biscuits have more tang and complex flavors than a traditional flaky biscuit. These biscuits are great for breakfast or even dessert just by adding bit of sugar. Brian will share how to add discard to many recipes as this is his own buttermilk biscuit recipe he adapted to use discard.
These Sourdough Discard Bagels are chewy, golden brown and easy to make. The sky is the limit for toppings. Everything bagel seasoning, poppy or sesame seeds, salt, asiago cheese, maybe even cinnamon crunch. Your friends and family will be amazed that you made these bagels from scratch. Slice these bagels before freezing and you have a quick breakfast, just pop in the toaster and you are out the door.
Sourdough Discard English Muffins are so easy they don’t even require a stand mixer-just one bowl! These no knead English muffins are tender and soft with a golden brown exterior. During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day. Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

Curious about sourdough? New to sourdough? Struggling with sourdough?
During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day. Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

This immersive, hands-on class will guide you through the beautiful, patient process of sourdough baking using traditional Italian methods, with a special focus on pane made from Lievito Madre—a natural sourdough starter that’s been lovingly nurtured for years.
We’ll begin by baking a fully fermented loaf, already prepared the night before, so you can get the full sensory experience of scoring, baking, and tasting fresh sourdough right away.
Then, together, we’ll create a new dough from scratch using Lievito Madre. You’ll learn how to:

Spend the day with Brian Knowles as he takes you on a journey discovering sweeet and savory adventures for you sourdough discard.
We’ll start the day by making a discard version of that ever so popular Lemon Blueberry Loaf Cake found at a popular membership warehouse store. This loaf cake is so moist and tender that very bite just melts in your mouth. Each slice is loaded with fresh blueberries and the batter is made with the zest and juice of fresh lemons (no artificial flavors here)! Topped with a sweet layer of crumble and a drizzle of lemon icing, this blueberry loaf is just as tasty (if not more) as it looks.
Next up Brian will teach how to make the Quick Sourdough Discard Rolls so many of you have enjoyed with soup at some recent all day classes. These quick easy and tasty rolls are perfect for holidays and can be switched up by topping with flaky salt, sesame or poppy seeds. These rolls only need to rise once so are great for a last minute roll for dinner.
While our rolls are rising we will then make our Sourdough Discard Goldfish Cracker dough. These crackers come together quickly in a food processor and then chilled for a bit. They are so good that even Brians dogs gobble them up. These crackers never last long, so you’ll be making these quite often. Once the dough is made you can store it in your fridge for up to a week and easily bake off a batch when the craving strikes. We’ll bake these off when we have time and hopefully there will be some leftover for you to take home.
We’ll end the day making Sourdough Discard Cosmic Brownies. These rich and fudgy brownies topped with a chocolate icing and sprinkles of your choice will bring you right back to your childhood. What makes these brownies unique is that the icing is made with hot water and spread on the just out of the oven brownies and topped with your choice of sprinkles. We like them best chilled but wouldn’t turn down one down if it wasn’t.

First he will teach you how to make what may be the easiest bread ever-English Muffin Bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the cornmeal bottom giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.
Just add all the ingredients to a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!

Finally, we’ll make our Pane Siciliano (Italian ‘Supermarket’ bread- you know the fat, sesame seed studded loaves that no self-respecting supermarket should be without- this is even better, and without any preservatives! During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.
We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.
While that loaf does its second rise, you’ll learn how to add inclusions and create beautiful decorative shaping and scoring stunning designs.

Bread : Ciabatta Rolls
Lunch: Minestrone Soup with Semolina Pastina

We will start off the day making our Panna Cotta and Fresh Berry Coulis (almond cookie crunch will be provided but recipe will be given) then students will make Ciabatta dough for rolls. Once the bread dough is made we’ll will begin work on our lunch- making Semolina Pasta Dough (to be used twice during class once for lunch and again later for hand cut noodles) while the dough is resting they will begin chopping veggies and preparing the Minestrone Soup. While the soup is simmering on the stove they will shape the pasta for minestrone. After lunch is eaten they will shape ciabatta rolls and second proof. Then students will begin working on Baked Ricotta Gnuderi making the dough and sauce and assembling to be baked later at home or frozen for another time. Finally ciabatta will be baked and you’ll finish by rolling and hand cutting noodles and learning how to assemble the classic Cacio Pepe Sauce.

She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Angela will teach you to make a compound herb butter too!
You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home.
