The class will be Mexican Fiesta - How hot do you like it, in this class students will make hot sauce, fresh salsa, tortillas from scratch with a chicken and pepper filling. As students are making their own hot sauce then will decide if it will be Mild, Medium or Hot.

Learn Rory’s secret behind making his amazing Potato Cakes and how to cook them to perfection. You will cook some Traditional Irish Bangers (giant sausages), Rashers (Irish Bacon), Black and White Pudding* and Grilled Tomatoes. Old World Italian Handmade Pasta - Flour, Water, Love: Hand-Rolled Noodles
In this hands-on pasta class, students slow everything down and return to the most traditional way of making pasta. Just flour, water, time, and care. No machines. No shortcuts. Just hands, feel, and connection. Chef Keri will guide students through mixing and kneading a simple pasta dough from scratch, showing how intuition and touch are just as important as technique. From there, students learn to hand-form three classic long pasta shapes, each tied to a specific Italian region and story:
• Pici – thick, rustic Tuscan noodles with a comforting, chewy bite
• Strozzapreti – twisted strands woven with folklore and history
• Sagne ’Ncannulate – beautifully spiraled pasta from southern Italy, made to lovingly hold sauce
While students are shaping their pasta, Chef Keri offers stories and context for each shape, connecting the pasta in your hands to the regions, people, and kitchens it came from. In this special meal prep class, you’ll create a complete Easter menu filled with fresh Spring flavors that will impress any gathering — and best of all, you’ll finish the cooking fresh in your own home on Easter Sunday.
During class, you will prepare a beautifully coordinated meal designed to serve six (with hearty appetites). You’ll take everything home with simple baking and reheating instructions, allowing you to enjoy a freshly cooked Easter meal without the stress.

Fresh Pasta, Bread & Sauce – A Hands-On Cooking Class
Join us for an evening of pasta, bread, and sauce in this hands-on pasta-making class at the Florida Academy of Baking. This class is all about getting back to the basics and creating delicious, simple food from scratch.
You’ll learn how to make tender, fresh egg pasta dough by hand. While your dough rests, you’ll prepare a fresh and flavorful butter tomato sauce made with sweet cherry tomatoes, fresh garlic, and dried herbs, finished with fragrant fresh basil.
As an added bonus, we will have focaccia dough prepared for you to season however you like, creating the perfect accompaniment to your homemade meal.
At the end of the class, we’ll gather together to enjoy our handmade pasta with butter tomato sauce and freshly baked focaccia. There will also be plenty to take home and share.

Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce. To begin you will make the dough for your focaccia and put it aside too proof. In this immersive, hands-on knife skills workshop, you’ll learn how precise cuts affect cooking time, texture, and flavor, then put those skills to work in a fast, flavorful stir fry.
We’ll start with knife safety, grip, and technique before moving through real-world prep: breaking down a bone-in chicken with a boning knife, mastering classic vegetable cuts, and tackling pineapple with three different knives. Join Brian Knowles on a Sunday morning and learn how to make your own Focaccia Pizza at home PLUS his Cookie Dough Focaccia for dessert.
We'll have a batch of dough ready for you and Brian will teach you how to make the dough (you'll go home with your own batch of dough so you can make more focaccia over the coming days.) While your dough is resting, Brian will teach you his signature sauce (the one he's been perfecting for the last couple of years) and the secret technique he uses when baking the pizzas to get that rich depth of flavor. Once your sauce is ready, you'll have an assortment of toppings to choose from to customize your Focaccia Pizza.
