Cajun Classics: Shrimp Étouffée Night with Ann Maloney
Join Louisiana native Ann Maloney—former recipes editor at The Washington Post—for a fragrant, flavor-packed evening recreating the iconic Cajun classic: Shrimp Étouffée!

Dig into a delicious homemade Cajun meal in this immersive, hands-on class that walks you through the step-by-step process of cooking no-fuss shrimp étouffée at home. This beloved dish, now a staple in New Orleans restaurants and kitchens, began in rural Louisiana with resourceful Cajun home cooks—and you’ll learn exactly how to honor that tradition.

Menu:
Shrimp Étouffée served over fluffy white rice
Crispy Cornbread
Lemon Green Beans

Étouffée—French for “smothered”—is a rich Cajun and Creole dish traditionally made with shellfish simmered in a luscious, aromatic sauce. In class, you’ll uncover how the essential “holy trinity” of Cajun cooking (onions, celery, and bell pepper) blends with spices and fresh herbs to build deep, unforgettable flavor. You’ll also master the art of making a butter roux, a foundational skill that will boost your confidence in tackling many other Cajun recipes.

To complete your feast, you’ll make a simple crispy cornbread and bright, lemony green beans. And as with all Chef Night/Date Night classes, dessert will be a FABulous Surprise!

This is an ideal Dynamic Duo class—perfect for friends, family, or a sweet date night. Feel free to BYOB; we suggest a sauvignon blanc, chardonnay, or Chablis to complement your Cajun feast!

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!) On Chef/Date Nights you will always have enough for two and generally extra to bring home too.

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.

Focaccia Two Ways!

Sunday, February 22, 2026 | 6:00PM - 9:00PM

$179.00 Per Station (Suitable for Dynamic Duos- see below for more details)

Join Brian Knowles on a Sunday morning and learn how to make your own Focaccia Pizza at home PLUS his Cookie Dough Focaccia for dessert.

We'll have a batch of dough ready for you and Brian will teach you how to make the dough (you'll go home with your own batch of dough so you can make more focaccia over the coming days.) While your dough is resting, Brian will teach you his signature sauce (the one he's been perfecting for the last couple of years) and the secret technique he uses when baking the pizzas to get that rich depth of flavor. Once your sauce is ready, you'll have an assortment of toppings to choose from to customize your Focaccia Pizza.

While your pizza is baking Brian will teach you how to take the classic FAB focaccia to the next level by adding Rory’s oatmeal chocolate chip cookie dough inside and out. Cookie dough is not only dotted on top but also folded into the dough for lots of pockets of sweet cookie goodness. The Cookie Dough Focaccia is great on its own or taken the next level as the base of a hot fudge sundae.

This class is suitable for the following Dynamic Duo types:

In this mouthwatering class, you’ll create fluffy, golden brioche buns from scratch—soft, buttery, and irresistible. Then, you’ll fill them with tender pulled chicken, slow-cooked and seasoned with savory herbs and spices. The delicate sweetness of the brioche pairs perfectly with the rich, juicy chicken, giving you the perfect balance of pillowy bread and hearty BBQ flavor.

Every bite is a melt-in-your-mouth combination of soft brioche and deeply seasoned meat—an ideal dish for casual dinners, game days, potlucks, or any time you want to bring something unforgettable to the table.

Come ready to mix, knead, fill, bake, and feast!

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!)

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!

A tender ribeye crusted with fresh herbs, served with a velvety roasted garlic and fennel sauce. Paired with nutty brown butter rice pilaf, this entrée celebrates fall’s richness with layered flavor and satisfying texture.

What You’ll Learn

• How to balance sweet and savory in seasonal appetizers

• Techniques for crusting and pan-searing steak to perfection

• Building depth in sauces using roasted aromatics

• Creating elegant sides with simple pantry ingredients

Whether you’re cooking for guests or teaching students to embrace seasonal creativity, this class brings the harvest to life — one plate at a time.

This class is suitable for the following Dynamic Duo* types:

YES: Couples

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!

Ultimate Pecan Pie Bars

Thursday, November 20, 2025 | 6:00PM - 8:30PM

$179.00 per station (Suitable for Dynamic Duos- please see below for more details)

If you’re a fan of pecan pie at Thanksgiving, you’ll love these Ultimate Pecan Pie Bars. Not only are pecan pie bars faster and simpler to make than classic pecan pie, but they also serve a crowd and are perfect for baking in advance of the big day.

These Ultimate Pecan Pie Bars are a cross between a classic pecan pie and a cookie. A brown sugar shortbread crust is topped with pecans and then a honey caramel sauce is poured over the whole thing. As if that wasn’t enough, the whole thing is then topped off with a dark chocolate ganache.

Loaded with pecans in a homemade caramel sauce filling and baked over a shortbread crust, these pecan squares are a crowd-pleasing, easy dessert. Add these to your holiday cookie platter!

You can cut these gooey, chewy, and crunchy bars as big or as small as you want, which makes them great for holiday parties, feeding a crowd or even a cookie exchange.
