In addition to learning a little of the history of these humble buns, you'll make your own dough from scratch (and choose your own fruit mix- go classic with raisins or currants or go a little rouge and throw in some of our other dried fruit...there is a whole pantry worth!) While your dough is rising you'll also create your own Lemon Curd to spread over your freshly baked buns or just eat with a spoon straight from the jar!

You’ll make two trays of Hot Cross Buns and a big batch of Lemon Curd, so this is a perfect class for Dynamic Duos!

Join local pastry chef Keri Cossette to celebrate Pi Day! In this all day class you will learn three different types of pies crusts AND three different types of pie fillings: Traditional Apple Pie, Tropical Fruit Cream Pie and Caribbean Spiced Beef Hand Pies.

Keri will teach you how to make her easy all purpose flaky pie dough, coconut shortbread cookie dough, & a curry/tumeric infused pie dough for the hand pies. While the doughs are chilling, Keri will teach you how to make all your fillings for your 3 pies. You'll start by making your apple pie filling so it has time to macerate and become delicious. Then Keri will show you how to make Pabana puree (a tasty blend of passion fruit, mango & banana) to then be used two ways in your tropical fruit cream pie as a custard & sauce! After your custard is made and cooled in the fridge you'll make the last filling a delicious savory spiced beef filling. You will have the opportunity to make it as spicy as you would like using scotch bonnet peppers. Keri will then teach you all her tricks and tips for rolling out the perfect pie crust while you assemble your apple pie to be baked. While the apple pie is baking in the oven you'll start working on finishing up the cream pie by learning how to make the perfect cookie crust (using the yummy coconut shortbread cookie dough you made earlier) Keri will show you how to fill and finish this tropical getaway in pie form. Last but not least, on our Epic Pi Day celebration Keri will show you how to roll/cut and fill the Caribbean Spiced Beef Hand Pies, You'll have the option to bake off some in class and freeze some to take home as they make a great easy meal during the week.

Join Guest Chef Alex Peña, a California native, a former Marine, a passionate Master Baker, trained culinary chef, and a professional bread scientist for his third masterclass - Pan de Muerto. Chef Alex is our FABulous Guest Chef all the way from California for 4 full days teaching a different masterclass each day, so don’t delay…these classes will sell out quickly!

Pan de Muerto, is a fragrant sweet bread that has deep roots to ancient Aztec rituals and Spanish symbolism. Because of its fragrant qualities, the bread is said to serve as one of many ways to call on passed friends and loved ones; it is the centerpiece on many altars during the Day of the Dead. The multi-day holiday, known in Latin America as El Di´a de los Muertos is celebrated on November 1st and 2nd.

Pan de Muerto, meaning bread of the dead in Spanish, is made up using a sweet dough. The buttery dough contains orange peel and additional Agua de Azahar (orange blossom water). The breads are typically made up to represent a tomb or in some cases a corpse; our focus will be the tombs. Tumbas represent the bones and skull of the deceased loved one.
Students will learn about the process and techniques behind Tumbas (tombs), made in different sizes and using different decorating techniques. During the fermentation stage of the yeast-raised dough, students will learn how to make Polvorones de Naranja (orange flavored butter cookies). An easy cookie recipe with deep Moorish roots and flavored with orange peel.

The students will take home two iconic recipes, and a few boxes of sweet breads and pastries that can be enjoyed with loved ones. A great way to celebrate life all year long.

Ready to up your charcuterie game? In this class, Chef Cecilia will offer step-by-step techniques and walk you through the process of designing TWO visually pleasing boards- one sweet and one savory while sharing her best tips and tricks for carving and shaping fruit, vegetables, cheese and a selection of meats.

Step 1: Meats

Meats are usually one of the largest components on the board, so start there. Play up the variety by offering at least two to three different types of meats. Chef Cecilia will show you how to create roses and other flower shapes to compliment your Valentine’s theme.

Step 2: Cheeses

Next, start filling in the board with cheeses. Pick out two to three different kinds of cheese with varying flavors and textures.

Step 3: Accoutrements

Now it's time to add the extras that help you build the perfect bite: Sweet & Salty, Chocolate, Dips, Jellies & Spreads

Step 4: Crispy Canvas

Finally, fill in any remaining blanks with crackers, breads, or vegetables. This is the foundation upon which you custom-build each delicious mouthful.

Step 5: Getting Fancy

Common decorative flowers that are safe to eat and look lovely. Plus, as it’s almost Valentine’s Day, you’ll add some chocolate dipped strawberries and handmade chocolate truffles!

Come along for a nostalgic stroll along the Seine with Mary Storey and learn to recreate the classic French dessert the Gateau Saint Honoré. This spectacular dessert consists of a circle of puff pastry at its base with a ring of pâte à choux piped on the outer edge and topped with smaller choux in the form of baked profiteroles that are dipped in caramelized sugar and attached side by side on top of the circle of the pâte à choux. You will fill your base with the traditional crème chiboust and finish with whipped cream using a special St. Honoré piping tip…don’t worry, Mary will teach you how to pipe the lovely design.

As it’s New Year’s Eve AND to celebrate the release of the new Wonka® movie, we’re throwing an Afternoon Tea party with a Twist to round out the year. Join Rory and Angela as we recreate some of the most delicious treats inspired by the movie (and of course a couple of recipes from the book too!)

We’ll start by creating a batch of Mini Cream Buns with Raspberry Jam and Chantilly Cream and then move on to adorable Edible Chocolate Cups filled with a divine Chocolate Mousse - which you get to customize…(the adults can even make a boozy version if they wish.) In addition to a selection of delicious teas to choose from, you’ll also get to sample Angela’s Fizzy Lifting Drink- made with Butterscotch Ripple* -it’s still in the experimental stage but no one has hit their head on the ceiling yet. Your 3 tier tea tray will have Fruitcake-With-No-Nuts and of course a selection of Finger Sandwiches, Rory’s Sausage Rolls and freshly baked Irish Snozzberry Scones.

*Or something a little stronger for those that need a little extra lift.

Join one of our newest instructors, Mary Cotoia for a fun and festive evening learning to recreate Ciambelle al Vino and Vin Brulé!

This ancient Ciambelle recipe originated outside of Rome in the region of Lazio. Wine makers in the region used the wine being processed or whatever was left over in the vats for this rustic peasant recipe. These biscuits are a staple in Italian bakeries and in households in Rome and the Lazio region and are found in Italian bakeries around the world. They make a great dunking cookie for coffee or tea. However, if you are ever in Rome, you must do as the Romans do and respect their traditions. To enjoy them properly, you must soak them in wine, to the point of dipping your fingers!

So, given the season you’ll also make a batch of Vin Brulé (Italian Mulled Wine) to take home and enjoy with your Ciambelle whenever you like. During class you’ll get to nibble Mary’s Ciambelle and sip her Vin Brulé so you can bring home all of your delicious goodies! Best of all, these biscuits last ages so they are perfect for gift giving too!

This is a traditional Italian recipe for wine cookies: tasty, original (with a few tweeks) and affordable for everyone. With these cookies you can pamper and surprise your guests. So let's see how to make these simple "ciambelle al vino" that taste of Italian tradition and antiquity. Cambelle means round, or ring, which is the traditional shape of these biscuits, but Mary will teach you to make twists and knots as well.

Mary prefers a richer taste and opts for a traditional sweet red wine to which she adds a secret ingredient, but you’ll have the option to use either a red or white wine to create your biscuits.

For the Stacked Tree you will learn to make, color and pipe sets of concentric stars which will later be filled, stacked and decorated with royal icing and whatever you’d like to raid from Angela’s sprinkle collection.

For the wreaths you’ll learn to pipe perfect circles to form your wreaths and you’ll take home a selection of adorable Italian Macarons in a selection of flavors to share with your family and friends. TWO PART Class Boozy* Irish Holiday Fruit Cake

Come along to this TWO PART class as Angela McEllin teaches you how to make the Traditional Boozy Irish Holiday Fruit Cake. You can choose to make 1 large or 3 smaller fruit cakes (perfect if you’re coming as a duo- you can rock paper scissors for the extra cake!)

If you have never had Irish Fruit Cake before, you are in for a real treat. We generally start soaking the dried fruit in advance (anything from a couple of weeks to several months - or even years if you’re really dedicated!) Then we bake the cakes and spend the next few weeks ‘feeding’ (read boozing) the cakes with whatever spirit you prefer- generally whiskey or brandy or Angela’s favorite- Jamaican Rum. Once the cake is nice and drunk (sozzled) it’s ready to be covered and decorated. Delicious on it’s own or served with brandy butter, custard or chantilly cream, you can’t go wrong eating fruit cake; we even know someone that loves to lightly toast it, spread a little orange marmalade and a slice of sharp Irish Cheddar on top and then pop it under the broiler until the cheese is nice and bubbly. You’ll have more than enough cake to experiment with your favorite way of serving and still be able to share it with your friends and family! Once covered, boozy fruit cake can literally last years- look up the 106 year old piece found in Antartica if you don’t believe me!

During the first class you will make and bake your cake and while it’s baking you’ll make homemade marzipan (to cover your cake after it’s been sozzled for a few weeks) and create some decorations to adorn your completed cake. Traditionally Irish Fruit Cakes are covered in a thin layer of marzipan and then frosted using royal icing, but you can choose to make homemade marshmallow fondant instead.

Once your cakes are baked you’ll go home with them and enough booze to sozzle them for the next few weeks- all part of the fun! Then you’ll come back for part two where we’ll cover our cakes with marzipan and either royal icing or homemade fondant and then decorate our cakes ready for the holidays. Plus, you’ll get to nibble your way through Angela’s cake while you work. If you’ve never made Boozy Fruit Cake before, this is the class for you!

*Non Boozy option also available- we soak the fruit (and feed the baked cake) in Irish Tea with a selection of holiday spices. For the Boozy option, you can choose fruit that’s been steeped in either Irish Whiskey, Brandy or Jamaican Rum.

Featuring layers of luscious Gingerbread, Eggnog and Chocolate Peppermint Bavarois atop a homemade Ladyfinger Chocolate Sponge and adorned with rich, shiny Chocolate Glaze. Mary will also teach you to pipe White Chocolate Decorative Scrolls to adorn your Festive Bavarois. If you’ve never had Bavarois before, it is similar in texture to Mousse, but is made with rich Créme Anglaise.

During class you’ll sample Mary’s Bavarois and bring your home to delight your friends and family. It freezes beautifully, so you can save it until your holiday meal (but if you don’t think you’ll be able to resist until then, don’t worry- you’ll go home with all the recipes so recreating it will be a snap!)

Join Mary Storey for a wonderful evening making Traditional* Panettone! During the class you will learn to fill, shape and bake a batch of pre-risen dough (so you’re not waiting around for hours.) While your panettone is baking you’ll learn to make a batch of dough to bring home so you can make more delicious Panettone to share with your friends and family! Plus, Mary will have a surprise Panettone dessert made for you to sample (don’t worry, she’ll share the recipe too) in addition to serving her freshly baked loaf.

Panettone is probably the most iconic Italian Christmas cake. It is instantly recognizable for its beautifully tall dome shape. Panettone is a sweet, soft, and buttery bread similar to brioche. The dough is traditionally loaded with lemon and/or orange zest, and a mix of dried and candied fruit and baked in a paper mold to give it the characteristic shape.

*If dried fruit isn’t your thing, we’ll also have chocolate chips and a variety of nuts including pistachios and hazelnuts to choose from.

Legend has it that Panettone’s origin goes back to the late 1400s… during a luxurious Christmas banquet given by the Duke of Milan, the desert they were meant to server was burnt. A kitchen apprentice called Toni, came up with a rich brioche bread filled with raisins and candied fruit. The Duke loved it, and so the tradition of 'Pane di Toni' was born and later changed to "panettone" and become a bread of luxury.

Join Keri in learning how to up your pumpkin pie game this year. First, you’ll learn how to make a flaky Gingerbread Pie Crust. While the dough is chilling, you’ll be provided some dough to work with in class. You’ll learn how to roll out your crust to fit your pie tin and make some decorative fall leaves. While your pie shell chills and your leaves bake you’ll learn how to make your Bourbon Pumpkin Custard. After we briefly blind bake your crusts, you’ll fill them with the custard and send them for the final bake. While your delicious pies bake Keri will show you how to finish your pie by teaching you how to hand paint on your pie crust leaves and brûlée the top. She will also demo how to make a yummy Maple Chantilly Cream to serve with the pie (just so you can sample her ready made pie of course). 

You’ll have the option of making one large pie or two smaller pies (perfect if you’re coming as a Dynamic Duo.)

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

We always have a selection of teas, coffee, water and something tasty to nibble on when you visit. However, you are welcome to bring your own drinks (if you are BYOBing, please drink responsibly) or snacks if you desire. Lunch is provided for full day classes, please let us know of any allergies in the notes section when you are booking your classes.

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
