Take the hassle out of Easter lunch by preparing your holiday feast at the Florida Academy of Baking. In this special meal prep class, you’ll create a complete Easter menu filled with fresh Spring flavors that will impress any gathering — and best of all, you’ll finish the cooking fresh in your own home on Easter Sunday.

During class, you will prepare a beautifully coordinated meal designed to serve six (with hearty appetites). You’ll take everything home with simple baking and reheating instructions, allowing you to enjoy a freshly cooked Easter meal without the stress.

On the Menu:

  • Schnecken (Out-of-this-world German cinnamon rolls) for the late risers

  • Salmon fillets on a bed of spring vegetables

  • Lemon and herb roasted potatoes

  • Roasted asparagus

Join Brian Knowles in welcoming Spring with two of his favorite flavors-lemon and blueberry, both found in this Sunny Lemon Blueberry Cake

You’ll start the day by making your lemon scented mascarpone cake. The mascarpone helps to keep the cake soft and moist and allows the wonderful lemon and blueberry flavors to shine through. 

The blueberries will be found between the layers in an easy to make blueberry compote that will wow and surprise everyone who eats this cake. Blueberry and lemon are a match made in heaven. 

Bringing this all together with even more lemon flavor is a swiss meringue buttercream. This silky-smooth icing is made by heating egg whites and sugar over a double boiler, whipping to stiff peaks, then adding butter and flavoring with lemon extract. You’ll be amazed at how easy this buttercream is to make and work with. 

You’ll finish the day learning how to create an ombre effect in shades of yellow and white. Brian will teach you how to use your offset spatula to create a pattern on the sides of your cake so you don’t have to worry about getting them smooth.

The final decorating touches will include thinly sliced fresh lemons dehydrated in the oven earlier in the day. These will bring height and the wow factor to your cake.

If you have spent any time at the big theme parks nearby, you have probably eaten a churro, or at the least smelled them as you walked by the cart. The cinnamon sugar aroma draws you in and after one bite you are hooked. 

Churros are known for their crispy exterior, soft interior, and ridged shape and cinnamon sugar exterior. They are popular in Mexico and Mexican restaurants here. Brian Knowles will teach you how to make these addictive snacks at home using your oven.

Oven baked Churros are made with a dough similar to a choux pastry batter, but a little stiffer. They are then piped onto a silicon mat or parchment paper and baked until golden brown and crispy. Once taken out of the oven they are immediately coated in cinnamon sugar and eaten while still warm and crunchy. 

They can be dipped or drizzled with many delicious things such as dulce de leche, nutella or salted caramel. But Brian likes to dunk his in champurrado.

While your churros bake, Brian will teach you how to make his version of Champurrado. This classic Mexican chocolate drink is warm, thick, and velvety, and made with masa harina (corn flour). Champurrado is the perfect thing for dunking your hot out of the oven churros in.

Join Brian Knowles as he teaches how to transform the classic campfire treat, S’mores into a multi-layered cake, combining chocolate cake, graham crackers, and marshmallow frosting. 

You will start off the day by baking up three layers of our FABulous Black Magic Cake (the chocolate element). Followed by a batch of Graham Crackers, to be used in two ways. Half will be used as crumbs between the layers and on the sides of the cake for texture. The other half will be used as shards for the top of the cake (and snacking).

You will then make will be a big batch of Marshmallow Cream. Some of it will be reserved for torching (the smoky element) and used between the cake layers, providing the iconic marshmallow flavor. The rest will be turned into an Italian Meringue Buttercream for the sides and top of our cake.

Marshmallows in a variety of sizes, mini milk chocolate bars and maybe even some chocolate sprinkles will take your s’mores cake decorating over the top. 

Of course you can’t have a s’mores without that signature charred marshmallow  look and flavor, so everyone we’ll use a kitchen torch to toast the marshmallows that decorate the top of their cake. 

Who said s’mores can only be eaten around a campfire? Now they can be eaten whenever the urge strikes, campfire or not!

Join us for a fun and practical six-week after-school cooking program designed specifically for high school students! Meeting twice a week, this 12-class series will teach young cooks how to become confident and self-sufficient in the kitchen using everyday ingredients found right at home.

Students will learn essential cooking skills as they prepare breakfasts, lunches, and dinners, gaining experience with real recipes they can use for themselves or their families. Each class combines hands-on practice with fundamental kitchen knowledge that will serve them for life.

Topics Covered Include:

  • Food safety and kitchen hygiene

  • Making the most of pantry staples

  • How to build and customize sauces

  • Stews, soups, and comfort meals

  • Breakfast and brunch favorites

  • Family-friendly dinners

A Traditional Taste of Italy: Panettone with Mary Storey
Join Mary Storey for a cozy and festive evening as you learn the art of making Traditional Panettone — the iconic Italian Christmas bread. In this hands-on class, you’ll shape, fill, and bake your own panettone using a pre-risen dough (no waiting around!). While your loaf bakes, you’ll mix up a fresh batch of dough to take home and bake later — perfect for sharing with friends and family.

Panettone is a soft, buttery, brioche-like bread traditionally enriched with citrus zest and a mix of dried and candied fruits, then baked into its signature tall dome in a paper mold. But if dried fruit isn’t your thing, don’t worry — we’ll also have chocolate chips and a variety of nuts like pistachios and hazelnuts available for your custom creation.

To top off the experience, Mary will treat you to a slice of her freshly baked panettone and a surprise panettone-based dessert — with the recipe included, of course!

Spend your morning learning how to make a Cranberry, Pecan and Frangipane Couronne, that Brians Nana used to make when he was a kid. 

A couronne is a festive, ring-shaped French brioche-style orange scented pastry filled with a creamy almond-based filling, dried cranberries, and chopped pecans. The name "couronne" translates to "crown" in French, and the final braided shape of the bread resembles a wreath or crown.

The couronne dough is made from an enriched dough, meaning it includes milk, eggs, and butter, which results in a tender and fluffy texture. The dough is rolled, filled, sliced lengthwise, braided, and then shaped into a crown.

The couronne is filled with a rich, creamy almond filling made by combining almond flour, butter, sugar, and eggs. When baked, it sets into a soft, nutty custard-like layer. The frangipane is then topped with orange soaked dried cranberries and chopped pecans.

After the couronne comes out of the oven, it is brushed with maple syrup and then sprinkled with pearl sugar. 

While your couronne is baking you will learn how to make Brandy Butter which is served on your warm couronne for the perfect Christmas morning breakfast.

Nothing says the holidays like gingerbread. But this Gingerbread Latte Layer Cake is not your ordinary gingerbread. This is gingerbread taken up a notch. 

This is the cake form of a gingerbread latte found at coffee shops during the holidays. Imagine a coffee buttercream between three layers of a gingerbread cake. Then more coffee buttercream on the outside as well as a white chocolate ganache drip to imitate the foam found on a latte. For a bit of whimsy the outside of the cake will be decorated with your own freshly baked gingerbread cookies in the shape of your choosing. Don’t worry, there will even be enough gingerbread cookies to eat on the way home.

Don’t worry about the coffee buttercream, the flavor is subtle and just enhances the gingerbread flavor. Avoiding caffeine? A decaf option will be available or you could also choose to another flavor for your buttercream.

Step into the world of artisan chocolate with acclaimed chocolatier Mary Storey in this immersive, hands-on workshop. Throughout the day, you’ll master the art of tempering chocolate and crafting elegant, glossy domes that conceal exquisite seasonal fillings.

You’ll create two show-stopping confections:

Pumpkin Caramel Dome – A silky blend of spiced pumpkin purée and rich golden caramel, this luxurious filling is wrapped in a bittersweet chocolate shell, offering warm autumnal notes in every bite.

If you’re a fan of pecan pie at Thanksgiving, you’ll love these Ultimate Pecan Pie Bars. Not only are pecan pie bars faster and simpler to make than classic pecan pie, but they also serve a crowd and are perfect for baking in advance of the big day. 

These Ultimate Pecan Pie Bars are a cross between a classic pecan pie and a cookie. A brown sugar shortbread crust is topped with pecans and then a honey caramel sauce is poured over the whole thing. As if that wasn’t enough, the whole thing is then topped off with a dark chocolate ganache.

Loaded with pecans in a homemade caramel sauce filling and baked over a shortbread crust, these pecan squares are a crowd-pleasing, easy dessert. Add these to your holiday cookie platter!
