Your cakes will be baked and ready for you when you arrive, allowing you to focus on the decorating techniques that make all the difference. You'll begin by leveling and torting your cake layers before preparing a delicious filling and learning how to properly stack and build a stable, professional-looking cake.

Next, you'll make our incredibly smooth and delicious 4-ingredient American buttercream—a favorite recipe that's easy to recreate at home and sure to impress family and friends. From there, you'll learn how to crumb coat and ice your cake before mastering the techniques for achieving perfectly smooth sides and those crisp, professional sharp edges every cake decorator strives for.

Throughout the day, you'll practice a variety of essential piping techniques using professional decorating tips, create quick and easy buttercream textures, and discover the secrets to mixing rich, vibrant buttercream colors—including how to achieve deep, bold shades without the bitter aftertaste often associated with heavily colored icing.

This class is designed to give you plenty of hands-on practice, with every station decorating their own cake from start to finish under the guidance of Chef Shayla. You'll receive individual coaching throughout the day to help you build confidence and refine your techniques.

During this full-day class, you will:

Step into September baking with a table full of flaky crusts, bubbling fillings, and the kind of pies that feel right at home beside a simmering pot of soup or a warm mug of cider, even if Florida is still serving us ninety degrees and humidity thick enough to butter toast.

In this hands-on class, students will make one rich all-butter pie dough from scratch and learn how that same dough can be shaped and transformed into three unique pie styles: rustic blackberry basil galettes, sealed apple cheddar hand pies, and savory chicken and leek mini pies with beautifully structured crusts. Along the way we’ll cover dough handling, crimping styles, filling consistency, and how to build pies that bake up deeply golden, crisp, and balanced.

Designed as a true “pie flight,” this class gives students the chance to experience sweet, savory, rustic, and structured pie making all in one evening while building confidence with foundational pastry techniques. Students leave with three seasonal pie recipes, a better understanding of scratch-made dough, and a collection of cozy autumn baking skills ready for gatherings, holiday tables, and those first few Florida evenings that finally dip below “surface of the sun.”

You'll begin by preparing the classic appetizer Devils on Horseback, a timeless combination of sweet and savory flavors that sets the stage for the meal ahead. For the main course, you'll master the art of perfectly searing sea scallops to achieve a beautiful golden crust while keeping the centers tender and delicate. Alongside them, you'll create a silky, buttery potato purée, roast fresh asparagus wrapped in crispy prosciutto, and finish the dish with a classic Brown Butter Caper Sauce (Grenobloise) that ties every element together with rich, nutty flavor and bright citrus notes.

In this hands-on baking class, you'll create the legendary Schwarzwälder Kirschtorte, better known as Black Forest Gateaux—a timeless dessert that combines rich chocolate, luscious cherries, light whipped cream, and elegant chocolate decorations into one unforgettable cake.

You'll bake a decadent Black Magic chocolate sponge, brush each layer with traditional Kirschwasser (Cherry Schnapps) or a flavorful cherry juice reduction for a non-alcoholic version, then fill your cake with a rich dark Morello cherry compote and delicate Kirsch-infused Chantilly cream. As you assemble your masterpiece, you'll learn the professional techniques for leveling and torting a cake, creating perfectly balanced layers, and achieving a beautiful finish.

Curious about sourdough? New to sourdough? Struggling with sourdough?

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!  

You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day! 

Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around. 

While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.
