Celebrate the flavors of late-summer eggplant in this hands-on Italian cooking class, where you'll learn how to transform simple, seasonal ingredients into a stunning centerpiece.
You'll begin by preparing Chef Frank's signature marinara sauce, building a rich and flavorful foundation for the dish. Next, you'll learn how to thinly slice, season, and fry fresh eggplant until beautifully golden. The eggplant is then carefully layered in a pan to create a delicate shell for the filling.
At the heart of the terrine, penne pasta is tossed with creamy ricotta, melted mozzarella, and Chef Frank's signature marinara. You'll fill the eggplant shell, then bake the terrine until the cheese is bubbling and the top is beautifully golden.
The finished dish is a showstopping combination of crispy golden eggplant, creamy cheesy pasta, and rich homemade marinara—rustic Southern Italian cooking with an elegant presentation.

YES: Parent/Grandparent & Child (Adult 18+ accompanying a child at least 8 years old- these are 4 hour classes, so for your own enjoyment and sanity, use your discretion for younger children with limited attention spans.)
YES: Siblings/Cousins/BFFS (Two unaccompanied minors) Both must be at least 12 years old. For older/younger sibling Duos, the older one must be atleast 16 years old- minimum age for younger sibling is 8 years old.
YES: Couples/Roomates
YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
