Join Sidney Galpern of Simi Cakes for this fantastic foray into all things Isomalt! In this class you will learn the fundamentals of working with isomalt to create a beautiful undersea isomalt sculpture. (You have the choice of either one large or two smaller sculptures for Dynamic Duos.)

Isomalt is a sugar-free hard candy, that we can heat to pour into molds, pull to sculpt with, or use for blown sugar techniques.  It is slightly sweet, and holds up better than sugar to humid environments.

We will be covering a wide variety of topics in this hands-on workshop, including casting into molds, pulling and hand sculpting, blown isomalt bubbles, abstract isomalt techniques and accents, structure, stability, safety, coloring, flavoring, painting, impressioning, overcoming humidity, and MORE as each student assembles a unique under the sea themed sculpture.  You will leave this class with a strong isomalt knowledge base to recreate these techniques in your own kitchen right away.

Come along and learn how to make traditional Jaffa cakes. Known as ‘biscuits’ in the UK and Ireland and called ‘cookies’ in the United States, these treats are a bit of a conundrum as they are neither. They do, however, have a layer of sponge cake topped with sweet orange jelly and finished off with sumptuous chocolate. These little disks of sunshine are hard to resist so we recommend installing a safe in your pantry before attending this class. As you’re making all the components from scratch, you can customize your cake by adding in some orange zest and jazz up your jelly with a bit of Cointreau for a boozy kick too!

This is our newest Summer Camp - with all the favorite recipes from our Afternoon Tea Parties, this is the ultimate budding baker’s summer camp!

During the week we will create from scratch all the recipes required for our end of week Afternoon Tea Party- Rory’s Sausage* Rolls, Light as a feather Lamingtons** (an Australian cake like our petit fours, dipped in chocolate and rolled in coconut), Mini Bakewell*** or Chocolate Tarts, Mini Quiches, Freshly Baked Brioche Bread for our Finger Sandwiches and of course Traditional Irish Scones, Chantilly Cream & Homemade Jam! Five fun-filled classes guaranteed to have your little bakers looking for any excuse to have a cup of tea! Aprons, all ingredients, packaging, equipment for in-class use, and recipes supplied.

Come join local Grecophile Marianna Faure as she shares her family’s Traditional Walnut Baklava with Honey Syrup recipe. You’ll have a diaskédasi (fun) time making your own pan* to take home and share with your loved ones - or not - we won’t judge!

Baklava is a much loved treat made of flaky, thin phyllo pastry dough and a delicious crushed nut filling and sweetened with a simple honey syrup. If you want that fresh out of the oven, homemade taste, then look no further. We have you covered! Although Marianna’s lightly spiced version uses walnuts, you can always vary the nut mixture with other favorites like pecans or pistachios or go a little rouge and do hazelnuts and chocolate as well.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary.   • French Macarons with TWO fillings: Chocolate Ganache and Italian Meringue Buttercream both of which can be flavored to offer a variety of options. Macarons are one of the most sought after pastry items and have a reputation as being difficult…but not if you know the secrets!

  • Pastry Shop Cake- four layers of cake and a myriad of buttercream and drip options to choose from (Pictured are the Cookies and Cream Black and White Cake with Chocolate Ganache Drip, S’mores Explosion Cake and Opps! Ice Cream Cake but you can go fruity, spicy, nutty…the choice is yours!)

  • Brioch à Tête, la Floraison, l’ étoile and rebondissements: Think elegant, rich, brioche dough filled with a selection of Sweet and Savory fillings and shaped in a myriad of designs. Calling all budding Chocolatiers and Confectioners…Angela McEllin and Mary Storey of Mary Storey Confections are the duel instructors for this Wonderfully Wonky Confectionary Workshop!

This camp is designed to for anyone that wants to channel their inner Wonka and learn how to make all those wonderful confections from scratch (and without all the scary ingredients!) In addition to creating all the wonderful confections, you’ll learn to hand temper and color chocolate professionally.

We use only the finest ingredients including Nature’s Flavors and Amaretti flavorings and Callebaut Belgian Couverture Chocolate (the same stuff they use in the fancy chocolatiers.)

  • Chocolate Covered Honeycomb- release your inner mad scientist and learn to create this delicious confection…Whether you call it honeycomb, seafoam, cinder toffee or sponge candy, this is a seriously fun and exciting recipe to make! Once dipped in chocolate it becomes one of Rory’s (and Chef Scott’s) favorite sweets!

  • Homemade Fudge - with dozens of options to choose from, the hardest part of this recipe is choosing your flavor! You can go the traditional, purist route, or add any of our delicious inclusions in for a bit of texture…nuts/chocolate chips/caramel or toffee pieces/chopped candies/M&M’s/cookie pieces/dried fruit- the possibilities are endless!

  • Chocolate Vignettes- Learn how to make a set of gorgeous Chocolate Bar Vignettes in your choice of themes and create beautiful embellishments from our hundreds of molds (we just received a shipment of cool Anime, Harry Potter, Star Wars and Animal molds) to top your choice of Callebaut Dark, Milk, or White Chocolate bars. You can also add edible lace, sprinkles, sweets, dried fruit or nuts to personalize your Vignettes.

  • Pâte de Fruit Pinwheels (and you can dip some in chocolate too if you like!) you’ll learn to make Pate de Fruit (homemade fresh fruit jelly) from scratch and then cover with a layer of homemade marshmallow ready to roll up and devour. Choose to dip some of them in chocolate and you’ll have a beautiful presentation box of confections fit to fill the window of a patisserie!

  • Fondant Creams- Think of a deluxe version of Peppermint Patties, or the delicious Orange, Raspberry, Coffee, Coconut, Vanilla or Strawberry Creams (and we have hundreds of other all natural flavor options to choose from) and then cover them in chocolate. Divine!

  • Along the way you’ll also learn to make Mediants, Nonpareils, Homemade Rocky Road, use chocolate transfer sheets, dip, drizzle and pipe chocolate and how to fill and unmold chocolate Bonbons.

Due to the intense nature of this course, we are limiting space to only 6 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.

Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.

Are there specific requirements for joining?

This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills.

Course Aims

Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:

  • Baking success principles including weighing, measuring, scaling, converting and costing recipes

  • How to bake, level, torte, dam, fill and cover a sponge cake

  • Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)

  • Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant

  • Creating Cake Lace from scratch, using commercial mixes and alternative methods

  • Dowling, stacking and packaging for successful transportation

  • Creating and decorating Cupcakes, Cake Truffles, French Macarons and Sugar Cookies to compliment your celebration cakes

  • Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;

  • Pulling design elements together successfully including dusting, painting, and coloring;

  • Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)

  • Marketing, advertising, and finding the right clients

  • Costing, pricing, and profitability- how to get paid what you deserve!

  • Setting up for success- contracts, deposits, insurance, licenses, etc.

Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.

*If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.

Balance of course fee is due four weeks (July 20th, 2024) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all six spots are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

Many students already own some of the basic tools required, we will discuss any additional items we’d recommend in addition to the Professional Cake Decorator’s tool kit during the first week.

Ever had a Mexican Mudslide Cocktail? If not, think boozy Mexican Hot Chocolate meets a creamy milkshake- Chocolate, Kahlua, Amaretto, Cinnamon, and a few other spices to bring the heat all blended together with creamy vanilla ice cream.  Well, Angela was left unattended the other day and decided to turn the cocktail into a cake...and then decided to have a bit of fun with the decorations. You'll make a delectable, Mexican Hot Chocolate Spiced* Cake, a Kahlua and Amaretto infused Chocolate Pudding Filling and a Spiced* Chocolate Buttercream (you can even add some more booze here if you like.)

*Spices can be adjusted to suit your tastes. Non-alchocolic options also available in place of the Kahlua and

Once your cake is cooled, filled and crumb coated, you’ll create and paint your sugar skulls and learn to create a striped pattern and some festive piping around the side of your cake.

Join Sidney Galpern of Simi Cakes for this fantastic foray into all things Isomalt! In this class you will learn the fundamentals of working with isomalt to create a beautiful undersea isomalt sculpture. (You have the choice of either one large or two smaller sculptures for Dynamic Duos.)

Isomalt is a sugar-free hard candy, that we can heat to pour into molds, pull to sculpt with, or use for blown sugar techniques.  It is slightly sweet, and holds up better than sugar to humid environments.

We will be covering a wide variety of topics in this hands-on workshop, including casting into molds, pulling and hand sculpting, blown isomalt bubbles, abstract isomalt techniques and accents, structure, stability, safety, coloring, flavoring, painting, impressioning, overcoming humidity, and MORE as each student assembles a unique under the sea themed sculpture.  You will leave this class with a strong isomalt knowledge base to recreate these techniques in your own kitchen right away.

If you’ve ever visited Rome, you will hopefully have experienced the exquisite cream filled breakfast pastry that is the Maritozzo con la Panna (Maritozzi Buns.)

Maritozzi are fragrant, sweet dough buns flavored with orange zest and cardamon, sliced in half and filled with smooth, fresh whipped cream.  They are a staple in Rome’s pasticcerie, and commonly found during the breakfast hours in coffee bars around the Eternal City.

Join Mary Storey for a wonderful evening recreating these amazing buns. You’ll start by dividing and learning to shape a batch of dough that we’ve prepared for you. While your buns are rising, you’ll make a batch of dough to bring home so you can enjoy even more Marizozzi whenever you like. Next, we’ll bake the buns, and while they are in the oven you’ll make the delicious syrup that the buns are soaked in immediately out of the oven. In addition to learning a little of the history of these humble buns, you'll make your own dough from scratch (and choose your own fruit mix- go classic with raisins or currants or go a little rouge and throw in some of our other dried fruit...there is a whole pantry worth!) While your dough is rising you'll also create your own Lemon Curd to spread over your freshly baked buns or just eat with a spoon straight from the jar!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.
