In this hands-on dim sum class, you’ll learn how to prepare three beloved dishes w/ accompanying sauces, commonly found on dim sum carts and restaurant tables — all designed to be approachable and achievable at home.
We’ll make steamed chicken shumai, focusing on filling texture, seasoning, and proper wrapping techniques. You’ll also learn a streamlined method for shrimp rice noodle rolls using rice paper sheets, allowing you to enjoy this classic dish without making dough from scratch. To balance the richness, we’ll prepare a refreshing Chinese cucumber salad with sesame, chili, and aromatics.
Along the way, we’ll cover steaming techniques, flavor balance using sauces, and tips for recreating dim sum favorites in your own kitchen. You’ll leave with a deeper understanding of these classic dishes — and plenty to enjoy at the table.

Let your child’s creativity take center stage in this hands-on, week-long cake-making adventure! Throughout the camp, students will design their very own custom cake—from choosing the cake flavor and fillings to creating a professional-quality design worthy of any patisserie display.
Along the way, campers will build their skills through a variety of delicious projects, including decorating cupcakes and crafting colorful cake pops. They’ll learn to make both American and Italian Meringue Buttercream, discovering essential tips and tricks that help decorators achieve smooth finishes, sharp edges, and beautiful piping just like the pros.
To further refine their techniques, each student will also bake and decorate mini cakes, practicing real-world decorating skills on a smaller scale. And the sweetest part? Everything they create comes home, ready to share with family and show off their new talents.

In this hands-on class, we’ll begin by mastering the technique behind a classic Italian risotto. Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce. To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.
We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing meals from scratch, handmade pasta, fresh sauces; and marinating and layering seasonings and spices. In this hands-on dim sum class, you'll learn how to make three beloved dishes commonly found on dim sum carts and restaurant tables — all designed to be approachable and achievable at home.
We'll start with Shanghai Soup Dumplings (Xiao Long Bao) — the star of the class. You'll make the dough from scratch, roll your own wrappers, fold the classic pleated seal, and steam them to order. We'll cover filling technique, wrapper thickness, and the pleating method that keeps all that beautiful soup locked inside.
Next we'll make Scallion Pancakes, where you'll learn the roll-and-coil lamination technique that creates those irresistible flaky layers — finished in a hot pan until golden and crispy. Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.
Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. Course dates will be confirmed 6 weeks in advance or when all students have enrolled. Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keepat the end of the course.
Are there specific requirements for joining?
This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills. *Although you will work to a final project, the focus will be on learning a myriad of baking and decorating techniques and you will be afforded the opportunity to come in early/stay late if you have to complete elements required for your finished project.
Course Aims
Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and macarons using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Creating Fondant, Modelling Chocolate, modeling paste and Angela’s favorite medium for high humidity environments
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Creating and decorating miniature ‘Bento’ cakes which can be offered as SmashCakes and Wedding Favors
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Working with sugar florist paste to create flowers, swags, bows and other design elements
Working with texture mats, silicone molds, sugarcraft & plunger cutters and cake lace mats
Pulling design elements together successfully including dusting, painting, airbrushing and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)
Dowling, stacking and packaging for successful transportation
Marketing, advertising, and finding the right clients
Costing, pricing,baking schedules and profitability- how to get paid what you deserve!
Setting up for success- contracts, deposits, insurance, licenses, etc.

**If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.
Balance of course fee is due four weeks (July 24th, 2026) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all six spots are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

Curious about sourdough? New to sourdough? Struggling with sourdough?
During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.
We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing from scratch quick and yeast breads, classic pie dough, handmade pasta, a selection of sauces and homemade custard. Students will bring home everything they make plus all the recipes to recreate everything at home. Plus, each student will be taught how to properly clean up after themselves - you’re welcome parents and future housemates!

Join us for an evening celebrating the harmony and vibrancy of Vietnamese cuisine. Together, we’ll explore the balance of sweet, savory, and herbal flavors textures and colors that define some of Vietnam’s most beloved dishes.
Shrimp spring rolls are fresh, satisfying and healthy, and they come together quickly once you know the techniques. You’ll learn how to prepare delicate, translucent spring rolls filled with tender shrimp, crisp vegetables, fresh herbs, and rice noodles. You’ll be able to customize your rolls exactly how you want them. To accompany your rolls, you’ll make a bright Vietnamese dipping sauce that perfectly balances sweet, tangy, salty, and spicy flavors.
Next we’ll move to an aromatic favorite: Vietnamese grilled lemongrass pork. You’ll learn how to marinate pork with fragrant lemongrass, garlic, fish sauce, and a touch of sweetness, then cook it to achieve a caramelized, smoky finish. We’ll also cover tips for grilling or pan-searing so you can recreate the dish at home.

Join us for a beautifully creative and hands-on floral cupcake decorating experience. In this class, you’ll learn how to transform simple vanilla bean cupcakes into stunning floral works of art using classic piping techniques and buttercream.
We’ll be working with smooth and versatile American buttercream, perfect for creating structured, vibrant designs. You’ll learn how to properly fill and handle piping bags, use piping tips, control pressure, and build dimension as you decorate.
Throughout the class, we’ll focus on a variety of piping techniques including rosettes, petals, and textured florals using standard piping tips. You’ll also be introduced to Russian piping tips, allowing you to effortlessly create intricate, multi-petal flowers like tulips in a single motion.

Join Brian Knowles on a journey to India and North Africa making sourdough naan and shakshuka. This popular brunch pairing combines the tangy, chewy texture of fermented flatbread with the bold, spiced tomato and egg flavors of North African cuisine.
Sourdough Naan are a version of the traditional Indian flatbread that are made with active sourdough starter instead of yeast. By using the sourdough starter, you gain a deeper, more complex flavor and a very soft texture. Sourdough Naan can be made and eaten the same day or fermented overnight for even more flavor.
