Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. If your camper has attended one of our previous summer camps, they should be skilled enough to attend, but if you are in doubt, please email info@fabbaker.com before booking.

  • Show Stopping Entremet - Through out the week student will make all the elements for a delicious multi layer dessert. They will make a sharp fruit filling instep in a light fluffy mouse and sponge base cover in a delectable glaze.

  • Layered Mousse Cake - Neapolitan Mousse Cake with a Brownie Bottom is five layers of deliciousness. Come learn to make silky smooth chocolate, raspberry and vanilla bean mousse atop a decadent brownie base dripping in rich chocolate ganache and covered in chocolate-dipped strawberries and fresh berries.

  • Opera Cake - You’ll learn to make all the elements and learn to assemble and cut this sophisticated entremet that includes six layers of Ganache, Buttercream, Coffee soaked almond sponge cake topped with a glistening chocolate glaze.

  • Mini Tarts - Students will create a dazzling assortment of mini tartlets perfect for any occasion.

  • Decorated Swiss Rolls- Students will get to show there creative side with with there decorated Swiss Roll. You’ll learn how to color & pipe designs (Polka Dots/Stripes/Butterflies/Flowers/Watercolor mix…the choice is yours- and the possibilities are endless once you know how) before making a delicate chiffon sponge cake.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

    Suitable for ages 12 and older - no exceptions. Flour, NUTS, Eggs and Dairy are used during this camp. If your child has any food allergies, food intolerances or aversions, please contact us before signing up.

    Please do not bring your child if they have a fever or cough/cold.

In this creative hands-on class, you’ll learn the art of making soft, fluffy steamed Chinese bao from scratch. We’ll start by preparing and kneading the dough, learning the techniques that create the light pillowy texture. You’ll discover how to portion, shape, stuff, and properly steam the buns to achieve a perfectly tender bao.

Once the dough is ready, the fun begins. You’ll transform your bao into beautifully decorated buns, coloring the dough and then shaping it into playful designs. Using bright colors and simple tools, you’ll learn techniques for creating charming character-style buns that are as delightful to look at as they are to eat.

By the end of class, you’ll leave with a batch of your own decorated steamed bao and the confidence to recreate these whimsical treats at home.

Chocolate Sourdough Bread has cocoa in the dough and chocolate chips scattered throughout, which delivers rich chocolate flavor with double the chocolate. The secret to a rich chocolatey flavor starts with bloomed cocoa powder. This loaf has a soft, tender crumb and just enough sweetness to feel special without being overpowering. Double Chocolate Sourdough Loaf Cake is rich, moist, and irresistibly tender. There’s no need to be intimidated by bread! In this hands-on 101 class, we will teach you the basics of making delicious fresh bread at home. Demystify yeast, flours, flavors and learn simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking you will learn to you to make a compound herb butter too!

You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Best of all, you’ll get to sample your teacher’s bread and take home your still warm loaves to share with family and friends.

Once your cookies are cool, you can fill them, roll them in a selection of ‘toppings’ and nibble on them to your heart’s content!

Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.

Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. They will then be baked off on a baking stone for a crisp golden crust and an airy creamy interior. You’ll also be making your own batch of baguette dough to take home and bake off in the next couple of days. Don’t worry these baguettes freeze well.

In between tending to our baguettes you’ll be learning how easy it is to make Sourdough Pasta at home. You’ll learn how to make and roll out pasta dough and how to cut it into linguine for your lunch.Yes, you’ll be making your own lunch! Brian will teach you Angelas delicious Balsamic Tomato Bruschetta recipe. This is not only great served on slices of your freshly baked sourdough baguette but also as a sauce for your sourdough linguine.

In this immersive summer baking class, students will learn how to create peach fritters completely from scratch, beginning with a tender, yeasted fritter dough and building confidence in proper mixing, kneading, and proofing techniques. You will also learn how to incorporate fresh peaches into the dough without breaking structure or creating sogginess, along with folding and cutting methods that help shape fritters for even frying and beautiful texture.

Each student will fry 2–3 fritters in class, gaining hands-on experience with temperature control, timing, and achieving that perfect golden exterior while keeping the interior light and pillowy. Additional pre-fried fritters will be provided so students can focus on finishing techniques, shaping, and consistency.

To complete the experience, keri will teach you how to master the art of browning butter to its nutty, aromatic peak and transform it into a silky vanilla bean glaze that sets delicately over warm fritters. The result is a seasonal treat that balances crisp edges, juicy fruit, and a glossy finish that tastes like pure summer warmth.

We'll begin by creating grilled portobello mushrooms topped with savory soppressata, roasted peppers, and smoked provolone. You'll learn how to perfectly grill mushrooms, roast peppers, and balance bold Italian flavors to create a beautiful appetizer that celebrates the rustic cuisine of the Italian countryside.

For the main course, you'll prepare Chef Frank’s signature Steak Bada Bing. Learn how to get a perfectly cooked ribeye before creating a rich Marsala wine sauce with sautéed peppers and onions. Course dates will be confirmed 6 weeks in advance or when all students have enrolled. A$500 refundable** deposit (Full course fee is $4,000.00 and balance is due by July 24, 2026) is required to reserve your place. Due to the intense nature of this course, we are limiting space to only 8 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.

Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keepat the end of the course.

Are there specific requirements for joining?

This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills. *Although you will work to a final project, the focus will be on learning a myriad of baking and decorating techniques and you will be afforded the opportunity to come in early/stay late if you have to complete elements required for your finished project.

Course Aims

Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and macarons using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:

  • Baking success principles including weighing, measuring, scaling, converting and costing recipes

  • How to bake, level, torte, dam, fill and cover a sponge cake

  • Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)

  • Using roll out and paneling methods for covering cakes to obtain sharp edges and cover with fondant

  • Creating Cake Lace from scratch, using commercial mixes and alternative methods

  • Creating Fondant, Modelling Chocolate, modeling paste and Angela’s favorite medium for high humidity environments

  • Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes

  • Creating and decorating miniature ‘Bento’ cakes which can be offered as SmashCakes and Wedding Favors

  • Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;

  • Working with sugar florist paste to create flowers, swags, bows and other design elements

  • Working with texture mats, silicone molds, sugarcraft & plunger cutters and cake lace mats

  • Pulling design elements together successfully including dusting, painting, airbrushing and coloring;

  • Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)

  • Dowling, stacking and packaging for successful transportation

  • Marketing, advertising, and finding the right clients

  • Costing, pricing,baking schedules and profitability- how to get paid what you deserve!

  • Setting up for success- contracts, deposits, insurance, licenses, etc.

Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keepat the end of the course.

**If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.

Balance of course fee is due four weeks (July 24th, 2026) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all six spots are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

Step into a refined, hands-on viennoiserie retreat designed for passionate home bakers ready to deepen their craft in laminated doughs. Over five immersive days, Pastry Chef and Chocolatier Mary Storey will guide you through the artistry and precision of classic French pastry in a relaxed, inspiring environment.

You’ll develop a strong foundation in laminated doughs, mastering both croissant and puff pastry while exploring their distinct characteristics, similarities, and best applications. Through guided, hands-on practice, you’ll refine essential lamination techniques—from proper butter lock-in to a range of folds—along with shaping methods that define the structure, texture, and finish of each pastry.

Building on these skills, you’ll create a repertoire of classic French fillings entirely from scratch. Learn to craft silkycrème pâtissière, rich frangipane, airy mousseline, glossy ganache, and deeply flavored caramel—each designed to elevate your pastries to a professional standard.

Throughout the retreat, you’ll produce an elegant collection of both traditional and modern viennoiserie, with a focus on flavor, technique, and presentation. Join Brian Knowles for a fun filled week of all things Sourdough! During this week long immersive baking retreat you’ll learn/make:

  • The Science of Sourdough:

    • Sourdough Starter vs Yeast (and how to substitute in recipes)

The best decorated cookie starts with the best base. On Day 1 we slow down and do it right — mixing, flavoring, chilling, rolling, cutting, and baking four distinct cookie doughs so every cookie is perfectly prepped and ready for decorating.

You'll cover:

  • Classic vanilla-almond cut-out sugar cookie: the workhorse base that I'll teach you to customize into 3 additional flavors of your choice

  • Flavor extracts, emulsions, and how to build your own flavor profiles

  • Mix-ins and inclusions: cocoa powder, citrus zest, espresso, spices, and more

  • Proper dough hydration, chill times, and how both affect your cut

  • Rolling for consistent thickness, cutter technique, and clean release

  • Baking for flat, even cookies — oven tips, pan rotation, and cooling

By end of Day 1, you'll have 4 full sets of baked, cooled cookies ready to decorate. 

Day 2 — Royal Icing: From Flood to Fine Detail

Full day — all things royal icing

Royal icing day is where decorated cookies become art. We'll spend the full day working through every consistency, every technique, and every tool — from your first flood fill to hand-painted florals.

Morning: Foundations

  • Royal icing from scratch — meringue powder vs. egg white, ratios, and troubleshooting

  • Understanding consistency: flood, stiff, floral and when to use each

  • Color theory for cookie decorating: mixing, marbling, achieving true blacks and whites, a little discussion about non-artificial dyes & impacts

  • Flooding technique: how to outline, fill, and get a perfectly smooth surface every time

  • Wet-on-wet designs: simple patterns, color blocking, and blending

Afternoon: Advanced Techniques

  • Fine line piping and detail work

  • Brush embroidery and hand-painted details

  • Royal icing florals: roses, wildflowers, and leaves

  • Lettering: block, script, and bounce lettering on cookies

  • Stenciling with royal icing

  • Airbrushing: base colors, gradients, shading, and using stencils with an airbrush

You'll leave Day 2 with 2 dozen decorated royal icing cookies plus the confidence to do it again at home.

Day 3 — Buttercream: Rolled, Piped & Molded

Full day — buttercream techniques

Day 3 brings a completely different feel: softer, more tactile, and incredibly versatile. We'll work with both rolled buttercream (think fondant, but better) and classic piped buttercream to create a third and fourth set of decorated cookies with an entirely different aesthetic.

Morning: Rolled Buttercream

  • Rolled buttercream from scratch — recipe, ratios, and texture troubleshooting

  • Coloring and tinting for even, streak-free coverage

  • Rolling, cutting, and applying to cookies for a clean, smooth finish

  • Embossing, texturing, and using molds with rolled buttercream

  • Layering and dimension: combining rolled buttercream with other media

Afternoon: Piped Buttercream

  • Make American buttercream 

  • Piping bag setup, tip selection, and pressure control

  • Rosettes, ruffles, shells, stars, and rope borders

  • Piped florals on cookies: peonies, daisies, and succulents

  • Color loading and multi-tone piping for dimension

  • Finishing touches: edible gold, luster dust, and sprinkle work

Day 3 wraps with 2 full sets of buttercream decorated cookies and a complete recipe portfolio to take home.

Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce.  To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) In this hands-on decorating class, you’ll learn everything from scratch — literally. We’ll start by making our sugar cookie dough from the ground up, mixing, rolling, and cutting our mini summer shapes before popping them in the oven. While they bake and cool, you’ll learn how to make royal icing, understand how consistency affects your results, and mix a vibrant summer color palette to bring your cookies to life.


Then comes the fun part. You’ll decorate a full set of mini summer cookies — watermelon slices, ice cream cones, popsicles, pineapples, cacti, and tropical leaves — using flooding, piping, and detail work techniques that give each design its own personality. In this hands-on dim sum class, you'll learn how to make three beloved dishes commonly found on dim sum carts and restaurant tables — all designed to be approachable and achievable at home.

We'll start with Shanghai Soup Dumplings (Xiao Long Bao) — the star of the class. You'll make the dough from scratch, roll your own wrappers, fold the classic pleated seal, and steam them to order. We'll cover filling technique, wrapper thickness, and the pleating method that keeps all that beautiful soup locked inside.

Next we'll make Scallion Pancakes, where you'll learn the roll-and-coil lamination technique that creates those irresistible flaky layers — finished in a hot pan until golden and crispy. To balance the richness, we'll finish with a Smashed Cucumber Salad dressed in sesame, chili, garlic, and rice vinegar — quick, bright, and the perfect palate cleanser alongside the dumplings.

This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.

We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing meals from scratch, handmade pasta, fresh sauces; and marinating and layering seasonings and spices. Students will bring home everything they make plus all the recipes to recreate everything at home. Plus, each student will be taught how to properly clean up after themselves - you’re welcome parents and future housemates!

Recipes include:

  • Chicken Curry & Naan Bread

You’ll kick things off by creating your sweet filling—choose apple or cherry and customize it with a variety of delicious add-ins like nuts, marzipan, or even booze-soaked dried fruit for an extra punch of flavor.

While your filling cools, you’ll learn how to make Rory’s wonderfully versatile pie dough. As the dough rests, it’s time to move on to your savory filling—your choice of classic Chicken Pot Pie or hearty Vegetable Pot Pie.

Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce.  To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) We'll end the class by enjoying our handmade pasta with butter tomato sauce and fresh baked focaccia and you will have lots to bring home and share.

In this hands-on class, we’ll begin by mastering the technique behind a classic Italian risotto. You’ll prepare a creamy fennel and cracked black pepper risotto, learning how to properly toast the rice, gradually incorporate warm stock, and build flavor. The dish is finished with freshly grated Parmesan, creating a rich, silky risotto with subtle sweetness from the fennel and a warm bite of black pepper.

Next, we’ll prepare thick pork chops stuffed with creamy provolone and savory sun-dried tomatoes. You’ll learn how to make a pocket for stuffing, then sear them to develop a golden crust before finishing them in the oven. We will finish the dish with a quick pan sauce built from the flavorful fond in the skillet and a splash of rich cognac

Let your child’s creativity take center stage in this hands-on, week-long cake-making adventure! Throughout the camp, students will design their very own custom cake—from choosing the cake flavor and fillings to creating a professional-quality design worthy of any patisserie display.

Along the way, campers will build their skills through a variety of delicious projects, including decorating cupcakes and crafting colorful cake pops. They’ll learn to make both American and Italian Meringue Buttercream, discovering essential tips and tricks that help decorators achieve smooth finishes, sharp edges, and beautiful piping just like the pros.

To further refine their techniques, each student will also bake and decorate mini cakes, practicing real-world decorating skills on a smaller scale. And the sweetest part? Everything they create comes home, ready to share with family and show off their new talents.

Perfect for young bakers who love to create, explore, and express themselves through cake!

Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.
