Join in the magical fun of recreating from scratch some of the wizarding world's favorite treats including Chocolate Frogs, Black Magic Cupcakes with Homemade Marshmallow Fluff , Pumpkin Pasties, Any Flavor Jelly Beans (mind the carrot, broccoli, and chili ones!) frosty Butterbeer and the bespeckled wizard's favorite...treacle tarts!
Five fun-filled classes guaranteed to have your little witches and wizards spellbound. Aprons, all ingredients, packaging, equipment for in-class use, and recipes supplied.

In the second of our Homesteading 101 series, Brian Knowles will teach you how easy it is to make Fresh Ricotta at home. To go along with our ricotta, we will be making Crunchy Lavash Crackers and warm Tomato Bruschetta. These three things are great for entertaining or just when you need a snack.
THIS IS ONE CLASS YOU DEFINITELY WANT TO TAKE! Rory and I brought home the leftovers from the photoshoot and once the kids saw what we had there wasn’t a scrap left! The ricotta is unreal- nothing like the stuff you get in the supermarkets!
Fresh Ricotta
Crunchy Lavash Crackers
Tomato and Balsamic Bruschetta
You will not believe how easy it is to make Fresh Ricotta. You will never use store bought again! It is made with five ingredients that most people usually have in their kitchen. It will take you less time to make than it would to drive to the store. This is a strained ricotta, and it spreads like cream cheese but with the richness of crème fraîche. It is fantastic spread on a baguette slice and drizzled with honey. Add it as a sauce to your next pasta dish or layer it in lasagna, the uses for fresh ricotta are endless. You can even add a scoop to a salad!
Lavash Crackers are the perfect vehicle to eat your ricotta. These crackers hail from the Middle East and come together quickly in the food processor. Rolled out thinly, sprinkled with your favorite toppings and baked until crunchy. The beauty of these crackers is in their rustic look, no need to worry about a perfect square as they are meant to be broke up in pieces.
As the perfect counterpoint to the creamy ricotta and the crunchy crackers, we will make Tomato and Balsamic Bruschetta. If you have ever taken Angelas French baguette class, then you are familiar with her bruschetta that gets served alongside them. Tomatoes, garlic, balsamic vinegar and fresh basil are delicious on their own, but even more so paired with ricotta and lavash.

This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.
We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing from scratch quick and yeast breads, bechamel, marinara and curry sauces and handmade noodles and pizza; and marinating and layering seasonings and spices. Students will bring home everything they make plus all the recipes to recreate everything at home. Plus, each student will be taught how to properly clean up after themselves - you’re welcome parents and future housemates!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. First he will teach you how to make what may be the easiest bread ever-English Muffin Bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the cornmeal bottom giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.
Just add all the ingredients to a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!

During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!
Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Who doesn’t love a warm buttermilk biscuit topped with eggs, meat and cheese in the middle? Are mornings crazy in your house trying to get everyone out the door? Have no fear, Brian Knowles will teach you how to make mornings easier and tastier with his Buttermilk Biscuit Breakfast Sandwiches that can go from freezer to the table in two minutes.
Brian will teach you how to make light and flaky buttermilk biscuits two ways. You’ll start your biscuit journey by making a savory biscuit for your breakfast sandwiches. Once they are cool you’ll build your biscuit sandwiches with your choice of breakfast meats and cheeses. You’ll have the opportunity to enjoy one of your buttermilk biscuits before he shows you how to wrap them up for storing in the freezer and he’ll even share his tips on heating them up in the microwave.
Don’t worry about having to fry up a bunch of eggs individually because Brian will show his time saving secret of baking scrambled eggs in a sheet pan. You’ll cut your eggs using the same cutter as your biscuits, so you’ll get egg and biscuit in every bite!

Spend the day with Brian Knowles as he takes you on a journey discovering sweeet and savory adventures for you sourdough discard.
We’ll start the day by making a discard version of that ever so popular Lemon Blueberry Loaf Cake found at a popular membership warehouse store. This loaf cake is so moist and tender that very bite just melts in your mouth. Each slice is loaded with fresh blueberries and the batter is made with the zest and juice of fresh lemons (no artificial flavors here)! Topped with a sweet layer of crumble and a drizzle of lemon icing, this blueberry loaf is just as tasty (if not more) as it looks.
Next up Brian will teach how to make the Quick Sourdough Discard Rolls so many of you have enjoyed with soup at some recent all day classes. These quick easy and tasty rolls are perfect for holidays and can be switched up by topping with flaky salt, sesame or poppy seeds. These rolls only need to rise once so are great for a last minute roll for dinner.
While our rolls are rising we will then make our Sourdough Discard Goldfish Cracker dough. These crackers come together quickly in a food processor and then chilled for a bit. They are so good that even Brians dogs gobble them up. These crackers never last long, so you’ll be making these quite often. Once the dough is made you can store it in your fridge for up to a week and easily bake off a batch when the craving strikes. We’ll bake these off when we have time and hopefully there will be some leftover for you to take home.
We’ll end the day making Sourdough Discard Cosmic Brownies. These rich and fudgy brownies topped with a chocolate icing and sprinkles of your choice will bring you right back to your childhood. What makes these brownies unique is that the icing is made with hot water and spread on the just out of the oven brownies and topped with your choice of sprinkles. We like them best chilled but wouldn’t turn down one down if it wasn’t.

Course dates will be confirmed 6 weeks in advance or when all students have enrolled. Due to the intense nature of this course, we are limiting space to only 6 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.
Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.
Are there specific requirements for joining?
This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills.
Course Aims
Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Dowling, stacking and packaging for successful transportation
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Pulling design elements together successfully including dusting, painting, and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)
Marketing, advertising, and finding the right clients
Costing, pricing, and profitability- how to get paid what you deserve!
Setting up for success- contracts, deposits, insurance, licenses, etc.
Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.
*If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.
Balance of course fee is due four weeks (July 24th, 2025) before class commences to allow time for materials to be ordered. This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.
We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing from scratch quick and yeast breads, classic pie dough, handmade pasta, a selection of sauces and homemade custard. Students will bring home everything they make plus all the recipes to recreate everything at home. Plus, each student will be taught how to properly clean up after themselves - you’re welcome parents and future housemates!

Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

London Fog Cake takes the flavors of a London Fog latte and puts them in to a cake. You have layers of deliciously moist Earl Grey tea infused cake, silky smooth Earl Grey buttercream, and salted caramel drips for a cake sure to impress everyone.
Earl Grey tea is a black tea blend flavored with the oil found in the rind of the bergamot orange, which give it its unique aroma and flavor. The name ‘London Fog’ comes from the effect of foamy milk hitting the black tea and creating a cloud-like plume, resembling a foggy London afternoon, even though the drink was created in Canada.
To achieve the London Fog flavor in cake form you start off steeping Earl Grey tea in milk that will be used in both the cake and the buttercream. The cake layers also have loose leaf Earl Grey tea added to the batter to create a lovely flecked appearance, along with sour cream and cake flour keep the layers moist and tender. For more London Fog flavor, you can add a few drops of either bergamot or lavender oil to both the cake batter and buttercream.
The finished cake is beautifully decorated with a salted caramel drip, buttercream rosettes and loose leaf tea sprinkled on top. Although salted caramel is not traditionally part of a London Fog, it adds some sweet complexity to the whole cake and grabs your attention. Earl Grey tea lovers will be in heaven with this cake!

Open Bakes/Uninstructables (OBU's) offer an opportunity for members to use the FAB facility to create a FAB recipe for personal (non-commercial) use.
Perfect for trying out one of our FAB Recipes- you select the recipe and we’ll have all the equipment set up and the mise en place done for you. OBU’s are self guided (no instructor telling you what to do) but there will always be a member of staff at hand if you have a question.

Okay, so there is some debate at FAB about what to call these- Similar to Travel Cakes, but baked in pie tins for easy transport (and storage as they last a good while) but where Travel Cakes or Gateaux de Voyage generally only have a dusting of confectioner’s sugar or a light glaze, these beauties are covered with an Italian Meringue Buttercream Hybrid frosting and then covered with delicious coconut.

Today’s class will be centered around a delicious and hearty meal inspired by the book A Honey for the Beekeeper, written by Nina Crespo. We will start by preparing Cowboy Butter, a flavorful and creamy compound butter that's perfect for steaks, vegetables, and even pasta. Cowboy butter is made with a mix of ingredients like garlic, fresh herbs, lemon juice, and, of course, a touch of spice, bringing an irresistible kick to any dish. It's a perfect accompaniment to our next dishes, Pasta and Steak.
We’ll begin by making the Cowboy Butter, which includes ingredients like garlic, parsley, chives, paprika, lemon juice, Dijon mustard, and a bit of cayenne pepper for heat. This rich butter will be the key to taking our steak to the next level and adding extra flavor to our pasta.
Afterward, we’ll move on to the Pasta, where we’ll incorporate the cowboy butter, letting its creamy texture and flavors soak into the noodles. We’ll top it with freshly grated Parmesan to add a savory, salty finish.
Next, we’ll prepare the Steak, searing it to perfection and finishing it off with a generous dollop of our homemade cowboy butter, allowing the flavors to melt into the steak, creating a mouthwatering experience.
Finally, we’ll end the class on a sweet note with a Honey-inspired Dessert from the author’s new book, A Honey for the Beekeeper. The dessert will highlight the natural sweetness of honey, incorporating it into a delicious treat that is the perfect ending to our cowboy-themed meal.

To kick off our Home Steading 101 classes, join Brian Knowles as he shows you how to make some of his favorite burger condiments. Not only can you adapt them to your taste (less sugar, more spice etc.), but they don’t have all of those extra ingredients you can’t pronounce. Plus they are wallet friendly.
We’ll start off the evening by quick pickling cucumbers, also known as Quickles and then tossing red onions in hot pickling brine. Brian likes to add crushed chili pepper flakes to the cucumbers and oregano to his Pickled Red Onions.
Moving along, we’ll then cook our Ketchup or is it catsup? Which ever way you spell it, according to DoorDash it is the most popular burger condiment. Like it spicier? Add some hot sauce. Want it less sweet? Don’t add as much sweetener.
Mayonnaise is the second most popular burger condiment. You won’t believe how easy it is to make from scratch. Just six ingredients and all you can pronounce all in one container. You’ll never buy it in a store again!
Brian is saving his favorite burger condiment for last. Bacon Jam! Brian has been making this recipe for years ever since he tested it for his friends cookbook back in 2013. Are you a chunky or a smooth person? Either way its delicious. Leave it chunky for some texture or take an immersion blender to it for a smooth and spreadable jam.
You might be wondering what is the third most popular condiment? That would be Yellow Mustard. Although we won’t have time to make this classic condiment in class (it takes well over an hour), some will be provided as will the recipe so you can make it at home. It’s also the perfect accompaniment for Mary Storeys pretzels.
Of course after making all these condiments you’ll want to try them ASAP so you’ll be able to make your own burger patty on a home made potato roll that Brian made earlier in the day.

Open Bakes/Uninstructables (OBU's) offer an opportunity for members to use the FAB facility to create a FAB recipe for personal (non-commercial) use.
Perfect for trying out one of our FAB Recipes- you select the recipe and we’ll have all the equipment set up and the mise en place done for you. OBU’s are self guided (no instructor telling you what to do) but there will always be a member of staff at hand if you have a question.
Want to practice your baking/decorating skills but don’t have all the equipment? We’ve got you covered! Book an OBU and make it at FAB!*
You may come as a Duo ensuring both partners have signed a waiver. Age restrictions do apply for some OBU selections. If your partner is not a FAB member, you are responsible for their behaviour whilst on the FAB premises.
OBU's start at $100.00 for a 2 hour session, $200.00 for a 4 hour session and include the recipe(s), pre-measured ingredients, packaging and use of the FAB Facility equipment.
*If you are using your own recipe, please submit the recipe at least 48 hours in advance (more if you think there may be ingredients we don’t normally have on hand.) If the recipes/instructions are in a language other than English, please provide it as soon as possible to allow Angela to translate it for you.

As it’s Mother’s Day we’re throwing an Afternoon Tea Party with all Mum’s favorites. Join Rory and Angela McEllin as we recreate some of the most delicious treats your Mum really wants to nibble on.
We’ll start by creating a batch of Mini Profiteroles (Choux buns) filled with a delicious Vanilla Bean* Semifreddo and topped with a luxurious Chocolate Sauce. While your choux are baking, you’ll create Finger Sandwiches with a variety of fillings. Your 3 tier tea tray will have Rory’s Sausage Rolls and freshly baked Traditional Irish Scones as well as a Special Dessert Angela has designed just for Mum. In addition to a glass of champagne on arrival, you’ll have your pick of a selection of delicious teas to choose from. So dig out your fancy hats and come out for a celebration of all things Mum! (Dads are invited too!)

In this intimate and joyful session, you’ll learn to create a comforting, elegant dish that brings people together—classic Beef Stroganoff.
Starter: Tri-Pepper Shrimp Tower: Stacked high layered roasted peppers, sautéed shrimp & savory chive cream cheese w/ a balsamic reduction.

In this hands-on class, you’ll learn how to make perfectly spiced Oven-Fried Buttermilk Chicken — crispy on the outside, juicy on the inside, and packed with flavor.
While your chicken is in the oven, you’ll whip up golden, fluffy Malt Waffles and a seasonal Fruit Compote which can be used to create beautiful Parfaits (layers of yogurt, compote and our FABulous granola.) To keep the vibes fresh and fun, Angela will demonstrate how to make a refreshing fruit cocktail to sip as you cook.
When it’s time to sit down and enjoy your brunch, you’ll be treated to a brunch spread featuring your chicken and waffles, your freshly made compote, and a selection of fresh fruit and yogurt to finish on a bright, delicious note. And, just for a bit of variety, we’ll have a ‘dessert’ crepe station too!

The Lambeth Method (also known as "overpiping" is a classic, ornate piping style that's often reserved for special occasions) is a cake decorating technique that normally uses royal icing to create intricate layers of scrolls, details, and garlands over a royal icing covered fruitcake, however, in this class, Lisa He will teach you how to use her special blend of buttercream to create this beautiful 2 tier Triple Vanilla Sponge Cake.
As today is all about the decoration, we’ll have freshly baked triple vanilla sponge cakes ready and waiting for you to level, tort and crumb coat before covering them with the beautiful Lambeth Method designs. You’ll have your choice of colors and flavors to customise your buttercream. And, once decorated, you’ll learn how to dowel and safely stack your cakes.

Come and create a variety of delicious bagels in this hands-on class. The dough will already be made and ready for you to learn to shape, boil and bake. (So you won’t have to do all the pesky waiting around for rising times.) Top your beauties with poppy seeds, sesame seeds, sea salt, everything mix, or leave them free to fly away. Mary Storey will guide you through the process from start to finish, and demonstrate the dough process so you can easily recreate them at home.
