You'll begin by leveling and torting your cake layers before preparing a delicious filling and learning how to properly stack and build a stable, professional-looking cake.
Next, you'll make our incredibly smooth and delicious 4-ingredient American buttercream—a favorite recipe that's easy to recreate at home and sure to impress family and friends. From there, you'll learn how to crumb coat and ice your cake before mastering the techniques for achieving perfectly smooth sides and those crisp, professional sharp edges every cake decorator strives for.
Throughout the day, you'll practice a variety of essential piping techniques using professional decorating tips, create quick and easy buttercream textures, and discover the secrets to mixing rich, vibrant buttercream colors—including how to achieve deep, bold shades without the bitter aftertaste often associated with heavily colored icing.
This class is designed to give you plenty of hands-on practice, with every station decorating their own cake from start to finish under the guidance of Chef Shayla. You'll receive individual coaching throughout the day to help you build confidence and refine your techniques.

In this hands-on class, you’ll learn how to make Japanese soufflé pancakes two ways — the classic vanilla version and a stunning ube variation topped with coconut whipped cream. These jiggly, cloud-like pancakes are all about technique, and we’ll walk you through every step so you can nail them at home.
We’ll start with the science behind what makes Japanese pancakes so different from a traditional stack — the meringue, the fold, the steam. You’ll learn how to whip egg whites to the perfect stiff peak, how to fold the batter without deflating it, and how to cook low and slow with steam to get that signature height and wobble. We’ll also cover how to flavor and color your batter for the ube variation, and how to make a light, tropical coconut whipped cream that pairs perfectly with the earthy sweetness of ube.

A Six-Week Cooking Series for Independent Young Cooks (Ages 11–18)
Give your teenager a skill they'll use for the rest of their life. Teen Kitchen Confidence is a six-week, hands-on cooking program designed to teach young cooks how to become confident, capable, and independent in the kitchen. Instead of simply following recipes, students will learn how to think like a cook—opening the refrigerator or pantry, recognizing the ingredients they have on hand, and creating delicious, nutritious meals for themselves and their families.
Each week builds on the skills learned in the previous class, beginning with the fundamentals and progressing to planning, preparing, and cooking complete meals. Along the way, students will gain confidence with knife skills, kitchen safety, organization, seasoning, meal planning, budgeting, and cooking techniques that can be applied to hundreds of different recipes.
Week 1 - Monday, September 14 – Breakfast Basics
Every great cook starts with the basics. Students will master one of the most versatile ingredients in the kitchen—the egg. They'll learn how to fry, scramble, poach, and prepare a fluffy omelet, while discovering how a few pantry staples like eggs, milk, and flour can become a variety of delicious breakfasts and brunches. By the end of class, they'll understand that a well-stocked pantry can provide countless meal possibilities.
Week 2 - Monday, September 21 – Building the Perfect Lunch
Students will learn how to prepare satisfying lunches from scratch by making hearty soups, signature sandwiches, and fresh salads. They'll discover how to select ingredients for homemade soups, build flavorful sandwiches, and prepare salads that can be stored and enjoyed throughout the week. This class also introduces meal prep and proper food storage to reduce waste and save time.
Week 3 - Monday, September 28 – Cooking for One
Whether they're home alone after school or looking for a late-night snack, students will learn how to prepare quick, satisfying meals without relying on processed foods. They'll make dishes such as stovetop macaroni and cheese, upgraded ramen noodles, fried rice, and creative meals using leftovers. This class teaches resourcefulness, showing students how to transform simple ingredients into comforting meals.
Week 4 - Monday, October 5 – 20-Minute Family Meals
Busy schedules don't have to mean takeout. Students will learn how to prepare quick, healthy dinners using ingredients commonly found in the pantry and refrigerator. Recipes may include Spaghetti Bolognese, Chicken and Dumplings, Carbonara, Tacos, and easy air fryer meals. The focus is on organization, timing, and getting a delicious meal on the table with confidence.
Week 5 - Monday, October 12 – Planning a Family Meal
Cooking for a family requires planning as much as cooking. Students will learn how to organize and prepare complete meals while managing their time efficiently. They'll explore one-pot meals like chili, slow cooker favorites, oven-baked casseroles, and traditional roast dinners, gaining an understanding of how different cooking methods work together to create a successful family meal.
Week 6 - Monday, October 19 – My Signature Family Dinner
For the final class, students become the chef. Using everything they've learned over the previous five weeks, they'll plan, budget, and prepare a complete family meal to take home and share. They'll research recipes, choose ingredients, make substitutions when needed, and manage their grocery budget. This capstone class celebrates their new independence and demonstrates that they can confidently cook for themselves and the people they love.
Throughout the series, students will be encouraged to use their smartphones as a tool to research recipes, compare techniques, and make informed decisions about ingredients and substitutions. Some recipes will be partially prepared during class so students can finish cooking them at home, reinforcing the skills they've learned while involving the whole family.
By the end of the six weeks, students won't just know how to follow a recipe—they'll understand how to plan meals, stock a pantry, shop wisely, use leftovers creatively, and prepare nutritious breakfasts, lunches, and dinners with confidence. Little Chefs & Grown-Ups is a fun, hands-on six-week cooking series designed for children ages 5–10 and their favorite grown-up—whether that's a parent, grandparent, or guardian. Together, you'll laugh, learn, and create delicious meals while building skills and memories that will last a lifetime.
Each weekly class introduces young chefs to a new set of cooking or baking skills through recipes that are simple, fun, and easy to recreate at home. Children will gain confidence in the kitchen as they learn how to measure and weigh ingredients, practice good kitchen hygiene, use age-appropriate kitchen tools safely, follow recipes, and understand the importance of cleaning up as they cook.

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

In this hands-on class, you'll learn how to make Chinese hand-ripped noodles (biang biang style) completely from scratch — wide, chewy, satisfyingly irregular noodles that you tear and stretch by hand straight into boiling water. No pasta machine, no fancy equipment. Just flour, water, and technique.
We'll start by making the dough, learning how to hydrate and knead it to the perfect elasticity, and then letting it rest so it becomes pliable enough to pull into those signature thick, ribbon-like noodles. The ripping process is hands-on and genuinely fun — and once you get the hang of it, you'll wonder why you ever bought noodles from a box.
While the noodles cook, we'll build two completely different sauces so you can experience how the same bowl transforms with a different flavor base. The first is a rich, nutty peanut sauce — savory, slightly sweet, and deeply satisfying. The second is a punchy spicy chili crisp sauce — bold, aromatic, and just the right amount of heat. We'll also prepare a simple seasoned ground beef topping and blanched bok choy to round out the bowl.

In this hands-on sushi class, you'll learn how to make three restaurant-quality dishes that look as impressive as they taste — spicy tuna crispy rice, and two signature rolls that will completely change how you think about making sushi at home.
We'll start with spicy tuna crispy rice — sushi rice formed into small blocks, pan-fried until golden and shatteringly crisp on the outside, then topped with diced tuna sashima and a thin slice of jalapeño. You'll learn how to season and press rice properly, how to get the perfect crust without falling apart, and how to slice and top for maximum visual impact.
Next we'll build the Mt. Fuji Roll — a California roll base loaded with panko-crusted shrimp, topped with tender raw scallop, finished with masago, fresh jalapeño, and scallion.
We'll close with the Torched Salmon Roll — a California roll base topped with fresh salmon, hit with a kitchen torch until just kissed and lightly caramelized, then finished with scallion and a drizzle of eel sauce.

Working alongside fellow cooks, you'll prepare two iconic dishes inspired by the series, learning traditional techniques and creating a feast worthy of the Iron Throne.
Your journey begins in the winding streets of Flea Bottom, where you'll recreate the infamous "Bowl of Brown." While the original may have been a mystery, our version is anything but. You'll prepare a rich and satisfying bacon and lentil soup featuring thick-cut slab bacon, earthy lentils, sweet root vegetables, and a deeply flavorful bone broth slowly infused with fresh winter herbs. It's rustic comfort food elevated into a dish fit for the halls of Winterfell.
Next, you'll travel to the royal kitchens of the Red Keep to prepare The Royal "Pigeon Pie," inspired by the lavish wedding feast of King Joffrey—fortunately, without the live birds. You'll learn how to create a buttery, flaky puff pastry crust that bakes to a beautiful golden brown before filling your pie with tender roasted chicken, mushrooms, sweet peas, and a luxurious herb-infused cream gravy. To make your pie uniquely your own sigil of your favorite house into the pastry before it heads into the oven.

In this hands-on intermediate cookie decorating class, you'll make everything from scratch — mixing and baking your own sugar cookie dough before decorating a set of six show-stopping Halloween designs that are spooky, sweet, and seriously impressive.
We'll start by making the dough, rolling, cutting, and baking your cookies so they're perfectly flat and ready for decorating. While they cool, we'll mix royal icing, build your color palette, and get your stations set up before the real fun begins.
Then we'll work through all six designs: a bat snow globe, a pumpkin with leaf and stem work, an adorable trick-or-treating ghost, a candy-bow skull set, a swirled Halloween candy, and a whimsical witch hat — each one teaching a different skill. In this hands-on intermediate class, you'll make, bake, and decorate a gorgeous fall floral cookie set — pumpkins, acorns, autumn leaves, and statement floral cookies that together look like they came straight out of a professional bakery window.
We'll start by mixing and baking your cookie dough from scratch, then set up your royal icing station while the cookies cool. From there, the entire afternoon is dedicated to fall color palettes, florals, and the detail work that makes this set so stunning.
The star of this class is the royal icing floral technique. You'll learn how to use piping tips to build dimensional flowers directly on the cookie — ruffled petals, layered blooms, and the finishing details that give each flower its personality. In this hands-on baking class, we’re tackling two delicious cookies that may sound like cousins but couldn’t be more different: the elegant French macaron and the wonderfully chewy coconut macaroon.
First up: French macarons! You’ll learn how to whip, fold, pipe, and bake these colorful little beauties without losing your mind in the process. We’ll demystify the famous macaronage technique, talk about those elusive ruffled “feet,” and share plenty of tips for getting smooth, picture-perfect shells.
Then it’s time for the coconut macaroon—a much more relaxed cookie with big coconut flavor, crisp golden edges, and a soft, chewy center. You’ll mix, scoop, shape, and bake your way to a batch that’s seriously hard to resist.
And yes, you’ll actually do the baking! This is a hands-on class, so expect to get involved from start to finish. We’ll mix, pipe, scoop, bake, and taste, together. Along the way, you’ll pick up tricks for knowing when your batter is just right and how to avoid the most common macaron mishaps.

Day 1 — The Foundation: Doughs, Flavors & Prep
Morning through afternoon — all cookies baked and ready for Day 2
The best decorated cookie starts with the best base. On Day 1 we slow down and do it right — mixing, flavoring, chilling, rolling, cutting, and baking four distinct cookie doughs so every cookie is perfectly prepped and ready for decorating.
You'll cover:
Classic vanilla-almond cut-out sugar cookie: the workhorse base that I'll teach you to customize into 3 additional flavors of your choice
Flavor extracts, emulsions, and how to build your own flavor profiles
Mix-ins and inclusions: cocoa powder, citrus zest, espresso, spices, and more
Proper dough hydration, chill times, and how both affect your cut
Rolling for consistent thickness, cutter technique, and clean release
Baking for flat, even cookies — oven tips, pan rotation, and cooling
By end of Day 1, you'll have 4 full sets of baked, cooled cookies ready to decorate.
Day 2 — Royal Icing: From Flood to Fine Detail
Full day — all things royal icing
Royal icing day is where decorated cookies become art. We'll spend the full day working through every consistency, every technique, and every tool — from your first flood fill to hand-painted florals.
Morning: Foundations
Royal icing from scratch — meringue powder vs. egg white, ratios, and troubleshooting
Understanding consistency: flood, stiff, floral and when to use each
Color theory for cookie decorating: mixing, marbling, achieving true blacks and whites, a little discussion about non-artificial dyes & impacts
Flooding technique: how to outline, fill, and get a perfectly smooth surface every time
Wet-on-wet designs: simple patterns, color blocking, and blending
Afternoon: Advanced Techniques
Fine line piping and detail work
Brush embroidery and hand-painted details
Royal icing florals: roses, wildflowers, and leaves
Lettering: block, script, and bounce lettering on cookies
Stenciling with royal icing
Airbrushing: base colors, gradients, shading, and using stencils with an airbrush
You'll leave Day 2 with 2 dozen decorated royal icing cookies plus the confidence to do it again at home.
Day 3 — Buttercream: Rolled, Piped & Molded
Full day — buttercream techniques
Day 3 brings a completely different feel: softer, more tactile, and incredibly versatile. We'll work with both rolled buttercream (think fondant, but better) and classic piped buttercream to create a third and fourth set of decorated cookies with an entirely different aesthetic.

Coloring and tinting for even, streak-free coverage
Rolling, cutting, and applying to cookies for a clean, smooth finish

Escape the cold and spend three delicious days immersed in the world of sourdough at the Florida Academy of Baking’s state-of-the-art kitchen in sunny Satellite Beach, Florida. Planned for early 2027, this hands-on retreat is the perfect opportunity to trade winter weather for sunshine while learning the skills and science behind great sourdough baking.
This retreat is designed for bakers who want to go beyond simply following a sourdough recipe. Over three days, you’ll learn how sourdough works, how to care for and maintain your starter, how to read your dough, and how to turn one starter into a wide variety of delicious baked goods.
We’ll combine hands-on baking, demonstrations, baking science, and plenty of time in the kitchen. You’ll bake throughout the retreat and learn techniques you can continue using at home long after you leave Florida.
Day 1 – Understanding Your Sourdough
We’ll begin by taking the mystery out of sourdough and exploring the science behind fermentation. You’ll learn how to feed and maintain your starter and understand the difference between an active starter, fed starter, and discard.
You’ll make your first Everyday Sourdough Loaf, learning about dough development, fermentation, shaping, and baking. We’ll explore open baking, Dutch ovens, and steam, as well as the art of scoring—from simple expansion cuts to decorative designs.
You’ll also bake a pre-made loaf, prepare sourdough waffle batter for the following day, and create a levaing that will be ready for Day 2.
Day 2 – Building Skills & Adding Flavor
Day two takes your sourdough skills further as you bake your Everyday Loaf and begin working with inclusion breads. You’ll learn how to incorporate additional ingredients into dough while maintaining its structure and fermentation.
We’ll prepare a Sourdough Inclusion Loaf, make dough for focaccia pizza, and prepare sourdough pretzel dough. You’ll also bake a pre-made fougasse, create delicious sourdough cookies, and learn how baker’s percentages and ratios give you the freedom to scale and adapt recipes rather than simply following them.
We’ll finish the day by preparing another levain for Day 3.
Day 3 – Bake, Create & Take Sourdough Home
On the final day, you'll put your new skills to work as we bake the Sourdough Inclusion Loaf, pretzels, and focaccia pizza.
You’ll learn how to dehydrate your starter so you can preserve it for future use and explore how to revive it when needed. We’ll also make Sourdough Discard Cheese-Its, proving that your discard can be transformed into something delicious rather than going to waste.
Finally, we’ll explore one of the most useful skills for a sourdough baker: understanding sourdough starter versus commercial yeast and how to substitute starter or discard into recipes.
By the End of the Retreat
You’ll leave with a deeper understanding of sourdough, practical skills you can use at home, and the confidence to experiment rather than simply follow a recipe. You’ll understand how to maintain your starter, develop and shape dough, control fermentation, calculate baker’s percentages, adapt recipes, use discard, and bake using different methods.
Most importantly, you'll have spent three days baking, learning, sharing great food, and enjoying the sunshine of Florida's Space Coast.

Are there specific requirements for joining?
This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills. *Although you will work to a final project, the focus will be on learning a myriad of baking and decorating techniques and you will be afforded the opportunity to come in early/stay late if you have to complete elements required for your finished project.
Course Aims
Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and macarons using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Creating Fondant, Modelling Chocolate, modeling paste and Angela’s favorite medium for high humidity environments
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Creating and decorating miniature ‘Bento’ cakes which can be offered as SmashCakes and Wedding Favors
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Working with sugar florist paste to create flowers, swags, bows and other design elements
Working with texture mats, silicone molds, sugarcraft & plunger cutters and cake lace mats
Pulling design elements together successfully including dusting, painting, airbrushing and coloring;

Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.
Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. They will then be baked off on a baking stone for a crisp golden crust and an airy creamy interior. You’ll also be making your own batch of baguette dough to take home and bake off in the next couple of days. Don’t worry these baguettes freeze well.
In between tending to our baguettes you’ll be learning how easy it is to make Sourdough Pasta at home. You’ll learn how to make and roll out pasta dough and how to cut it into linguine for your lunch.Yes, you’ll be making your own lunch! Brian will teach you Angelas delicious Balsamic Tomato Bruschetta recipe. Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!
Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. Show Stopping Entremet - Through out the week student will make all the elements for a delicious multi layer dessert. They will make a sharp fruit filling instep in a light fluffy mouse and sponge base cover in a delectable glaze.
Layered Mousse Cake - Neapolitan Mousse Cake with a Brownie Bottom is five layers of deliciousness. Come learn to make silky smooth chocolate, raspberry and vanilla bean mousse atop a decadent brownie base dripping in rich chocolate ganache and covered in chocolate-dipped strawberries and fresh berries.
Opera Cake - You’ll learn to make all the elements and learn to assemble and cut this sophisticated entremet that includes six layers of Ganache, Buttercream, Coffee soaked almond sponge cake topped with a glistening chocolate glaze.
Mini Tarts - Students will create a dazzling assortment of mini tartlets perfect for any occasion.
Decorated Swiss Rolls- Students will get to show there creative side with with there decorated Swiss Roll. You’ll learn how to color & pipe designs (Polka Dots/Stripes/Butterflies/Flowers/Watercolor mix…the choice is yours- and the possibilities are endless once you know how) before making a delicate chiffon sponge cake.

We’ll start by making our sugar cookie dough from the ground up, mixing, rolling, and cutting our mini summer shapes before popping them in the oven. While they bake and cool, you’ll learn how to make royal icing, understand how consistency affects your results, and mix a vibrant summer color palette to bring your cookies to life.
Then comes the fun part.
