Join Brian Knowles as he shares tips and tricks with sourdough inclusions and sourdough pizza in this two day class.
This is an intermediate sourdough class and students will find it helpful if they have attended Sourdough 101 with Angela McEllin or Sourdough Basics with Brian Knowles.
In order to get your best inclusion loaves and experience baking them in a dutch oven (the most popular way to bake sourdough at home) we are asking you to Bring Your Own 5.5-6 quart Dutch Oven (BYODO).
On Saturday, you will learn to add inclusions two ways-through stretch and folds and through lamination. For your first loaf you will have your choice of cranberry nut, cheddar jalapeño, rosemary asiago, or blueberry lemon, which will be added during stretch and folds. The second loaf will be a cinnamon swirl where we will add our inclusions through lamination. In between taking care of your loaves you make sourdough pizza dough to be used for our lunch on Sunday. This dough is easy to make and great to have pre-portioned in the refrigerator or freezer. This dough can be used the same day, but the best flavor will come from cold proofing the dough overnight.
On Sunday, while our inclusion loaves bake, we will prepare Rorys famous pizza sauce. His sauce is so easy and so delicious that you will never buy store bought again. Brian will then teach you how to properly shape and top your pizza before sliding it on to a hot stone with a peel.

In this hands-on sushi class, you'll learn how to make three show-stopping rolls that go beyond the basics — each one teaching a different advanced technique that will seriously level up your sushi game at home. We'll start with the Spicy Caterpillar Roll: spicy tuna, krab, and cucumber inside, topped with fanned avocado and a drizzle of eel sauce. You'll learn how to slice and layer avocado for that signature caterpillar look that makes this roll as beautiful as it is delicious.

Sourdough Baguettes are what sourdough dreams are made of. Crispy, crunchy with a soft interior, these baguettes are sure to become your new favorite. They take a couple days from start to finish, but are so with the time! These baguettes are actually a demi-baguette, about half the size of a traditional baguette so easier to work with. This is a high hydration dough and shaping them can be a little tricky. But – like anything – the more you do it, the better you will get.They are perfect for making sandwiches, dipping in olive oil or just munching on.
Brian will have a batch of baguette dough made for you to shape and place in a couche (floured cloth) to proof a second time. They will then be baked off on a baking stone for a crisp golden crust and an airy creamy interior. You’ll also be making your own batch of baguette dough to take home and bake off in the next couple of days. Don’t worry these baguettes freeze well.
In between tending to our baguettes you’ll be learning how easy it is to make Sourdough Pasta at home. You’ll learn how to make and roll out pasta dough and how to cut it into linguine for your lunch.Yes, you’ll be making your own lunch! Brian will teach you Angelas delicious Balsamic Tomato Bruschetta recipe. Join us for an evening celebrating the harmony and vibrancy of Vietnamese cuisine. Together, we’ll explore the balance of sweet, savory, and herbal flavors textures and colors that define some of Vietnam’s most beloved dishes.
Shrimp spring rolls are fresh, satisfying and healthy, and they come together quickly once you know the techniques. You’ll learn how to prepare delicate, translucent spring rolls filled with tender shrimp, crisp vegetables, fresh herbs, and rice noodles. You’ll be able to customize your rolls exactly how you want them. To accompany your rolls, you’ll make a bright Vietnamese dipping sauce that perfectly balances sweet, tangy, salty, and spicy flavors.
Next we’ll move to an aromatic favorite: Vietnamese grilled lemongrass pork. You’ll learn how to marinate pork with fragrant lemongrass, garlic, fish sauce, and a touch of sweetness, then cook it to achieve a caramelized, smoky finish. This immersive life skills summer camp is aimed at older students aged 12 + who want to learn to cook to help around the house and/or become self-sufficient. Also, perfect for teens preparing to head off to college/university.

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day.Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!
Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Show Stopping Entremet - Through out the week student will make all the elements for a delicious multi layer dessert. They will make a sharp fruit filling instep in a light fluffy mouse and sponge base cover in a delectable glaze.
Layered Mousse Cake - Neapolitan Mousse Cake with a Brownie Bottom is five layers of deliciousness. Come learn to make silky smooth chocolate, raspberry and vanilla bean mousse atop a decadent brownie base dripping in rich chocolate ganache and covered in chocolate-dipped strawberries and fresh berries.

Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keepat the end of the course.
Are there specific requirements for joining?
This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills. *Although you will work to a final project, the focus will be on learning a myriad of baking and decorating techniques and you will be afforded the opportunity to come in early/stay late if you have to complete elements required for your finished project.
Course Aims
Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and macarons using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Creating Fondant, Modelling Chocolate, modeling paste and Angela’s favorite medium for high humidity environments
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Creating and decorating miniature ‘Bento’ cakes which can be offered as SmashCakes and Wedding Favors
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Working with sugar florist paste to create flowers, swags, bows and other design elements
Working with texture mats, silicone molds, sugarcraft & plunger cutters and cake lace mats
Pulling design elements together successfully including dusting, painting, airbrushing and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)
Dowling, stacking and packaging for successful transportation
Marketing, advertising, and finding the right clients
Costing, pricing,baking schedules and profitability- how to get paid what you deserve!

**If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.

Join Brian Knowles in welcoming Spring with two of his favorite flavors-lemon and blueberry, both found in this Sunny Lemon Blueberry Cake.
You’ll start the day by making your lemon scented mascarpone cake. The mascarpone helps to keep the cake soft and moist and allows the wonderful lemon and blueberry flavors to shine through.
The blueberries will be found between the layers in an easy to make blueberry compote that will wow and surprise everyone who eats this cake. Blueberry and lemon are a match made in heaven.
Bringing this all together with even more lemon flavor is a swiss meringue buttercream. This silky-smooth icing is made by heating egg whites and sugar over a double boiler, whipping to stiff peaks, then adding butter and flavoring with lemon extract. You’ll be amazed at how easy this buttercream is to make and work with.
You’ll finish the day learning how to create an ombre effect in shades of yellow and white. Brian will teach you how to use your offset spatula to create a pattern on the sides of your cake so you don’t have to worry about getting them smooth.

In this special meal prep class, you’ll create a complete Easter menu filled with fresh Spring flavors that will impress any gathering — and best of all, you’ll finish the cooking fresh in your own home on Easter Sunday.
During class, you will prepare a beautifully coordinated meal designed to serve six (with hearty appetites). You’ll take everything home with simple baking and reheating instructions, allowing you to enjoy a freshly cooked Easter meal without the stress.

Join the fun with our first Iron Chef Shuffle night where you will be part of the action.
What you do is bring an ingredient to be used in the challenge. e.g. one piece (not a whole bag) of fruit or vegetable; a tin of peaches; a bag of rice…these are just examples, let your imagination go wild.
How it works
We will have two teams, Chef Shayna and Chef Brian.
You will randomly be put on a team.
The chef will use the Ingredients to make two dishes.
Teams get 15 minutes to come up with a recipe and 45 minutes to prepare them.
The chef will use team members to be sous Chefs (Sous Chefs will be swapped out randomly)
Final Dishes will be Judged.

There’s no need to be intimidated by bread! In this hands-on 101 class, Mary Storey will teach you the basics of making delicious fresh bread at home. Old World Italian Handmade Pasta - Flour, Water, Love: Hand-Rolled Noodles
In this hands-on pasta class, students slow everything down and return to the most traditional way of making pasta. Just flour, water, time, and care. No machines. No shortcuts. Just hands, feel, and connection. Chef Keri will guide students through mixing and kneading a simple pasta dough from scratch, showing how intuition and touch are just as important as technique. From there, students learn to hand-form three classic long pasta shapes, each tied to a specific Italian region and story:
• Pici – thick, rustic Tuscan noodles with a comforting, chewy bite
• Strozzapreti – twisted strands woven with folklore and history
• Sagne ’Ncannulate – beautifully spiraled pasta from southern Italy, made to lovingly hold sauce
While students are shaping their pasta, Chef Keri offers stories and context for each shape, connecting the pasta in your hands to the regions, people, and kitchens it came from. Chef Keri demonstrates a simple, soulful tomato butter sauce, emphasizing how uncomplicated ingredients can create rich, comforting flavor. Towards the end of the class, students will cook and enjoy some of the pasta they’ve made, gathering around the table to taste the difference that fresh, handmade noodles make.
We'll end the session by enjoying the pasta you’ve created together—and feel free to BYOB to pair your wine or beverage of choice with the meal. These simple, flavorful recipes are sure to become a staple in your kitchen for years to come.

Curious about sourdough? New to sourdough? Struggling with sourdough?
During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!
You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day. Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day!
Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around.
While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

Learn Rory’s secret behind making his amazing Potato Cakes and how to cook them to perfection. You will cook some Traditional Irish Bangers (giant sausages), Rashers (Irish Bacon), Black and White Pudding* and Grilled Tomatoes. You’ve asked for it and now its here! Spend your day with Brian Knowles as he teaches you how to make four breakfast favorites using your sourdough discard.
Sourdough Discard Buttermilk Biscuits have more tang and complex flavors than a traditional flaky biscuit. These biscuits are great for breakfast or even dessert just by adding bit of sugar. Brian will share how to add discard to many recipes as this is his own buttermilk biscuit recipe he adapted to use discard.
These Sourdough Discard Bagels are chewy, golden brown and easy to make. The sky is the limit for toppings. Everything bagel seasoning, poppy or sesame seeds, salt, asiago cheese, maybe even cinnamon crunch. Your friends and family will be amazed that you made these bagels from scratch. Slice these bagels before freezing and you have a quick breakfast, just pop in the toaster and you are out the door.
Sourdough Discard English Muffins are so easy they don’t even require a stand mixer-just one bowl! These no knead English muffins are tender and soft with a golden brown exterior.
