In this hands-on dim sum class, you'll learn how to make two beloved Chinese classics from scratch: fluffy baked BBQ pork buns and fresh shrimp rice rolls, dishes that look like they came straight off a dim sum cart and taste even better than the restaurant version.
We'll start with the baked char siu bao. You'll make the yeasted dough from scratch, learning how to develop the right texture for that pillowy, slightly sweet bun that bakes up golden and glossy. While the dough proofs, we'll build the char siu filling together on the stove, combining pre-cooked BBQ pork with a rich, savory-sweet sauce of oyster sauce, hoisin, soy, and sesame that gets thick, sticky, and deeply fragrant. You'll learn how to portion and fill the buns, how to seal them cleanly, and how to get that signature shine on top before they go into the oven.
While the buns bake, we'll move on to shrimp rice rolls using Vietnamese rice paper, a technique-forward dish where the wrapper itself is the skill. You'll learn how to hydrate and handle rice paper without tearing, how to lay and roll the shrimp for that clean, professional look where every piece is visible through the wrapper, and how to build a dipping sauce from scratch that balances sweet, salty, sour, and just enough heat to keep you coming back for another bite.
You'll leave with a box of warm baked buns, a plate of fresh rice rolls, a complete dipping sauce recipe, and the confidence to make both at home any time the dim sum craving hits.

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a singlebatch of whatever we’re making that day. Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself! On Chef/Date Nights you will always have enough for two and generally extra to bring home too.
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
