In this hands-on class, you'll learn how to make mochi waffles from scratch, and once you taste that signature crispy exterior and impossibly chewy interior, you'll never go back to regular waffles again.
We'll start with the mochi waffle batter, learning what makes it so different from a standard waffle batter and how to get that perfect texture every time: golden and crisp on the outside, stretchy and chewy on the inside, with those deep pockets just begging to be filled. You'll learn how to work with mochiko (sweet glutious rice flour), how hydration affects chew, and the small adjustments that make the difference between a good mochi waffle and a great one.
Then we'll make two completely different toppings that turn a simple waffle into something genuinely special.
First, brown butter miso sauce: butter cooked low and slow until it turns golden, nutty, and deeply fragrant, then combined with white miso, honey, and a touch of cream into a warm, pourable sauce that's savory, sweet, and caramel-like all at once. You'll learn the brown butter technique (including exactly when to pull it before it burns), and how miso transforms butter into something far more complex than the sum of its parts.
Second, black sesame compound butter: softened butter blended with black sesame paste, a pinch of sugar, and flaky salt, rolled into a log and sliced into dramatic dark coins that melt slowly over your hot waffle. You'll learn how to build and balance a compound butter, and why the melting-on-contact moment makes this one of the most satisfying things you'll ever put on a waffle.
Along the way we'll cover mochiko and how it behaves differently from all-purpose flour, fat as a flavor carrier, and how two butter-based toppings can taste completely different depending on technique. You'll leave with a full waffle spread, both topping recipes, and a new favorite weekend breakfast.

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a singlebatch of whatever we’re making that day. Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself! On Chef/Date Nights you will always have enough for two and generally extra to bring home too.
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
