Slap Noodle & Spice

Saturday, November 5, 2026 | 10:00AM - 2:00PM

$229.00Per Station (Suitable for Dynamic Duos, please see below for details)

Unlock the theatrical and incredibly delicious world of hand-pulled Chinese noodles in this immersive, hands-on culinary workshop! In this class, you will master the legendary art of Chě Miàn (Slap Noodles)—the wide, chewy, belt-like noodles famous for the rhythmic slap-slap-slap sound they make against the counter as they are stretched to order.

Our chef instructor will guide you step-by-step through the science of gluten development, the secret to oil-resting your dough, and the exact gravity-defying swinging motion needed to stretch and rip your noodles flawlessly without breaking them.

To complement your fresh noodles, we will build a rich, umami-packed Tomato Hot Pot Broth from scratch, bubbling with jammy stir-fried tomatoes and slow-simmered bone stock—the perfect sweet, tangy vehicle to cling to your chewy noodles.

But a Shaanxi feast isn't complete without street-side snacks! You’ll fire up the grills for smoky Yángròu Chuàn (beef skewers crusted in heavy cumin and chili), and finish the night by frying up gooey, comforting Nánguābǐng (crispy, sweet pumpkin pancakes oozing with rich red bean paste).

  • The Main Event: Hand-Slapped Belt Noodles (扯面)

    • Kneading and hydrating high-gluten wheat dough for maximum elasticity.

    • The crucial oil-brushing and resting techniques that make the dough pliable.

    • The "Slap & Rip": Mastering the momentum, timing, and center-crease rip.

  • The Soup Base: Rich Tomato Hot Pot Broth (番茄锅)

    • Blanching, peeling, and stir-frying fresh tomatoes to unlock natural glutamates and sweetness.

    • Infusing the broth with aromatics to create a highly addictive, tangy soup base.

  • The Street Snack: Cumin Beef Skewers (羊肉串)

    • Selecting the right balance of lean meat and fat for maximum juiciness.

    • Perfecting the signature dry-rub ratio of heavily toasted cumin, Sichuan chili flakes, and sea salt.

  • The Dessert: Crispy Pumpkin Pancakes (南瓜饼)

    • Steaming fresh pumpkin and kneading it with glutinous rice flour for a perfectly chewy texture.

    • Stuffing, sealing, and pan-frying the cakes to a golden, shatter-crisp perfection

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!) For Chef Nights you will always have enough for two and generally some leftovers to bring home.

We provide aprons, recipes, all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
