Handmade Gnocchi with Lemon Pistachio Pesto

In this hands-on class, students will learn how to make a traditional ricotta gnocchi dough completely from scratch. After mixing the dough, it will rest briefly to allow the texture to develop while we move on to the bright flavors that make this dish sing.
During this time, students will prepare a lemon pistachio pesto, a sunny twist on the classic sauce that brings together fresh herbs, citrus, and toasted pistachios for a light yet flavorful finish. We’ll also blanch/roast a selection of seasonal vegetables to add color, freshness, and texture to the final dish.
Once the dough is ready, students will learn the techniques for rolling, cutting, and shaping gnocchi, creating those signature pillowy bites. After forming the gnocchi, we’ll cook them together and finish the dish by tossing everything with the pesto and vegetables for a bright, spring-inspired plate.
By the end of class, students will have the skills and confidence to recreate this elegant yet approachable homemade pasta dish at home. Expect plenty of hands-on practice, helpful tips for perfect gnocchi texture, and a delicious meal to enjoy together.

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a singlebatch of whatever we’re making that day.
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
