Join Brian Knowles as he walks you through making your very own version of Korean Kimchi (which you’ll take home to enjoy with family and friends) with a few simple ingredients. Kimchi can be eaten on its own as a healthy snack or incorporated into many tasty dishes, such as fried rice, and dumplings to name a few.
What you’ll make in class:
Korean Kimchi from Scratch (which you will bring home to complete the fermentation process)
Kimchi Pancakes (made with Brian’s fermented Kimchi)
In class, while your cabbage goes through it first stage of fermentation, you’ll make and enjoy Brian’s favorite recipe-Kimchi Pancakes, with kimchi that has been fermented ahead of time for you.
There are more versions of kimchi than you can count, but Brian will be teaching you his favorite that is easy to make and slowly ferments in the fridge which is perfect for hot and humid weather.
Traditional kimchi is made up of napa cabbage, various vegetables, aromatics and a few other ingredients, including the ever important gochugaru (Korean chili powder).
Without sounding like a science teacher, kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. In the first stage, the cabbage is soaked in a salty brine that kills off harmful bacteria. The second stage is where lactobacillus bacteria (the good guys) convert sugars into lactic acid, which preserves the vegetables and gives them that wonderful, tangy flavor.
After you eat your kimchi pancakes, you’ll finish up your own kimchi which you will take home and can enjoy the next day or in two weeks. How long you let it ferment is up to you.
Kimchi is very popular due to its range of health benefits from probiotics, vitamins and antioxidants, which are said help support your digestive and immune systems.
Making your own kimchi can sound intimidating, but with a few simple ingredients, you too will be able to make it at home to suit your tastes.

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)
*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!)
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
