In the second of our Homesteading 101 series, Brian Knowles will teach you how easy it is to make Fresh Ricotta at home. To go along with our ricotta, we will be making Crunchy Lavash Crackers and warm Tomato Bruschetta. These three things are great for entertaining or just when you need a snack.
THIS IS ONE CLASS YOU DEFINITELY WANT TO TAKE! Rory and I brought home the leftovers from the photoshoot and once the kids saw what we had there wasn’t a scrap left! The ricotta is unreal- nothing like the stuff you get in the supermarkets!

Tomato and Balsamic Bruschetta
You will not believe how easy it is to make Fresh Ricotta. You will never use store bought again! It is made with five ingredients that most people usually have in their kitchen. It will take you less time to make than it would to drive to the store. This is a strained ricotta, and it spreads like cream cheese but with the richness of crème fraîche. It is fantastic spread on a baguette slice and drizzled with honey. Add it as a sauce to your next pasta dish or layer it in lasagna, the uses for fresh ricotta are endless. You can even add a scoop to a salad!
Lavash Crackers are the perfect vehicle to eat your ricotta. These crackers hail from the Middle East and come together quickly in the food processor. Rolled out thinly, sprinkled with your favorite toppings and baked until crunchy. The beauty of these crackers is in their rustic look, no need to worry about a perfect square as they are meant to be broke up in pieces.
As the perfect counterpoint to the creamy ricotta and the crunchy crackers, we will make Tomato and Balsamic Bruschetta. If you have ever taken Angelas French baguette class, then you are familiar with her bruschetta that gets served alongside them. Tomatoes, garlic, balsamic vinegar and fresh basil are delicious on their own, but even more so paired with ricotta and lavash.
Be ready to impress everyone at your next gathering with fresh ricotta, topped with bruschetta and scooped up with homemade lavash crackers.
As this is a Chef Night/Date Night, you are welcome to BYOB (please drink responsibly!)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!) On Chef/Date Nights you will always have enough for two and generally extra to bring home too.
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
