Join Guest Chef Alex Peña, a California native, a former Marine, a passionate Master Baker, trained culinary chef, and a professional bread scientist for an amazing Bizcocho Masterclass. Chef Alex is our FABulous Guest Chef all the way from California for 4 full days teaching a different masterclass each day, so don’t delay…these classes will sell out quickly!

The buttery Bizcocho dough is a direct descendent to the French Brioche; however, the recipes for this yeast-raised dough have been enhanced with coarse ground cinnamon and vanilla extract. A recipe that Chef Alex has perfected and can be used as a base for an entire showcase of pan dulce.

During this class, the students will learn about the technique and baking process on how to make five different sweet breads. Beginning with the iconic Conchas (seashells), before making Chilindrinas (crying child, or having no significance whatsoever), Nubes (clouds), Volcanes (volcanoes), and the Cuerno Bizcocho (bull horn). Every sweet bread contains a unique sugar topping and in the case of the Chilindrina, additional rock sugar. The students will take home a total of seven recipes, and a plethora of baking knowledge.

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!)

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

This is a full-day class, please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
